1/3 cup Real Maple Syrup (sugar free ok)
3 Tablespoons Cider Vinegar
1/4 cup Brown Sugar (sugar free ok)
3 Tablespoons Dijon Mustard
1/2 teaspoon Cinnamon, ground
1/4 teaspoon cloves, ground

Steps:

  • Pre-heat oven to 325°F
  • Remove ham from packaging. If there are any liquids, reserve add it and add to the roasting pan.
  • Place the ham cut side down in a shallow roasting pan and for a spiral ham as shown and cook uncovered.
  • Whisk cider vinegar, syrup, brown sugar, mustard and spices together in a small small saucepan.
  • Over medium heat stir until the sugar has dissolved.
  • When the internal temperature reaches 120°F spoon or brush the ham with the prepared glaze.
  • Increase the heat to 350°F for the last 10 minutes of cooking. Watch to make sure the glaze doesn't burn. Gently tent with foil and let rest for 10 minutes before serving. Ensure the internal temperature has reached 140°F before serving.

  • Dry a bone-in, fully cooked half ham (do not use a country ham) and bring to room temperature. Preheat the oven to 375 degrees F. Trim the ham skin, leaving the fat intact. Score the fat in a crosshatch pattern, making the cuts about 3/4 inch deep and 1 inch apart. Put the ham flat-side down on a rack in a roasting pan; add 1 cup water. Bake on the lowest oven rack, 40 minutes, adding more water if the pan gets dry. Meanwhile, make the glaze: Whisk 1 cup jam or marmalade with 3/4 cup brown sugar, 1 cup dijon mustard, 2 tablespoons cider vinegar and 2 teaspoons Worcestershire sauce. Brush the ham with half of the glaze; cover loosely with foil and bake 45 more minutes. Brush with the remaining glaze and bake, uncovered, until the glaze is browned, 40 to 50 more minutes. Let rest 15 minutes before carving.
  • Don't toss your ham bone! Add it to simmering soups, beans or braised greens for extra flavor.
  • Give your ham a great crunch: Sprinkle one of the below mixes onto the glaze before the last 40 to 50 minutes of cooking.
  • Spring Herb Mix 1 cup panko (Japanese breadcrumbs), 3 tablespoons each chopped parsley and chives, and the grated zest of 1 lemon.
  • Cornmeal-Thyme Crush 1 cup cornbread stuffing mix; toss with 2 tablespoons chopped thyme, 1 1/2 teaspoons ground coriander and 1/2 cup cornmeal.
  • Spicy Sourdough Grind 3 cups cubed sourdough bread in a food processor; toss with 1 tablespoon chili powder and 1 bunch chopped scallions.

1 9- to-10-pound bone-in fully cooked smoked ham (butt or shank half)
2 tablespoons whole cloves (optional)
1 1/2 cups Glaze, recipes follow

Steps:

  • Remove the ham from the refrigerator and bring to room temperature, about 30 minutes.
  • Preheat the oven to 325 degrees F. Trim off any skin from the ham. Use a sharp paring knife to score through the fat in a diagonal crosshatch pattern without cutting through to the meat. Insert the cloves into the ham (if using), placing them at the intersections of the cuts.
  • Put the ham, flat-side down, on a rack in a roasting pan. Pour 1/4 inch water into the bottom of the pan. Transfer to the oven and roast until a thermometer inserted into the thickest part of the ham registers 130 degrees F, about 2 hours, 30 minutes (about 15 minutes per pound).
  • Increase the oven temperature to 425 degrees F. Pour half of the Glaze (see below for glazes) over the ham and brush to coat. If the water in the bottom of the pan has evaporated, add more. Return the ham to the oven and roast, basting every 10 minutes with the remaining Glaze, until glossy and well browned, about 45 more minutes.
  • Boil 2 cups apple cider in a saucepan over medium-high heat until reduced to 1/2 cup, 8 to 10 minutes. Reduce the heat to low; add 1/2 cup each apple jelly and maple syrup, 1/4 cup whole-grain mustard, 1/2 teaspoon allspice and 1/4 teaspoon nutmeg.
  • Mix 1 cup light brown sugar, 3/4 cup dijon mustard and the grated zest and juice of 1 orange in a bowl.
  • Toast 2 teaspoons five-spice powder in a small saucepan over medium heat with 1 tablespoon peanut oil, about 1 minute. Add 1 cup hoisin sauce, 3 tablespoons each honey and rice vinegar, 1 tablespoon soy sauce and 1 cup water. Boil and reduce to 1 1/2 cups, about 5 minutes.
  • Grate the zest of 2 limes; set aside. Squeeze the juice into a saucepan; add 8 thin slices ginger and 2 cups unsweetened pineapple juice. Boil until reduced to 1/2 cup, 8 to 10 minutes. Strain, then add the lime zest, 1 cup apricot preserves and 1/4 cup dijon mustard.

  • 1. Cut rind off ham, if present.
  • 2. Score top surface of ham, stud with cloves, and place fat side up on a rack in a shallow baking pan. Bake in a 350 preheated oven, approximately 15 minutes per pound, or follow wrapper directions.
  • 3. Combine sugar, syrup and mustard.
  • 4. Use ¾ cup of glaze to baste ham every 10 minutes during last 30 to 45 minutes of baking. Stir cornstarch into remaining glaze in saucepan. Add pineapple with juice. Simmer, stirring constantly, until sauce thickens. Serve sauce with ham.

8-10 pound (4-5 kg) bone-in fully cooked ham,
1/2 cup water
1/2 cup unsalted butter, (reduce fat or full fat)
1 cup brown sugar
1/2 cup honey
2 tablespoons Dijon mustard
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
4 cloves garlic, (smashed)

Steps:

  • Preheat the oven to 300°F | 150°C and arrange a rack in the lower third. Remove any plastic packaging or netting from the ham. Trim away the rind and discard. Set the ham aside to rest at room temperature for 1-2 hours.
  • Line a baking tray or dish with several sheets of aluminium foil or parchment paper if you prefer (it will make cleanup a lot easier).
  • Remove the rind or skin of the ham (refer to steps in post), ensuring you leave the fat on. Using a sharp knife score a 1-inch-wide diamond pattern (don't cut more than 1/4 inch deep) over the entire ham. Place the ham in the baking tray; pour 1/3 cup of water into the base of the pan and cover the ham with two pieces of foil or parchment paper and bake for 30 minutes.
  • Meanwhile, heat the butter in a small pot or saucepan over medium heat until golden browned. Add in the brown sugar, honey, mustard, cinnamon and cloves, stirring to mix together well until the brown sugar has completely dissolved, (about 2 minutes).
  • Reduce heat to low and add in the garlic. Allow it to become fragrant, cooking for a further minute or two until the glaze just begins to simmer, then set it aside and let cool to lukewarm (the glaze should be the consistency of room-temperature honey).
  • After 30 minutes baking time, carefully remove the ham from the oven and increase the oven temperature to 425°F | 220°C. Discard the foil or parchment paper and pour 1/3 of the glaze all over the ham, brushing in between the cuts to evenly cover. Return to the oven and bake uncovered for 15 minutes.
  • Remove from the oven, brush with another third of the glaze and some of the pan juices, and repeat again after 15 minutes more minutes of baking until a dark golden-brown crust has formed, (about 30 minutes total). For added depth of flavour, mix some of the ham pan juices together with the glaze in the pot which will help keep it runny enough for brushing. If your crust is still pink after there suggested baking time, turn on your broiler (or oven grill), and allow it to broil for 2-5 minutes, while keeping an eye on it so it doesn't burn from the sugar.
  • Let the ham rest 10-20 minutes before slicing.

2 tablespoons dijon mustard
¼ cup pineapple juice (or orange juice)
½ cup pineapple juice (or orange juice)
½ cup brown sugar
2 tablespoons dijon mustard
¼ teaspoon ground ginger
2 teaspoons cornstarch

Steps:

  • Preheat oven to 325°F.
  • Combine dijon mustard and pineapple juice. Brush over ham.
  • If your ham has a plastic disk on the bone, this should be removed and discarded. Place the ham, flat side down in a roasting pan, and cover tightly with foil. Roast 12-15 minutes per pound (or according to package directions).
  • Meanwhile, combine glaze ingredients and bring to a boil. Turn heat down and simmer 2-3 minutes. Cool.

1 (10- to 12-pound) fully cooked, trimmed, bone-in smoked ham (shank end), room temperature
2 cups freshly squeezed orange juice
1/2 cup packed dark brown sugar
3/4 cup bourbon
1/2 cup guava or apple jelly, warmed
2 large shallots, peeled and thinly sliced
3 whole allspice
3 whole cloves
Zest of 1 orange plus 2 oranges cut into 1/4-inch-thick slices
1 (2-inch-long) piece fresh ginger, peeled and grated
Special Equipment
1 (10- by 14-inch) roasting pan; toothpicks; pastry brush

Steps:

  • Position a rack in the lower third of oven and preheat to 325°F.
  • Using a sharp knife, score the fat covering the ham in a 3/4-inch-wide diamond pattern (do not cut into the meat). Place the ham in a 10-by-14-inch roasting pan and add 1 cup water. Roast the ham for 2 hours.
  • While the ham is roasting, prepare the glaze: In a heavy, medium saucepan over moderately low heat, combine 1 cup orange juice, brown sugar, and bourbon. Bring to a simmer and continue simmering for 10 minutes. Add the guava or apple jelly, shallots, allspice, and cloves, and continue simmering until slightly reduced, about 5 minutes. Add the orange zest and the remaining 1 cup orange juice, and bring to a boil. Continue boiling until thickened, about 5 minutes. Add the orange slices and fresh ginger, and cook until the orange slices are tender, about 2 minutes.
  • Once the ham has been in the oven for two hours, drape the glazed orange slices over the ham, securing them with toothpicks, and brush the ham and oranges with about 1/2 cup of glaze, reserving the remainder for serving. Continue roasting the ham until an instant-read thermometer inserted into the thickest part registers 145°F, about 30 minutes.
  • To Serve:
  • Remove the toothpicks from the ham and arrange the orange slices on a platter. Slice the ham and arrange on top of the oranges. Warm the remaining glaze and serve alongside.

3kg unsmoked boneless gammon joint
4 medium carrots, peeled and roughly chopped
1 leek, cleaned and roughly chopped
1 onion, peeled and roughly chopped
1 tsp black peppercorns, lightly crushed
1 tsp coriander seeds, lightly crushed
2 cinnamon sticks, broken in half
2 bay leaves
handful of cloves

Steps:

  • Put the gammon in a large saucepan and pour on enough cold water to cover. Add the carrots, leek, onion, peppercorns, coriander seeds, cinnamon sticks and bay leaves. Bring to the boil, turn down to a simmer and cook for 3 hours, topping up with more boiling water if necessary. Skim off the froth and any impurities that rise to the surface from time to time. If cooking in advance, let the ham cool in the stock overnight. Otherwise, allow it to cool a little, then remove from the pan. Strain the stock (and save for soup etc).
  • To make the glaze, put the sugar, Madeira, sherry vinegar, and honey into a pan and stir over a low heat. Bring to the boil, lower the heat and simmer for 3-4 minutes until you have a glossy dark syrup. Do not leave unattended, as it will easily boil over.
  • Preheat the oven to 170°C/Gas Lift the ham into a roasting tin. Snip and remove the strings and then cut away the skin from the ham, leaving behind an even layer of fat. Lightly score the fat all over in a criss-cross, diamond pattern, taking care not to cut into the meat. Stud the centre of each diamond with a clove. Pour half of the glaze over the ham and roast for 15 minutes.
  • Pour on the rest of the glaze and return to the oven for another 25-35 minutes until the ham is golden brown, basting with the pan juices frequently. It also helps to turn the pan as you baste to ensure that the ham colours evenly.
  • Remove from the oven and allow to rest for 15 minutes before carving.

  • Go easy when simmering. 'If you’re starting off by cooking your ham in water, make sure you’re poaching it and not boiling it. If you’re boiling it, the ham becomes quite tough and tight, so you want it on a gentle simmer, really around 85 degrees – no hotter than that.
  • Use the cooking liquor. 'Once the ham is cooked, keep the stock. Ham stock is invaluable for all sorts. It’s beautiful for making soups, it’s fantastic for putting through casseroles or for braising, and it’s actually good for just cooking vegetables – when you cook sprouts in ham stock instead of boiling water, they're phenomenal.
  • Cook low and slow. 'If you’re not poaching the ham and are going to roast it from raw, do it low and slow, as if you’re cooking a shoulder of lamb or leg of pork.
  • Try a dry rub to add extra flavour. 'Glazes are very important, but I also like to use a dry rub on the ham, which is a way to get another flavour profile in there.
  • When it comes to glaze, simplicity is key. 'You can do all sorts of different things – some people use cola, others use a mixture of golden syrup and stock.
  • Baste regularly. 'Remember to keep basting your ham every 10-15 minutes as your glaze is slowly reducing. There’s a risk of burning with all glazes as they’re high in sugar.
  • Use bone-in ham. 'In terms of cut, I use leg of ham on the bone, which is especially preferable when slow cooking as it helps maintain shape and moisture.
  • Use ham hocks if cooking for a smaller number. 'If you don’t want to cook a whole leg, try a couple of ham hocks – they work equally well and taste delicious.'
  • Don't bother studding the ham. 'Studding makes a ham look absolutely beautiful but nobody wants to eat a whole clove. I prefer a dry rub so you can just slice and eat it without having to worry about removing whole spices.
  • Buy high quality ham. 'My preference for ham is smoked over unsmoked, but in terms of the type of ham, buy the best quality you can afford and go for a British one if you can find it.'

  • Take a small sharp knife and cut a zig zag shape into the skin at the base of the ham hock – this is just for decoration more than anything. This is where you will remove the skin to. Using the small knife, loosen the skin away from the white fat along the cut edge. You want to keep the white fat on the ham, as this keeps the ham moist (and very tasty!). Loosen the skin by slipping your fingertips underneath, then pull the skin away, back to the zig zag at base of hock. Use a knife to score the white fat diagonally at about 2cm intervals.
