My Dad made this for me last week when I was visiting in Palm Springs. Even though I am not a fish lover, it was so good that I gobbled it up. It is easy and good for you.

4 orange roughy fillets
1 egg
2 tablespoons honey mustard
3/4 cup seasoned bread crumbs
1 teaspoon cayenne pepper
3 teaspoons olive oil

Steps:

  • mix egg and honey mustard in medium bowl.
  • mix bread crumbs and cayenne in large ziplock.
  • dip fillets in egg mixture then toss in bread crumb.
  • place in refrige for 1/2 hour so crumbs adhere.
  • heat oil in large pan and cook about 4-5 min per side (depending on how thick).

  • Lay air fryer liner on the bottom of air fryer
  • Mix spices in a small bowl. Spray some oil on top of orange roughy and cover with spices.
  • Place fish in air fryer and cook for 6-7 minutes at 375 degrees.
  • Squeeze some lemon on top of fish before serving.

This recipe is a light alternative to pan-fried fish. A combination of cornmeal, bread crumbs, and dill weed gives this recipe a savory flavor in less than 25 minutes.

2 tablespoons cornmeal
2 tablespoons Italian-seasoned bread crumbs
¼ teaspoon salt
¼ teaspoon paprika
⅛ teaspoon dried dill weed
1 dash ground black pepper
¼ cup milk
1 pound orange roughy, cut into 1 1/2x2-inch pieces
3 tablespoons butter, melted

Steps:

  • Preheat an oven to 500 degrees F (260 degrees C). Move oven rack to position slightly above middle of oven. Generously grease a 13x9-inch baking dish.
  • Mix cornmeal, bread crumbs, salt, paprika, dill, and black pepper together in a shallow bowl. Pour milk into a separate bowl.
  • Dip orange roughy pieces into milk and then press into bread crumbs to coat on all sides. Gently toss between your hands so any bread crumbs that haven't stuck can fall away. Place breaded orange roughy into prepared baking dish in a single layer while breading the rest. Drizzle butter over the breaded fish pieces.
  • Bake in preheated oven until fish flakes easily with fork, about 10 minutes.

  • Cut fish into serving-size pieces.
  • Beat egg in small shallow bowl.

1/2 lb orange roughy, cut into fillets
3 tablespoons butter
4 cloves garlic, minced
1 tablespoon white wine
1/4 cup onion, cut into rings
salt and pepper

Steps:

  • Preheat oven to 450.
  • Rinse filets in water, pat dry with paper towels.
  • Set aside.
  • Melt butter in a small saucepan.
  • Add garlic, and white wine, stirring until all is mixed together.
  • Spray a small square glass baking dish with cooking spray.
  • Sprinkle both sides of fish with salt and pepper, and lay fish filets in the dish.
  • Lay onion rings on top of fish, and pour garlic butter mixture over everything.
  • Bake at 450 for 12-15 minutes, until fish flakes when you pick at it with a fork.
  • This is super easy, low in calories, and also tastes great.

1 teaspoon seasoning salt (or to taste)
pepper
paprika
3 tablespoons butter or 3 tablespoons margarine, melted

I love buttery, lemony white fish so I devised this simple recipe. For this dish, you can use roughy, tilapia, whitefish, halibut.... any nice white fish fillet. And this is a great way for NEWBIES to seafood to break in. The technique is pretty forgiving of mistakes and the fish WILL be done, but not overcooked. Enjoy!

4 orange roughy fillets
8 tablespoons butter, melted (no margarine!)
2 lemons, halved
1/2 teaspoon paprika
8 fresh parsley sprigs (curly Italian parsley is best)
cooking spray

Steps:

  • Pull off four sheets of good quality aluminum foil, each about 24 inches long. Double each one over so it's a foot long and spray with the cooking spray.
  • Pre-heat the oven to 375-degrees F.
  • Lay out a fillet on each sheet of foil and pull the sides up a bit so that it will hold liquid.
  • Squeeze a half lemon over each fillet. Cut up the spent lemons into wedges and put the pieces around the fish.
  • Pour the melted butter equally over each fillet. Lightly dust the top of each fillet with the paprika. Instead of paprika, you could substitute Old Bay Seasoning, which yields an excellent flavor. In any case, you may not need all the spice, depending on the size of your fillets.
  • Close the foil and make a seal. Place the closed foil bowls into the oven, middle rack, and bake for 15 minutes.
  • Revove the foil bowls from the oven, carefully open them to expose the filets and place them all on a sheet pan. Re-set the oven to "broil" (on "high" if there is a setting), and return the fish to the oven just above the middle rack. Broil for just a few minutes until you see very slight browning, no more than 5 minutes.
  • Garnish with the parsley sprigs and serve hot with basmati rice on the side. (See: Recipe #217802 ). You can just leave the fish on the foil and place it on serving plates if you wish.

1 medium onion, cut into thin wedges
2 cloves garlic, pressed
1 tablespoon minced fresh ginger
1 lb orange roughy fillet, cut into 1-inch cubes
2 cups fresh broccoli florets
1 cup sliced fresh mushrooms (your favorite variety)
1 large red bell pepper, cut into thin strips
2 teaspoons cornstarch
1/4 cup water
1/4 cup dry white wine
1/4 cup soy sauce
1/2 teaspoon hot sauce (or to taste)
hot cooked rice

Steps:

  • In a large skillet or wok, heat 1 tablespoon oil until it is hot over medium-high heat.
  • Add in the onion, garlic, and ginger; stir frequently for 2-3 minutes; remove from skillet Heat the other 1 tablespoon oil in the skillet until it is hot.
  • Add fish cubes, broccoli, mushrooms, and red bell pepper to the skillet; stir constantly 3-4 minutes or until fish flakes easily.
  • Add onion mixture back to the skillet; stir to combine.
  • In a measuring cup or small bowl, whisk the cornstarch, water, wine, soy sauce, and hot sauce.
  • Pour mixture into the skillet; stir for 1 minute or until thickened.
  • Serve over hot cooked rice.
