Gingered Winter Fruit Ambrosia image

The lime, honey and ginger marinade is perfect for this grapefruit, pear and grape salad. The chia seeds not only contribute to the nutritional value of the dish; they also act as a natural thickener for the marinade.

1/4 cup fresh lime juice
2 tablespoons mild honey or agave nectar
2 teaspoons finely minced or grated fresh ginger
2 pink grapefruit
2 ripe but firm pears
1/2 pound red grapes, cut in half
6 dates, pitted and halved or quartered
Seeds from 1 small pomegranate
1 tablespoon chia seeds (more to taste)
2 to 3 tablespoons finely grated coconut (to taste)

Steps:

  • Whisk together the lime juice, honey or agave nectar and ginger in a small bowl.
  • Cut away the peel and white pith from the grapefruit. The easiest way to do this is to cut the ends off, then stand on one end and cut away strips of skin and pith at the same time. Hold the grapefruit over your serving bowl and cut the sections away from the membranes that separate them. Place in the bowl.
  • Peel, core and dice the pears. Add to the grapefruit. Add the grapes, dates, pomegranate seeds and chia seeds. Stir the lime-ginger marinade and toss with the fruit. Chill for 30 minutes or longer and toss again.
  • Sprinkle the coconut over the top and serve.

Steps:

  • Drain the liquid from all the cans of fruit. Thin the sour cream with whichever fruit juice you would like. Mix all the ingredients together with the thin sour cream.

2/3 cup sweetened flaked coconut
1/4 cup fresh mint leaves, cut into strips

fresh mint sprig (to garnish)

Steps:

  • Peel and section oranges over a bowl, reserving juice. Combine orange sections, juice and remaining ingredients; gently toss. Cover and chill until ready to serve. Garnish, if desired.

2 cups fresh pineapple, diced in large chunks
2 oranges, peeled,sectioned and cut
1 -2 banana, sliced
2 peaches or 2 nectarines, peeled and sliced
fresh strawberries, as many as you like
3 -4 pieces candied ginger, very thinly sliced
1/2 cup coarsely grated coconut
1/4 cup honey
1/4 cup cognac or 1/4 cup fruit-flavored liqueur
1/4 cup lemon juice

Steps:

  • Peel the fruit, cut it up, and toss very lightly in a bowl, together with the ginger and coconut.
  • Cover and put aside to chill.
  • Mix a dressing of equal parts of honey, brandy or liqueur, and lemon juice.
  • Then, if it is either too sweet or too tart for your taste, add slightly more lemon juice or honey.
  • Just before serving, toss again with the dressing.

1 cup granulated sugar
3-inch piece of ginger, peeled and sliced
2 kiwis, peeled and cut into wedges
1 orange, segmented
1 cup blackberries
2 plums, cut into wedges
1 cup pineapple, 1/2-inch diced
2 nectarines, cut into wedges
1 cup sweetened coconut, plus more for garnishing
2 cups heavy cream
2 tablespoons confectioners' sugar
3 tablespoons amaretto

Steps:

  • Make ginger syrup: In a heavy-bottomed saucepan over medium-high heat, combine sugar, ginger, and 1 cup water. Bring to a boil, and lower heat to medium. Cook for 20 minutes; set aside to cool.
  • In a medium bowl, mix together kiwis, orange, blackberries, plums, pineapple, nectarines, and coconut. Drizzle about 1 cup ginger syrup over the fruit mixture. Using a rubber spatula, gently stir the fruit.
  • Place heavy cream and confectioners' sugar in a large bowl. Using a wire whisk, whip cream to form soft peaks. Fold in amaretto.
  • Spoon 2 tablespoons whipped cream into each of six glasses, then some fruit; continue until the glasses are topped with 1/4 cup cream. Sprinkle with coconut, and serve immediately.
