BALSAMIC GLAZED PORK | SLIMMING & WEIGHT WATCHERS FRIENDLY

- Put the balsamic vinegar and granulated sweetener in a pan and bring to the boil.
- Allow to simmer until the balsamic has reduced by half and it coats the back of a spoon.
- Remove from the heat and allow to cool. As the glaze cools it will start to thicken up even more, so if it starts to thicken too much just add a small amount of water and stir well. It needs to be the right consistency to coat things. You can store this in the fridge until you're ready to use it.
- First coat the pork medallions in the balsamic glaze (see recipe below for recipe) then sprinkle with half of the chopped chillies and refrigerate for at least 30 minutes.
- Pre-heat the oven to 200°C.
- Peel the onion, leaving the root end intact, then cut it into 6 - 8 wedges. Peel the shallots and slice them in half lengthways. Peel the garlic cloves and slice any larger ones in half lengthways.
- Place all the veg (including the rest of the chilli and rosemary) in a roasting tray, spray with some Low calorie cooking spray and season.
- Roast for 20 minutes. While the veg is cooking heat up a frying pan, then sear the pork medallions on both sides (about 2 minutes each side).
- Pour in any remaining glaze, then transfer the pork into the tray with the roasting vegetables, return to the oven for another 10-15 minutes until the pork is cooked.

- In a small bowl, combine vinegar, cider, oil, honey, garlic, rosemary and mustard. Set aside.
- Preheat oven to 350° F. Season pork with salt and pepper on both sides.
- Add a thin layer of oil to grease the bottom of a skillet (cast iron preferred) and warm to medium-high heat.
- Add pork to skillet and sear each side 1 minute or until lightly browned.
- Transfer to a shallow baking dish. Pour glaze over medallions and lift medallions to coat bottom.

PORK MEDALLIONS WITH BALSAMIC-HONEY GLAZE

- Preheat the oven to 350°F. Glaze: Put garlic and rosemary in a small bowl. Add the vinegar, honey, olive oil, mustard, salt, and pepper to taste and stir to combine.
- Pork: slice the tenderloin into 1-inch thick round medallions. Cover the bottom of a medium skillet with a light film of canola oil and heat over medium-high heat until hot. Add the pork slices in one layer, season with salt and pepper and sear for 1 minute. Turn and sear for 1 more minute, until lightly browned.
- Transfer the slices in one layer to a shallow baking dish. Pour the glaze over the slices and turn them to coat. Roast for 8 to 10 minutes or until cooked trough. Cooking Guidelines To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures: Steak and Pork 145° F (rest cooked meat, 3 minutes) | Seafood 145° F | Chicken 165° F | Ground Beef 160° F | Ground Turkey 165° F | Ground Pork 160° F 1 Prepare the Ingredients Peel, trim, and cut carrot into 1/4" slices on an angle. Stem cilantro, mince stems, and coarsely chop leaves. Remove any discolored outer leaves from bok choy and trim ends. Cut stems into 1/4" slices and coarsely chop leaves. Pat pork tenderloin dry. On a separate cutting board, slice tenderloin into eight medallions 1/2-3/4" thick. Season both sides of medallions with 1/2 tsp. salt and 1/4 tsp. pepper. 2 Sear the Pork Heat 1 tsp. olive oil in a medium non-stick pan over medium-high heat. Add medallions to hot pan and cook until well-browned on both sides, 3-4 minutes per side. Transfer medallions to a plate. Pork will finish cooking in a later step.
