Modified from a recipe found in Family Cirlce Magazine, October 2009. My version uses tilapia vs. cod and eliminates unnecessary butter.

2 tilapia fillets, 4-5 oz each
1 (1 g) packet artificial sweetener (Splenda)
1 tablespoon chopped fresh ginger
2 tablespoons balsamic vinegar
2 tablespoons low sodium soy sauce
salt and pepper
3 medium carrots, peeled and cut 1/2 inch thick slices
1 small red bell pepper, cut into 1 inch pieces

Steps:

  • Heat oven to 400 degrees F. Coat a baking dish with nonstick cooking spray. Place fish in dish, lightly salt and pepper.
  • Steam carrots and bell pepper until just starting to tender. Spread over and around fish.
  • In a small bowl, combine sweetener, ginger, vinegar, soy sace, and a few shakes of salt and pepper. Cover with plastic wrap and microwave on high for 1 minute.
  • Spoon sauce over the fish and vegetables. Bake 15 minutes or so, until fish flakes easily with a fork.

Puree this creamy recipe for Ginger Carrot Soup from Food Network with cream and freshly grated ginger.

2 tablespoons sweet cream butter
2 onions, peeled and chopped
6 cups chicken broth
2 pounds carrots, peeled and sliced
2 tablespoons grated fresh ginger
1 cup whipping cream
Salt and white pepper
Sour cream
Parsley sprigs, for garnish

Steps:

  • In a 6-quart pan, over medium high heat, add butter and onions and cook, stirring often, until onions are limp. Add broth, carrots, and ginger. Cover and bring to a boil. Reduce heat and simmer until carrots are tender when pierced.
  • Remove from heat and transfer to a blender. Don't fill the blender more than half way, do it in batches if you have to. Cover the blender and then hold a kitchen towel over the top of the blender*. Be careful when blending hot liquids as the mixture can spurt out of the blender. Pulse the blender to start it and then puree until smooth. Return to the pan and add cream, stir over high heat until hot. For a smoother flavor bring soup to a boil, add salt and pepper, to taste.
  • Ladle into bowls and garnish with dollop sour cream and parsley sprigs.

When carrots are cooked, it's often a sad affair. They are boiled to death and presented almost as an apology. Yet when they're treated with the respect they deserve, even ordinary supermarket carrots can be among the most reliable and enjoyable of vegetables, especially from fall through spring. This braise-and-glaze technique can be varied at will and can also be used with other roots, like beets, turnips and radishes. Once you have the hang of the technique, changing the flavorings is a snap. Try substituting a mixture of half balsamic vinegar, half water or soy sauce similarly diluted for the orange juice, adding a few cloves of peeled garlic with the carrots. Or add a half cup or so of chopped onions, shallots, scallions or leeks, or of chopped pitted dates or raisins, dried currants or even dried tomatoes.

1 pound carrots, trimmed and peeled if necessary, cut into 1/4-inch coins or sticks
2 tablespoons butter or extra virgin olive oil
Salt and freshly ground black pepper
1 tablespoon minced or grated peeled fresh ginger
1/3 cup freshly squeezed orange juice
1 teaspoon freshly squeezed lemon juice
Chopped fresh parsley, dill, mint, basil or chervil leaves for garnish (optional)

Steps:

  • Combine all ingredients except lemon juice and garnish in a saucepan no more than 6 inches across. Bring mixture to a boil, stirring to coat, then adjust heat so mixture simmers. Cover.
  • Cook, more or less undisturbed, until carrots are tender and liquid is almost gone, 10 to 20 minutes. Uncover and boil off remaining liquid, then add lemon juice. Taste and adjust seasoning if necessary. Serve hot or within an hour or two, garnished with herbs, if you like.

1 tablespoon melted butter
1 tablespoon olive oil
1 garlic clove, minced
2 green onions, sliced
1/4 cup fresh cilantro, chopped
1 cup heavy cream
1 tablespoon lime juice
salt
pepper

Steps:

  • Heat oven to 375°.
  • Sauce: Heat oil in a small saucepan over medium heat; sauté the garlic and onion for 1 to 2 minutes. Add cream and bring to a simmer. Simmer for about 3 to 4 minutes to reduce slightly. Stir in cilantro, lime juice, and salt and pepper to taste. Simmer for about 1 minute longer. Set aside or refrigerate until nearly serving time.
  • Fish: Line a baking pan with foil; spray with nonstick cooking spray. Brush fillets lightly with butter; arrange in the baking pan. Sprinkle lightly with salt and pepper. Bake the fish for 20 to 25 minutes, or until the tilapia is cooked through.
  • Warm the sauce up and drizzle a little over each serving of fish.

2 teaspoons canola oil

2 carrots, thinly sliced
1 red pepper, thinly sliced

Steps:

  • Place tilapia and vinegar in medium bowl and toss to coat. Set aside.

2/3 cup coarsely grated peeled gingerroot
2 tablespoons soy sauce (low sodium works well)
2 tablespoons dry sherry
2 tablespoons lemon juice
2 teaspoons Splenda granular or 2 teaspoons sugar
4 (6 ounce) flounder fillets or 4 (6 ounce) sole fillets
vegetable oil cooking spray
1 teaspoon sesame oil
1 scallion, green part sliced (optional)

Steps:

  • Using a damp cheesecloth or your hand, squeeze grated ginger over a small bowl gathering the ginger juice.
  • Combine 2 tablespoons ginger juice, soy sauce, sherry, lemon juice, and sugar or sugar substitute in a large food storage bag or bowl; add fish, turning or gently shaking to coat.
