½ cup packed brown sugar
1 ½ teaspoons salt
½ teaspoon chili powder
1 ½ pounds lean ground beef
1 ½ cups croutons, crushed
1 small onion, chopped
2 eggs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan.
  • Stir ketchup, brown sugar, salt, and chili powder together in a bowl until smooth. Spread a small amount of the ketchup mixture into the bottom of the prepared loaf pan.
  • Mix ground beef, croutons, onion, eggs, milk, and black pepper together in a large bowl; shape into a loaf and put into prepared pan. Spread remaining ketchup mixture over the loaf.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

1 cup crushed saltines (about 30 crackers)

1/4 teaspoon pepper
2 pounds lean ground beef
1/2 cup packed brown sugar
1/2 cup ketchup

Steps:

  • In a large bowl, combine the eggs, milk, cheese, saltines, carrots, onion, salt, garlic powder and pepper. Crumble beef over mixture and mix well. Shape into a loaf. Place in a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 50 minutes. , For glaze, in a small saucepan, bring the brown sugar, ketchup and mustard to a boil. Reduce heat; simmer, uncovered, for 3-5 minutes or until heated through. Spoon over meat loaf. , Bake 10-15 minutes longer or until meat is no longer pink and a thermometer reads 160°. 1 cup plain dry breadcrumbs
1/2 cup milk
2 large eggs
1/4 cup chopped fresh parsley
2 tablespoons Worcestershire sauce
1 1/2 pounds ground beef (80/20)
1 1/2 pounds ground pork
1 medium onion, grated and lightly squeezed of excess liquid
2 cloves garlic, minced
Kosher salt and freshly ground black pepper
1 tablespoon light brown sugar
1 1/2 teaspoons apple cider vinegar
3/4 teaspoon chipotle chile powder

Steps:

  • Position a rack in the upper third of the oven and preheat to 375 degrees F. Mix 1/2 cup of the ketchup, the breadcrumbs, milk, eggs, parsley, and 1 tablespoon Worcestershire sauce together in a large bowl and set aside until the breadcrumbs have absorbed the liquid, about 3 minutes.
  • Add the ground beef and pork, onion, garlic, 1 tablespoon salt, and 1/2 teaspoon pepper to the bowl and mix until well combined (do not overmix).
  • Transfer the meat mixture to an 18-by-13-inch sheet pan (see Cook's Note) and press it into an even layer covering the entire surface. Whisk the remaining 1 1/2 cups ketchup, 1 tablespoon Worcestershire, brown sugar, cider vinegar, and chipotle powder in a small bowl. Brush the meatloaf with the sauce.
  • Bake until the meat is cooked through, about 20 minutes, then turn on the broiler setting and broil until the top becomes caramelized and dark in spots, 3 to 4 minutes more, turning the pan periodically for even broiling. Let rest 5 minutes before serving.

1 1/2 cups panko bread crumbs
1 large onion (- finely diced)
8 cloves garlic (- crushed)
2 tbsp gochujang
5 green onions (- minced)
2 tsp kosher salt
2 large eggs (- lightly beaten to combine)
2 tsp vegetable oil
sesame seeds to garnish if desired
3 tbsp apricot jam
2 tbsp gochujang
1 tbsp rice wine vinegar
1 tbsp honey
2 tsp soy sauce

Steps:

  • Pre-heat your oven to 350F.
  • Film a pan with the vegetable oil. Add the minced onions and cook slowly until translucent. This takes about 10 minutes.
  • Add the garlic to onions and cook another 2 minutes. Remove the onion mixture from the heat, transfer to a bowl and place in the refrigerator to cool.
  • Combine the cooled onion mixture with the minced green onion, gochujang, eggs and kosher salt. Stir to combine thoroughly.
  • Put the ground pork and breadcrumbs in a large bowl. Add the onion gochujang mixture and mix gently. You want it evenly red. You don't want it packed into a brick. A light hand is what you are looking for here.
  • Transfer the meatloaf mix to a 9.5 inch by 5 inch loaf pan (or free form it on a cookie sheet - your call).
  • Place the meatloaf in the oven. Cook until you get to an internal temperature of 140F, about 40 minutes. Pros use instant read thermometers. You should too.
  • While the meatloaf cooks make the glaze. Combine all the ingredients and stir thoroughly.
  • When the meatloaf reaches 140F remove it from the oven and spoon the glaze overtop evenly.
  • Return the glazed meatloaf to the oven and cook until it reaches an internal temperature of 160F. This takes somewhere around 10-15 minutes. Try not to overshoot. Overcooked meatloaf is dry meatloaf. Nobody likes that. Serve with mustard pickled onions.

2 teaspoons olive oil
1 teaspoon sesame oil
1 1/2 cups finely diced white onions
2 tablespoons minced garlic
1 tablespoon minced fresh ginger
Kosher salt and freshly ground black pepper
1/2 cup panko
1/2 cup whole milk
Unsalted butter, for greasing
2 pounds ground chicken (see Cook's Note)
2 tablespoons low-sodium soy sauce
2 large eggs, lightly beaten
2/3 cup hoisin sauce
1/3 cup blackberry jam
Toasted sesame seeds, for garnish

Steps:

  • Preheat the oven to 375 degrees F. Grease a 9-by-5-inch loaf pan with butter (see Cook's Note).
  • Heat the olive oil and sesame oil in a medium skillet over medium-low heat until warm. Add the onions, garlic, ginger and a pinch each of salt and pepper. Cook, stirring occasionally, until the onions are translucent, about 8 minutes. Transfer the mixture to a large bowl and let cool to room temperature.
  • Meanwhile, stir together the panko and milk in a small bowl and set aside for 5 minutes, then transfer to the large bowl. Add the chicken, soy sauce and eggs and mix together with your hands just until combined. Transfer to the prepared loaf pan and smooth out the top. Bake the meatloaf for 45 minutes.
  • Meanwhile, whisk together the hoisin sauce and blackberry jam in a small saucepan over medium-low heat until smooth and warm, about 3 minutes. Remove from the heat and cover with foil to keep warm.
  • Remove the meatloaf from the oven and brush generously with the hoisin glaze. Return to the oven and continue to bake until the meatloaf reaches an internal temperature of 165 degrees F, about 20 minutes. Remove from the oven and let the meatloaf sit for 5 to 10 minutes.
  • Sprinkle sesame seeds over the meatloaf then slice and serve topped with the remaining hoisin glaze.

3 slices bread (torn up into small pieces)

Steps:

  • Heat oven to 350°.
  • In a small bowl combine ketchup, brown sugar, 1 Tbsp of the lemon juice, and mustard powder.
  • In a large bowl combine ground beef, bread, remaining lemon juice, onion, egg, seasoning and 1/3 of the ketchup mixture. Mix well and place in a loaf pan.

1 cup crushed saltines (25-30 crackers)
1/3 cup milk
1/4 to 1/2 cup minced fresh parsley
2 large eggs (lightly beaten)
2 teaspoons onion powder (see note to use fresh onions)
3 garlic cloves (finely minced or 1 teaspoon garlic powder)
1 tablespoon Dijon mustard
3 tablespoons Worcestershire sauce
1 1/2 teaspoons salt (I use coarse, kosher salt - use slightly less for table salt)
1/2 teaspoon black pepper (I use coarse black pepper - use slightly less for finely ground)
2 pounds ground meat (I use half ground beef/half ground pork - see note)
2/3 cup ketchup or BBQ sauce (or a combination)
2 tablespoons brown sugar
2 tablespoons apple cider or red wine vinegar

Steps:

  • For the meatloaf, in a large mixing bowl, add the crushed saltines and milk and let the mixture sit for 5-10 minutes. Add the parsley, eggs, onion powder, garlic, Dijon mustard, Worcestershire sauce, salt and pepper. Mix well.
  • Add the ground meat and mix until evenly and well combined. (You can use a food processor for all of the above if you want a an even more well combined spice and meat mixture.)
  • For the glaze, combine the ketchup (or BBQ sauce), brown sugar, and vinegar and whisk to combine.
  • Preheat the oven to 375 degrees F. Line a baking sheet with foil and lightly grease with cooking spray.
  • Pile the meat mixture in the middle of the prepared pan and shape into a loaf about 9 inches long and 4 inches wide (it doesn't have to be perfect; just try to get it an even thickness throughout).
  • Spoon the glaze over the meatloaf. Bake for 45-50 minutes until an instant-read thermometer registers 160 degrees F in the center of the meatloaf.
  • Loosely tent with foil and let the meatloaf rest for 10-15 minutes before slicing and serving.

  • Preheat your oven to 350 degrees. Lightly spray a loaf pan with non-stick cooking spray.

1 cup (250 mL) onion, finely chopped
2 tbsp (30 mL) Worcestershire sauce

1/2 cup (125 mL) bread crumbs
1 1/2 tsp (7 mL) salt
2 tsp (10 mL) dried oregano or thyme

Steps:

  • Mix all of the ingredients together with 1/2 cup (125 mL) of VH® Sweet Thai Chili Sauce, reserving the other half for the glaze.
