This is my favorite cheesecake to make, with a chocolate mint filling, not to mention an amazing crust that holds its own.

25 Thin Mints Girl Scout Cookies®, crushed
3 tablespoons butter, melted
3 (8 ounce) packages cream cheese, softened
¾ cup white sugar
1 teaspoon vanilla extract
3 eggs
10 Thin Mints Girl Scout Cookies®, crushed
1 drop peppermint extract, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Wrap the bottom of a springform pan with aluminum foil.
  • Mix 25 crushed cookies with butter in a large bowl. Press into the bottom of a springform pan to form crust.
  • Beat cream cheese, sugar, and vanilla extract together in a bowl with an electric mixer until smooth. Beat in eggs one at a time, mixing well between each addition. Fold in 10 crushed cookies and peppermint extract.
  • Spread cream cheese mixture over crust. Set springform pan in a deep baking dish. Pour enough water into the baking dish to come halfway up the sides of the pan.
  • Bake in the preheated oven until center of the cheesecake is set, 45 to 60 minutes. Turn off oven and open door slightly, leaving cheesecake inside to cool, about 1 hour. Refrigerate until firm, about 4 hours.

To create this Girl Scout cookie-inspired dessert, grind Thin Mints and use them to make the cookie crust for a luscious mint chocolate cheesecake.

COOKIE CRUST:
9 oz thin mints girl scout cookies, coarsely chopped
7 Tbsp unsalted butter, melted
FILLING:
12 oz bittersweet or semisweet chocolate (not unsweetened), coarsely chopped
2 lb cream cheese, room temperature
1 3/4 c sugar
4 large eggs
1/4 c heavy cream
1/2 c unsweetened cocoa powder, sifted
1 Tbsp pure vanilla extract
1 tsp peppermint extract

Steps:

  • 1. Make the cookie crust: In the bowl of a food processor, finely grind the cookies. Add the melted butter and process until the crumbs start to stick together. Press the crumb mixture firmly into the bottom and up the sides of a 9-inch-diameter springform pan with 2 3/4-inch-high sides. Chill until ready to use.
  • 2. Make the filling: Position a rack in the center of the oven and preheat to 350°F.
  • 3. In a dry metal bowl set over a pan of barely simmering water, melt the chocolate, stirring until smooth. Let cool until lukewarm.
  • 4. In a stand mixer fitted with the paddle attachment, beat the cream cheese and sugar until blended. Add the eggs, one at a time, beating until just incorporated. Add the melted chocolate, along with the heavy cream, cocoa powder, and the vanilla and peppermint extracts and beat, scraping down the bowl and paddle as necessary, until smooth and streak-free.
  • 5. Pour the filling into the prepared crust, smooth the top, and bake until the center is just set, about 1 hour. Transfer to a rack to let cool for 20 minutes. Press down gently on the puffed edges to flatten then run a small sharp knife around the top edge of the pan to loosen the cake. Do not remove the pan sides.
  • 6. Let cool completely then cover with a double layer of plastic wrap and chill overnight. Bring to room temperature before serving, if desired.
  • 7. DO AHEAD: The cheesecake can be baked ahead, cooled, wrapped in a double layer of plastic wrap, and refrigerated for up to 3 days.

These are good, but not really the same as Thin Mints, but in a pinch they work. Thought this was an interesting recipe on its own.

1 lb chocolate-flavored candy coating (I use Plymouth Pantry that I buy at Wal-Mart or Wilton Candy Melts)
1 tablespoon vegetable shortening (I use Crisco)
3 drops peppermint oil (I use Lorann Oils that I buyat Wal-Mart)
65 Ritz crackers

Steps:

  • Melt chocolate coating.
  • I melt mine in a large bowl in the microwave.
  • Stir in the peppermint oil and the shortening.
  • Dip Ritz crackers in chocolate cover completely.
  • Place coated crackerers on waxed paper and let sit until chocolate is hard.
  • Store in air tight container.

Easy Girl Scout Thin Mints image

These were the hit of my cookie exchange this year. So many people asked me for the recipe that the Wal-mart shelf was emptied of the Andes bits. There is a basic recipe on Zaar but I added the morsels to make the color more like the original cookies. Bet you can't eat just one! I made 5 dozen cookies in 45 minutes, including clean-up time.

1 (12 ounce) package mint chocolate chips
4 ounces semisweet chocolate morsels
60 Ritz crackers
colored sprinkles (optional)

Steps:

  • Melt mints and morsels in microwave or double boiler.
  • Dip Ritz crackers in chocolate mixture ( I use my little ice tongs to make it easy).
  • Place on wax paper lined cookie sheet.
  • If you want to decorate cookies with sprinkles, you have to do it before the chocolate dries -- after every 3 or 4 cookies.
  • When sheet is full, refrigerate for 15 minutes.
  • Peel cookies from wax paper (can be used again for next batch).
  • Store in tightly sealed container in the refrigerator. They go fast. I've kept them as long as a week if they were well hidden.
  • The computer wouldn't let me put it in the list of ingredients, but I use Andes Mint Bits found in the baking aisle.

  • CRUST: In a food processor or blender, pulse the entire package of thin mint cookies until they are fine crumbs. Melt the butter and let stand until slightly cooled (don't add hot butter to the cookie crumbs). Add to the cookie crumbs and stir until combined. Press the mixture into the bottom of the prepared spring form pan and slightly up the sides. Press firmly down with the back of a metal 1 cup measuring cup.
  • FILLING: In a large bowl add the room temperature cream cheese. Using a hand mixer, blend the cream cheese for about 3-4 minutes or until completely smooth and creamy. Slowly add in the sweetened condensed milk and continue to mix with the hand mixer for another 2-3 minutes. Use a spatula to scrape down the sides while mixing.
  • FILLING CONT.: Mix in the peppermint extract and food coloring. Add as much food coloring as you want until you reach the desired color. With the spatula, fold in the Cool Whip until it is completely incorporated. Be careful to not over-mix the whipped topping. Pour mixture into crust and smooth the top with a spatula.
