CREAMED RED AND WHITE PEARL ONIONS WITH BACON
This recipe came to The Times in 2003 from Barbara Lynch, the owner and chef of No. 9 Park in Boston. It is incredibly rich, and remarkably good. If you don't have time to blanch and peel the onions, feel free to use frozen pearl onions in a pinch.

Steps:
- If red and white onions are about the same size, bring a large pot of water to boil over high heat. Add onions and blanch until skins loosen slightly, about 5 minutes. Drain. (If white onions are considerably larger, blanch onions separately, increasing time on white onions by a couple of minutes.) Let onions until cool enough to handle, then trim and peel. Set aside. (Onions can be blanched, peeled and trimmed ahead of time. Place in 2-quart zipper-lock bag and refrigerate until ready to use.)
- Sauté bacon in a Dutch oven over medium heat until crisp, about 5 minutes. Transfer to paper-towel-lined plate and set aside. Pour off bacon fat. Melt butter in Dutch oven over low heat until foaming, add shallots and garlic and cook until translucent but not browned, stirring frequently, about 3 minutes. Add heavy cream and salt. Simmer, stirring often, until cream is thick and golden and has reduced by half, 15 to 20 minutes. Stir onions into cream to heat through.
- Heat broiler. Turn onions and cream into a shallow 1 1/2-quart casserole dish. Top with bacon, bread crumbs and parsley. Place under broiler and cook until crumbs are browned and dish is bubbling, about 10 minutes.

GLAZED WHITE PEARL ONIONS WITH BACON

- Render bacon until crispy brown in skillet. Drain on paper towels and crumble. Reserve bacon fat in skillet.
- For Fresh White Pearl Onions: Trim and discard the root end of the onions. Place the onions in a pan of boiling water and cook for 1 to 2 minutes to blanch, then transfer them to a bowl of ice water to stop the cooking. Pinch each onion at its stem end and it will pop out of its skin.
- Heat bacon fat and 1 tablespoon butter in a skillet over medium-low heat. Add onions and cook 20 minutes, stirring or gently shaking pan back and forth occasionally.
- Sprinkle sugar over onions and cook 2 minutes. Stir in vinegar and water. Cover, reduce heat to low, and cook 25 minutes. Stir in crumbled bacon and pepper to taste. Top with parsley and serve.

- In a large skillet heat oil over medium-high heat, then saute the onions until lightly browned (about 5-6 minutes).
- Add in balsamic vinegar and water; simmer stirring occasionally until the onions are tender (about 12-15 minutes).
- Transfer the onions to a bowl using a slotted spoon (reserve the liquid).
- Simmer the reserved liquid until thick and syrupy and reduced to about 1/2 cup.
- Season the liquid with salt and pepper and a little sugar if desired.
- Transfer the onions back to the skillet and coat with the liquid.
- Add in the butter, stirring and heat slightly until the butter has melted.
- Transfer to a bowl.

GLAZED PEARL ONIONS

- Place the onions, butter, oil, sugar and water in a skillet large enough to accommodate the onions in one layer. Bring the mixture to a boil, cover and cook for 4 minutes over medium-to-high heat until the onions begin to soften.
- Remove the lid from the pan and continue cooking the onions over medium-to-high heat until the water has evaporated and the onions start glazing in the remaining mixture.
- Add the salt, reduce the heat to low and shake the pan to coat the onions with the glaze and brown them on all sides.
