I was really surprised when one of my 11 year old daughters made this. I thought the taste of the mushroom soup would be too strong but with the parmesan cheese added the taste is simply great. I love the flavor but my husband likes that he can eat this without killing his cholesterol levels. Traditional alfredo is made of butter, cream and cheese which would be a lot harder on our hearts.

8 ounces gluten-free pasta (I like Tinkyada)
2 tablespoons butter
1 lb chicken breast, cut into bite size pieces
18 ounces cream of mushroom soup (Progresso is Gluten Free)
1/2 cup parmesan cheese
ground black pepper

Steps:

  • Prepare pasta according to directions on pkg. Drain. Heat butter in skillet over med heat. Add chicken and cook until browned, stirring often (Chicken could also be grilled). Stir in soup, cheese, pepper and pasta. Cook until mixture is hot and bubbling.

1 container Pillsbury™ Gluten Free refrigerated pizza crust dough
3/4 cup gluten-free Alfredo pasta sauce (from 15-ounce jar)
2 cups chopped cooked chicken
1 1/2 cups packed fresh baby spinach leaves
1 cup gluten-free shredded Italian cheese blend or mozzarella cheese (4 ounces)

Steps:

  • Heat oven to 400°F. Grease cookie sheet and hands. Press dough into 12 by 10-inch rectangle on cookie sheet. Bake 10 to 12 minutes or until edges are beginning to brown. Meanwhile, in medium bowl, mix Alfredo sauce and chicken; spoon evenly over partially baked crust. Top with spinach, mushrooms and cheese. Return to oven and bake until the cheese is melted and bubbly, about 10 minutes.

3 tablespoons butter
½ cup heavy cream
1 ½ cups freshly grated Parmesan cheese
¼ teaspoon garlic powder
2 pinches freshly grated nutmeg, or to taste
freshly ground black pepper to taste
1 teaspoon chopped fresh parsley, or to taste

Steps:

  • Melt butter in a heavy saucepan over medium heat. Slowly add cream, stirring until well combined, about 3 minutes. Add Parmesan cheese; cook and stir until well incorporated, about 3 minutes. Stir in garlic powder, nutmeg, and black pepper and cook for 2 minutes. Serve sprinkled with fresh parsley.

This is my favorite homemade pizza; these are the basic toppings though I vary sometimes depending on what's on hand. I make the dough in my bread machine and add a little garlic powder and basil or italian seasonings to the dough ingredients for extra flavor. Some measurements are approximate.

1 pizza dough
1 cup prepared alfredo sauce
1 (10 ounce) package frozen chopped spinach, cooked and drained
2 -3 boneless chicken breasts, cooked or grilled and diced
1/2 medium sweet onion, thinly sliced
1/3 cup sliced black olives, well drained
2 -3 tablespoons feta cheese, crumbled
2 cups shredded mozzarella cheese
1/2 cup grated parmesan cheese

Steps:

  • Roll dough out thin; put on lightly greased cookie sheet and prick holes all over to minimize bubbling.
  • Prebake the pizza dough at 425°F for 5-7 minutes, remove from oven.
  • Spread alfredo sauce to within 1" of edges.
  • Top with chicken, spinach, onion, feta and olives, then mozzarella and parmesan last.
  • If you like you can brush some olive oil around the edges of the crust.
  • Return to oven and bake at 425°F for 10-12 minutes or until done and bottom is browned.
  • Remove from oven and let stand a few minutes before slicing.
  • Delicious and even better warmed up the next day; I have also added mushrooms when I had them on hand.

1 mama mary's prepared pizza crust
6 tablespoons ragu light alfredo sauce with parmesan cheese (or eyeball it till it looks like enough to cover crust)
8 ounces mozzarella cheese, grated
1 (6 ounce) package tyson oven roasted diced chicken breasts
6 tablespoons barbecue sauce
1 (4 ounce) can mushrooms
1 (2 1/4 ounce) can black olives, sliced
1/2 sweet onion, minced
4 tablespoons cilantro, chopped

Steps:

  • In a small bowl mix chicken cubes with barbecue sauce and set aside.
  • Spread Alfredo sauce on prepared pizza crust and top with 1/2 the mozzarella cheese. Top with chicken cubes, onions, mushrooms, black olives and cilantro. Finish with the rest of the cheese.
  • Bake at 425 for about 15 minutes or until crust is brown.

1 mama mary's prepared pizza crust
