FRESH TROPICAL FRUIT NO-BAKE PIE
Last week I had a small get-together for a few friends to celebrate one of our friends on his birthday. The celebrant is Diabetic and has high Cholesterol -but he wanted a pie for his birthday. Here is what I came up with -I used three different fresh, tropical fruits. You can even use one or two. Everyone enjoyed it...

Steps:
- 1. Prepare one cooked 9-inch pie shell using packaged pie crust, or your favorite recipe for crust.
- 2. In a 2-quart saucepan, bring 1 1/2 cups Apricot Nectar to the boiling point (You could use Guava or any Nectar). Cool to room temperature.
- 3. Dissolve: 4 tablespoons Cornstarch in 4 tablespoons fresh lemon juice; add 4 tablespoons Splenda (can use Sugar or Honey) and 1/2 teaspoon salt. Add to saucepan with the nectar, and cook until thick and clear (Don't walk away -it thickens fast.); cool slightly.
- 4. Add 2 cups chopped or diced fresh fruit. I used a combination of fresh pineapple, mango and papaya. You could use any combination that you like or just one fruit.
- 5. Spoon into baked pie shell. Chill.
- 6. Spread 1 cup heavy whipping cream whipped with 4 tablespoons Splenda(Can use Sugar)on top of chilled pie.
- 7. Lightly distribute 1/2 cup moist coconut mixed with 1/2 cup chopped nuts over the top (I used peanuts, but I figure depending on the fruit you use, you can use different nuts and with or without the coconut.).
- 8. Enjoy. Please let me know if you make this pie -and also if you use different fruits. I think it would be nice to try different fresh fruits -peaches, oranges, strawberries??? Here is a picture of the pie along with a pound cake he probably shouldn't have had but wanted. Hey, it was his birthday, comes only once a year and I am not his Mama. It was good too. Smile!!

- Mango and papaya should be peeled and cut into 1 inch pieces. Kiwi should be sliced and peeled.
- In small saucepan combine the cornstarch and the juice and cook stirring until thickened and bubbly. Cook for 2 more minutes after it reaches this stage. Continue to stir. Transfer to a bowl, cover and cool for 30 minutes.
- Divid mix between 3 small bowls. Fold one fruit into the mix in one bowl. Spoon the fruit into the shell. Arrange as desired.
- Cover and chill for 3 to 4 hours. Top with topping when serving.
- Note if you use a non dairy topping or omit it and use a Vegan crust, this dessert is vegan.

GRANDDAUGHTER'S FRUIT PIE
Steps:
- Preheat oven to 400 degrees F.
- For the crust: Place flour and sugar in bowl, cut in shortening. Add fruit juice. Mix until dough forms a ball. Add more juice if necessary. Divide ball into 2 pieces and roll out.
- For the filling: Combine pineapple, oranges, cherry pie filling, cranberry sauce, sugar, tapioca, cinnamon and lemon juice. Line a 9-inch deep-dish pie plate with half of the rolled out pastry. Add filling, dot with margarine and top with other half of pastry. Make several slits in top crust. Bake 50 to 60 minutes or until crust is golden brown. Remove from oven. Mix together the powdered sugar and lemon and brush glaze on the pie.
CHEESECAKE WITH GLAZED FRUIT
My sister always made this dessert for family picnics when we were growing up.

Steps:
- 1. Prepare crust by mixing graham cracker crumbs, confectioners sugar, butter and cinnamon. With back of spoon, press firmly on bottom and sides of 9" pie pan. Chill.
- 2. Preheat oven to 350 degrees. Let cream cheese soften at room temperature then beat with lemon rind until very creamy using an electric mixer. Add next three ingredients and beat at medium speed until blended, then beat for 5 minutes until smooth and creamy. Pour into crust and bake about 30 minutes; cool.
- 3. To decorate and glaze, put a hulled large strawberry n the center of pie. Arrange strawberry halves petal fashion around the center strawberry. Surround with blueberries. Cut pineapple slices in 1 1/2" wedges and arrange alternately with apricot halves around the edge of pie.
- 4. To prepare glaze: in small saucepan blend cornstarch, pineapple/apricot syrup and 1 teaspoon of lemon juice. Cook, starring over low heat until clear and thickened. Cool slightly. Spoon glaze carefully over fruit using just enough to cover.
GLAZED FRESH BERRY PIE
This is an absolutely scrumptious pie, based on one originally published in The Vancouver Sun. With its fresh summer berries piled high in a baked pie shell and a glaze poured over top, it makes a nice change from traditional pies, where the fruit is cooked. It makes a wonderful summer dessert with a dollop of sweetened whipped cream on top. (I am from Canada, but for you Americans, it would make a wonderful 4th of July dessert (strawberries, blueberries AND whipped cream) (smiles). The original recipe in The Sun called for fresh raspberries (2 cups for the glaze and 6 cups for the filling), and it's wonderful with that too, but raspberry season is very short, and this strawberry/blueberry filling is wonderful too. I have yet to try it with blackberries, but might do that this summer too .... NEW NOTE from Jacquelyn: I have had some questions about the 18-inch pie crust called for .... this was not what I wrote! I wrote two 9-inch pie crusts (as the recipe makes two pies), and the site must have done that automatically. So people .... it's not one 18-inch pie, but two 9-inch ones. Hope that clarifies things.

- First, bake the deep dish pie shells according to the instructions on the box, then let cool as you prepare the rest of the recipe.
- To make glaze, crush 2 cups strawberries; add cold water to make 2 cups juice mixture. Pour into small heavy saucepan and place over medium-high heat; bring to a boil. Reduce heat and simmer for 3 minutes; strain and add cold water to make 2 cups.
- In heavy saucepan, combine sugar, cornstarch and salt. Gradually whisk in strawberry juice mixture and bring to a boil over medium heat, stirring constantly. Cook for 1 minute or until mixture is thick, stirring constantly. Cool glaze slightly.
- Generously fill baked pie shells with the fresh strawberries and blueberries. Divide the glaze in half, then pour over the fruit in each pie. Put in refrigerator for 2 to 3 hours or until glaze is chilled and set.
- Just before serving, whip cream with some icing sugar and a splash of vanilla to sweeten. Enjoy this fantastic summer dessert! Everyone will ask for seconds.

FRESH NO-BAKE FRUIT PIE
Fresh berry fruit pie, a wonderful summer treat. No oven to heat! Serve with a dollop of your favorite whipped cream.

- Thoroughly combine strawberries, blueberries, raspberries, and blackberries in a bowl. Scoop out 3/4 cup of mixed berries and place into a saucepan with 1 cup water and sugar; set remaining berries aside. Bring the mixture to a boil and reduce heat to medium-low.
- Whisk cornstarch and 1/4 cup water in a bowl until smooth and stir the cornstarch mixture into the hot fruit syrup; stir until the mixture thickens, about 2 minutes. Let the mixture cool completely, stirring occasionally, about 20 minutes.
- Pour the thickened berry mixture into fresh berries until thoroughly combined; pour berries and sauce into shortbread pie crust. Place in refrigerator until chilled, at least 1 hour.

TROPICAL FRUIT PUDDING PIE
This makes a healthy snack or dessert, and it's a great way to eat fruit :) I'm not real picky about custard vs plain yogurt, or what kind of fruit, pudding or preserves I top the dish with, it always turns out good. Cook time is chilling time, and the prep time includes slicing all the fruit, which I usually do while chilling the pie.

- Stir yogurt into pudding. Pour into pie crust.
- Chill 2 hours.

- In a small saucepan, combine pineapple-orange juice and cornstarch on medium heat. Continue to stir until thickened and bubbly; cook and stir just 2 minutes more. Transfer to a large bowl and cover surface with plastic wrap. Allow to cool about 30 minutes.
- Meanwhile, preheat oven to 375 degrees F. In a large bowl, combine melted butter and sugar then add in finely crushed graham crackers, mixing well. Press graham cracker mixture evenly onto the bottom and up the side of a 9-inch pie plate. Bake 4 to 5 minutes (edges should be light brown) and cool on a wire rack.
