Gluten-Free Almond Buckeye Bars image

A classic holiday candy gets a twist with this decadent dark chocolate cookie bar with creamy almond butter filling and topped with a rich chocolate ganache. A 7-ingredient dessert that is simple and impressive for any holiday gathering!

1 package (14 oz) Immaculate Baking Co.™ refrigerated Gluten Free double chocolate cookie dough
1/2 cup butter, softened
1/3 cup Justin's™ classic almond butter
3/4 cup powdered sugar
1/4 teaspoon pure vanilla
1 cup dark chocolate chips
1/4 cup heavy whipping cream

Steps:

  • Heat oven to 325°F. Line 8-inch square pan with foil or cooking parchment paper, allowing overhang of 2 inches over sides of pan. Spray with cooking spray. Remove cookie dough from refrigerator; let stand 15 minutes. Break cookie dough into small pieces; press evenly in bottom of pan. Bake 22 to 25 minutes or until set. Cool completely, at least 1 hour.
  • In medium bowl, beat softened butter and almond butter with electric mixer on medium speed until smooth, scraping side of bowl. Gradually beat in powdered sugar until smooth. Beat in vanilla. Spread evenly over cooled crust.
  • In 1-quart saucepan, heat chocolate chips and whipping cream over low heat, stirring frequently, until chips are completely melted and smooth. Carefully pour and spread topping over filling. Refrigerate uncovered about 2 hours or until cooled completely. Using foil or parchment to lift, remove bar from pan, and peel foil or parchment away. Cut into 4 rows by 4 rows. Stored covered in refrigerator.

1 cup garbanzo flour
4 1/2 cups cereal
1 teaspoon baking powder
4 egg whites
3/4 cup honey
1 teaspoon almond extract
1/2 cup almonds, coarsely chopped
1 -2 tablespoon almond butter

Steps:

  • preheat oven to 350 degrees, and lightly grease an 8x8 baking pan.
  • chop almonds then gently toast on the stove top.
  • combine dry ingredients; seperately mix wet ingredients.
  • add wet ingredients to cereal mixture, then add in almonds.
  • pour into baking pan and bake for 30-35 minutes. place aluminum foil loosely over top and bake about 5-7 more minutes, depending on flours used (garfava browns faster).
  • melt about a tablespoon of almond butter in microwave and dilute slightly with water. drizzle on top.

  • In medium bowl combine peanut butter with maple syrup and vanilla extract until smooth. Add in Super Fine Almond Flour and salt, combining until dough forms (use hands at end as needed). You should have a soft cookie dough-like texture.
  • Using small cookie scoop (about 1 heaping tablespoon), scoop dough onto parchment lined baking sheet. Roll dough ball until smooth and place back on the baking sheet. Place in freezer for 20 minutes. After 20 minutes, roll again getting the balls really smooth, then place back in fridge while you melt chocolate.
  • Meanwhile, melt chocolate over low heat, stirring until smooth and fully melted. If you want a smoother chocolate, add coconut oil. Transfer chocolate to a heat proof small deep bowl (if possible – this will allow you to get a good dip in without messing with the dough ball too much).
  • Using a toothpick, dip peanut butter balls into melted chocolate and set back onto parchment paper baking sheet. Option to gently smooth over toothpick hole if you’d like.
