This simple, easy recipe can be adapted to any of your favorite fresh summer fruits!

1 cup granulated sugar ((222g))
3 cups all-purpose flour ((378g))
1 teaspoon baking powder
½ teaspoon salt
¼ teaspoon ground cinnamon
1 cup unsalted butter (cold, cut into cubes (8oz or 226g))
1 large egg (lightly beaten)
½ cup granulated sugar ((110g))
1 tablespoon cornstarch
¼ teaspoon ground cinnamon
5 large peaches, peeled and diced ((about 4 to 5 cups))
1 teaspoon fresh lemon juice
1 cup powdered sugar ((115g))
¼ teaspoon almond extract
1 tablespoon milk (more or less for desired consistency)

Steps:

  • Preheat oven to 350°F if using a glass pan, or 375°F for a metal pan. Lightly grease or spray a 13x9-inch baking pan and set aside.

Finely ground pecans add nutty richness to the dough that doubles as the bottom crust and top crumble layer of these yummy bars. Cooking down fresh peaches for the filling concentrates their sweet floral flavor and adds more intensity than a jar of prepared jam.

2 sticks butter, cut-up and softened, plus more for the pan
4 peaches, peeled, pitted and chopped
1/4 cup water
1/4 cup golden syrup (such as Lyle's)
2 cups all-purpose flour
1 cup finely ground pecans
1 cup confectioners' sugar
1 teaspoon baking powder
1/2 teaspoon salt

Steps:

  • Preheat the oven to 350˚ F. Line a 9-by-13-inch baking pan with foil and butter the foil.
  • Cook the peaches with the water and golden syrup in a saucepan until thick and jammy, mashing if needed, about 12 minutes.
  • Combine the flour, pecans, confectioners' sugar, baking powder and salt in a bowl. Work in the cut-up butter until moist clumps form.
  • Press two-thirds of the dough into the pan pan. Spread the peach mixture on top and sprinkle with the remaining dough. Bake at 350˚ F until browned, 40 to 45 minutes. Let cool completely in the pan, then lift out of the pan using the foil. Cut into bars.

1 cup butter
2/3 cup granulated sugar
2 1/2 cups all-purpose flour
1 1/2 cups peach preserves
1/2 cup all-purpose flour
1/2 cup granulated sugar
1/4 cup butter, softened
1 teaspoon almond extract
1 1/2 cups slivered almonds
1/2 cup confectioners' sugar
1 tablespoon milk
1/2 teaspoon almond extract

Steps:

  • In a mixing bowl, beat butter, sugar and flour. Press evenly on the bottom of a lightly greased 13x9x2 inch baking pan. Bake at 350* for 15-20 minutes or until golden around the edges.
  • Remove from oven and top with preserves. Allow to stand 2-3 minutes, then spread preserves evenly over crust with the back of a spoon.
  • To prepare topping, combine flour, sugar, butter and almond extract. Beat slowly several minutes to blend, then sprinkle evenly over preserves.
  • Sprinkle with almonds. Bake an additional 20-25 minutes or until bubbly with golden edges. Cool completely on wire rack.
  • To prepare glaze, whisk confectioners sugar, milk and almond extract until smooth, drizzle over bars. Cut into squares.

1 tube (8 ounces) refrigerated seamless dough sheet
1 package (8 ounces) cream cheese, softened
1/2 cup sugar
1/4 teaspoon almond extract
1 can (21 ounces) peach pie filling
1/2 cup all-purpose flour
1/4 cup packed brown sugar
3 tablespoons cold butter
1/2 cup sliced almonds

Steps:

  • Preheat oven to 375°. Unroll dough sheet into a rectangle. Press onto bottom and slightly up sides of a greased 13x9-in. baking pan. Bake 5 minutes. Cool completely on a wire rack., In a large bowl, beat cream cheese, sugar and extract until smooth. Spread over crust. Spoon pie filling over cream cheese layer., In a small bowl, whisk flour and brown sugar. Cut in butter until mixture resembles coarse crumbs. Stir in almonds; sprinkle over peach filling., Bake 25-28 minutes or until edges are golden brown. Cool in pan on a wire rack. Cut into bars. Store in an airtight container in the refrigerator.
