Categories     main-dish

Time 5h35m

Yield 8 to 10 servings

Number Of Ingredients 15

One 6- to 8-pound trimmed brisket
Kosher salt and freshly ground black pepper
1 tablespoon olive oil
4 onions, cut into big chunks
4 large carrots, peeled and sliced into 2-inch chunks
3 parsnips, peeled and sliced into 2-inch chunks
2 1/2 cups beef broth
1 cup full-bodied red wine, such as Merlot
2 tablespoons brown sugar
2 tablespoons soy sauce
5 cloves garlic, chopped
One 4-ounce can tomato paste
1 bunch fresh rosemary
1 bunch fresh thyme
1/2 cup chopped fresh parsley

Steps:

  • Preheat the oven to 300 degrees F.
  • Season the brisket on both sides with salt and pepper. In a Dutch over medium-high heat, brown the brisket in the olive oil on both sides for 6 to 8 minutes per side. Set aside.
  • Add the onions, carrots and parsnips and saute for a minute or so until slightly browned. Add the broth, wine, brown sugar, soy sauce, garlic and tomato paste and stir together. Put the brisket on top and place the whole bunches of rosemary and thyme around the brisket. Cover the pot, transfer to the oven and cook until the meat is fork-tender, about 5 hours.
  • Remove the brisket from the pot and cover it in foil to rest for 10 minutes. Remove the herbs from the sauce and skim off any fat from the top. Slice the meat and return it to the pot to warm up. Sprinkle with the parsley before serving.

BRAISED BRISKET WITH ROOT VEGETABLES

Braised Brisket with Root Vegetables image

It's a toss-up which part of this dish is best: the tender meat with rich tomato flavor, or the luscious root vegetables that sit beneath it during braising, soaking up juices from the brisket and wine.Courtesy of Food Network Kitchens.

Time 5h

Yield 8 servings

Number Of Ingredients 11

1 (4-lb) beef brisket, preferably first cut, trimmed of excess fat
Kosher salt and freshly ground black pepper
3 Tbsp Olive oil
1 large yellow onion, thinly sliced
4 cloves garlic, minced
4 tsp chopped fresh thyme
1 cup dry red wine, such as Cabernet Sauvignon
1 (28-oz) can diced tomatoes
1 ½ lb(s) baby red potatoes
1 lb(s) carrots, peeled and cut into 3-inch-long pieces
1 lb(s) parsnips, peeled and cut into 3-inch-long pieces, halved lengthwise if very thick

Steps:

  • Preheat the oven to 325ºF. Pat the brisket dry and sprinkle with 2 teaspoons salt and 1/2 teaspoon pepper. Heat the oil in a large stovetop-safe roasting pan over medium heat. Add the brisket and cook, turning with tongs, until browned on all sides, about 12 minutes. Transfer the brisket to a plate and set aside.
  • Add the onions, garlic and thyme to the pan. Cook, stirring, until the onions are soft and translucent, about 7 minutes. Add the wine and 1/2 cup water, scraping up the browned bits from the bottom of the pan with a wooden spoon. Add the tomatoes with the juices from the can, 1/2 teaspoon salt and pepper to taste. Return the beef to the pan along with any accumulated juices; increase the heat to medium-high and bring to a simmer.
  • Remove the roasting pan from the heat and add the potatoes, carrots and parsnips around the sides of the brisket. Tightly cover the roasting pan with aluminum foil and roast until the brisket is very tender and a fork will easily pierce it, 3 1/2 to 4 hours.
  • Transfer the brisket to a cutting board and the vegetables to a large serving platter. Cover and keep warm. Skim the fat from the top of the juices in the roasting pan. Place the roasting pan over medium heat on the stovetop and bring to a simmer. Cook until the sauce has reduced by more than half and is similar to a thick gravy, 15 to 20 minutes. Slice the brisket against the grain and transfer to the platter with the vegetables. Season the sauce with salt and pepper and spoon a bit over the slices. Serve the remaining sauce on the side.

Yield Makes 8 servings

Number Of Ingredients 19

1 cup celery leaves
3 whole cloves
2 Turkish bay leaves
2 cardamom pods
1 garlic clove, peeled
1/4 teaspoon whole black peppercorns
1 3 1/2- to 3 3/4-pound flat-cut beef brisket
2 pounds bone-in beef short ribs (about 6 medium)
1 medium onion, peeled
1 tablespoon coarse kosher salt
4 cups 1- to 1 1/2-inch cubes peeled celery root (celeriac; about 1 large)
4 cups 3/4-inch cubes peeled trimmed rutabaga (about 2 large)
2 1/2 cups 1 1/2-inch cubes peeled Yukon Gold potatoes (about 1 pound)
1/4 cup (1/2 stick) unsalted butter, room temperature
3 tablespoons prepared white horseradish
3 tablespoons Dijon mustard
3 tablespoons (packed) golden brown sugar
Special Equipment
Cheesecloth

Steps:

  • Stack three 8-inch squares cheesecloth on work surface. Place celery leaves and next 5 ingredients in center of square. Gather up edges of cheesecloth; tie with kitchen string and set packet aside.
  • Place brisket and short ribs in heavy large wide pot. Add enough water to pot to cover meat. Bring to simmer over medium heat. Skim any impurities that rise to surface. Reduce heat to maintain gentle simmer. Add packet, onion, and 1 tablespoon coarse salt. Cover; simmer until meat is fork-tender, about 2 hours for short ribs and 3 1/4 to 3 1/2 hours for brisket. Transfer meats to 15x10x2-inch glass baking dish. Remove and discard bones from short ribs. Remove and discard packet and most of onion from cooking liquid. DO AHEAD: Can be made 1 day ahead. Cool cooking liquid and meats slightly, then chill separately until cold. Cover each; keep chilled.
  • Bring meat cooking liquid to boil; add celery root, rutabaga, and potatoes. Reduce heat to medium and cook uncovered until vegetables are tender, about 45 minutes. Drain vegetables, reserving 3 cups cooking liquid. Return vegetables to pot and stir over low heat 1 minute to dry. Mash vegetables with potato masher to coarse puree. Mash in butter. Season to taste with salt and pepper. DO AHEAD: Can be made 2 hours ahead. Let stand at room temperature. Rewarm over medium-low heat before serving, adding reserved meat cooking liquid by tablespoonfuls as needed to moisten.
  • Preheat oven to 375°F. Whisk horseradish, mustard, and sugar in small bowl. Brush 3 tablespoons horseradish sauce over meats in dish. Sprinkle with salt and pepper. Roast meats until browned and heated through, 35 to 45 minutes. Transfer meats to work surface. Thinly slice across grain. Place on platter. Drizzle 2 cups reserved cooking liquid around. Serve with vegetable mash and horseradish sauce.

ULTIMATE CORNED BEEF BRISKET WITH ROOT VEGETABLES

Ultimate Corned Beef Brisket With Root Vegetables image

This recipe has something for everyone who enjoys corned beef and cabbage. Leftovers? try Recipe #268937 or Recipe #328428 :)

Provided by 2Bleu

Categories     Roast Beef

Time 4h30m

Yield 6 serving(s)

Number Of Ingredients 19

1 sprig thyme
2 sprigs parsley
1 tablespoon peppercorn
1 teaspoon mustard seeds
1 teaspoon whole cloves (or use allspice berry)
1 bay leaf
cheesecloth
kitchen twine
4 lbs corned beef brisket
cold water, to cover brisket
1/4 cup apple cider vinegar (this is to tenderize the meat)
1 (15 ounce) jar white pearl onions
3 small turnips, peeled and quartered
3 new potatoes, peeled and quartered
18 baby carrots
1 head cabbage, cut up into large pieces
1 cup apple cider juice (not vinegar)
fresh parsley, chopped
whole pickled beet (Greenwood Brand)

Steps:

  • GARNI: Prepare the bouquet garni: Place seasonings into middle of cheesecloth and tie with twine. Set aside.
  • BEEF: The method of tying up the brisket is optional for presentation, if not rolling, be sure and place brisket fat side up in the pot. TO ROLL, roll up the brisket fat side out into a cylinder shape and tie securely with twine. Place tied beef into a pot. Cover with cold water, add cider vinegar (the vinegar helps tenderize the meat), and bring to a boil. Remove the scum off the surface as it appears. Reduce the heat and simmer for 10 minutes. If the liquid is salty after 10 minutes, start again with boiling water. Add bouquet garni. Simmer for 2-3 hours skimming any scum as it appears on the surface.
  • VEGETABLES: Transfer beef to a large clean pot. Strain the liquid, cool slightly, and remove any oil/grease. Add onions, turnips, potatoes, carrots and cabbage, and apple cider to the pot containing the brisket. Cover with strained liquid and cook at a simmer for 1 hour more, or until very tender (you can pierce beef easily with a skewer).
  • SERVE: Remove the meat from the poaching liquid , cut the trussing strings and carve the meat into generous slices. Place them on a warmed platter. Arrange the cooked garnish vegetables around the meat. Sprinkle with chopped fresh parsley and serve with the beets.

HOME AGAIN HONEY GLAZED BRISKET

Home Again Honey Glazed Brisket image

Provided by Robert Irvine : Food Network

Categories     main-dish

Time 6h10m

Yield 8 servings

Number Of Ingredients 8

1 (4-pound) beef brisket
1 tablespoon Irvine Spices Smokey Rotisserie Seasoning
1 tablespoon garlic powder
2 teaspoons salt
1/2 to 1 teaspoon ground black pepper
1/2 cup barbecue sauce (your choice)
1/2 cup brown sugar
1/4 to 1/2 cup honey

Steps:

  • Rinse brisket and dry well with paper towels. Prepare a rub by combining Smokey Rotisserie Seasoning, garlic powder, salt and black pepper in a small bowl and rubbing over entire surface of brisket. Follow manufacturer's instructions for the smoker. General rule of thumb is to maintain a temperature range of 255 to 300 degrees F (indirect heat), and smoke for 1 to 1 1/2 hours per pound of meat (4 to 6 hours for a 4-pound brisket). Towards the end of the smoking time, combine the barbecue sauce and brown sugar in a small bowl and spread on the brisket.
  • Just before serving, glaze with honey and serve family style.

Time 3h30m

Yield 10

Number Of Ingredients 10

1 lemon
3 tablespoons olive oil
5 pounds beef brisket
36 cloves garlic, peeled
2 tablespoons red wine vinegar
3 cups Swanson® Beef Stock or Swanson® Unsalted Beef Stock
3 sprigs fresh thyme leaves, or more to taste
2 sprigs fresh rosemary leaves
1 teaspoon chopped fresh rosemary leaves
1 teaspoon minced garlic

Steps:

  • Heat the oven to 325 degrees F. Grate 1 teaspoon zest from the lemon.
  • Heat the olive oil in a roasting pan over medium-high heat. Add the beef and cook until well browned on both sides. Remove the beef from the pan. Pour off all but 1 tablespoon pan drippings.

Cook for 5 minutes. Season with black pepper.
  • Return the beef to the pan. Spoon the stock mixture over the beef. Cover the pan.

  • Place about half the garlic cloves and about 1 cup pan drippings into a food processor or blender. Cover and process until the mixture is smooth.
  • Heat the garlic mixture, remaining garlic cloves, remaining pan drippings, chopped rosemary, minced garlic and lemon zest in a 10-inch skillet over medium-high heat to a boil. Cook and stir until the gravy is thickened. Serve the gravy with the beef.
