CHICKEN SPINACH CASSEROLE WITH MUSHROOMS AND PHYLLO
Steps:
- Preheat the oven to 400 degrees F.
- Melt 1 tablespoon of the butter with the olive oil in a large nonstick skillet over medium-high heat, then add the onions. Cook, stirring, until just soft, about 4 minutes. Add the mushrooms and 1/2 teaspoon salt and continue stirring until softened, about 4 minutes. Gradually add the spinach and stir until completely wilted, about 2 minutes. Transfer to a large bowl and add the chicken; wipe the skillet clean.
- Whisk together the flour, broth, lemon juice and 1/2 teaspoon salt and add to the same skillet over medium-high heat. Whisk until the mixture is boiling and simmer until just thick, about 2 minutes. Add to the chicken mixture with 1/2 tablespoon of the rosemary, then transfer to a 2-quart baking dish.
- Melt the remaining 3 tablespoons butter and brush onto each phyllo sheet, layering one on top of the other. Gently place over the baking dish and crimp the sides to fit. Sprinkle with the remaining 1/2 tablespoon rosemary and bake until golden, 25 to 30 minutes. Let cool slightly before serving.

- Preheat oven to 375 degrees. Thaw the spinach and pat dry in a paper towel. Scatter half of the spinach in the bottom of a 9x13 baking dish. Sprinkle half of the tomatillos, tomatoes and garlic on top. Season with sea salt and Lemon Pepper. Scatter half the cheeses. Layer the chicken. Layer other half of remaining ingredients, saving some cheese. Bake for 30 minutes, take out, layer the remaining cheese and bake for 10-15 more minutes.

I love this chicken! It couldn't be any easier. It is so simple and yet so delicious. I always keep the ingredients for this recipe on hand, so that on a busy night I can just whip this chicken together and serve with minute rice.I made this chicken once during a commerical and made it back in time to the tv to not miss my show! Now that is my kind of dinner. Then when the next commerical came around I went into the kitchen and chopped up the tomatoes so that they would be ready to top the chicken with when it came out of the oven! Try this recipe, it will definetly be a new favourite of yours!

- Arrange chikcen in 13x9-inch baking dish.
- Drizzle with tablespoon of the lemon juice. Season with salt and pepper. Top with feta cheese, and drizzle with remaining lemon juice.

- Position rack in middle of oven. Preheat oven to 350°F/180°C. Coat the inside of a 13 x 9-inch casserole dish with nonstick spray; set aside.
- Fill a very large pot with 4 liters of water, bring to a boil and whisk in the FODY Chicken Soup Base. Add chicken breasts, adjust heat to low, and simmer very gently for about 5 minutes. Then turn off heat, leaving chicken breasts in hot liquid. Check the chicken after 10 minutes; the breasts should be just cooked through but still very moist. Remove breasts from liquid and set aside on cutting board to rest. Save cooking liquid in same pot.
- Heat a large, deep skillet over medium heat and add butter and FODY Shallot-Infused Oil. Cook for about a minute or until butter is melted. Add leek and scallion greens and sauté for a few minutes or until softened. Add basil and oregano and sauté for about 30 seconds. Add flour and whisk occasionally, for a minute or two, until flour is beginning to slightly color. Slowly whisk in milk and 1/2 cup (120 ml) of the chicken-flavored cooking liquid from the pot you set aside. Keep cooking and whisking until you have a thickened, smooth sauce. Stir in mozzarella, Gruyere and 1/4 cup (25 g) Parmesan and cook for a minute or two, whisking a couple of times, until cheeses are melted and sauce is smooth. Taste sauce and season with salt and pepper, as desired. Remove about 1 1/2 cups (360 ml) of sauce and set it aside, and set aside the skillet with the bulk of the sauce as well.
- Go back to pot with reserved liquid and bring back to a boil. Roughly break the lasagna noodles into large pieces and drop into boiling liquid. Cook, stirring often, until very al dente (about 1 or 2 minutes before they are al dente proper) and add spinach to boiling liquid and pasta. Stir spinach into liquid; it should wilt almost immediately. Drain pasta and spinach. Add pasta and spinach to sauce in deep skillet and fold to coat well and combine.
