GINGER PORK AND EGGPLANT STIR-FRY

1 pound pork tenderloin, trimmed and sliced 1/8 inch thick
1/4 cup vegetable oil
1 tablespoon cornstarch
Kosher salt and freshly ground pepper
2 tablespoons soy sauce
2 tablespoons hoisin sauce
2 teaspoons packed light brown sugar
2 teaspoons rice vinegar
8 ounces dried lo mein noodles
2 Chinese eggplants, quartered lengthwise and sliced crosswise
1 red bell pepper, cut into 1-inch pieces
4 teaspoons finely chopped fresh ginger

Steps:

  • Bring a large pot of water to a boil. Toss the pork, 1 tablespoon vegetable oil, 1 teaspoon cornstarch, 1/2 teaspoon salt and a few grinds of pepper in a medium bowl. Whisk 3/4 cup water, the soy sauce, hoisin sauce, brown sugar, vinegar, 1/4 teaspoon salt and the remaining 2 teaspoons cornstarch in a measuring cup; set aside.
  • Add the noodles to the boiling water and cook as the label directs. Drain; keep the noodles in the colander. Meanwhile, heat 1 tablespoon vegetable oil in a large nonstick skillet over medium-high heat. Add the eggplant in a single layer and season with salt. Cook until browned and starting to soften, about 3 minutes per side. Remove to a bowl.
  • Increase the heat to high and add 1 tablespoon vegetable oil to the skillet. Add the pork in a single layer; cook, undisturbed, until browned on the bottom and only a little pink remains, 2 to 3 minutes (the pork will not be cooked through). Remove to a plate.
  • Add the remaining 1 tablespoon vegetable oil to the skillet. Add the bell pepper, ginger, eggplant and a pinch of salt. Cook, stirring, until the bell pepper starts softening, about 2 minutes. Add the soy-hoisin mixture and bring to a simmer. Return the pork to the skillet and cook through, about 30 seconds.
  • Run the noodles under warm water to loosen and shake well to drain. Divide among bowls and top with the stir-fry.

1 tablespoon peanut oil
2 tablespoons shredded gingerroot
1 teaspoon cracked black pepper
6 kaffir lime leaves, shredded
2 garlic cloves, sliced
600 g pork fillets, trimmed and sliced
3 tablespoons lime juice
2 tablespoons brown sugar
3 tablespoons sweet chili sauce
6 quatered bok choy, steamed

Steps:

  • Heat the oil in a frying pan or wok over medium high heat.
  • Add the ginger, pepper, lime leaves and garlic and cook for 1 minute.
  • Add the pork and stir-fry for 5 minutes or until well browned.
  • Add the lime juice, brown sugar and sweet chilli sauce to the pan and stir-fry for a further 3 minutes or until the sauce thickens slightly.

2 tablespoons sweet chili sauce
2 teaspoons cornstarch
low-fat cooking spray

2 garlic cloves, crushed
1 carrot, sliced into fine strips
1 red onion, thinly sliced

Steps:

1 tbsp sunflower oil

6 tablespoons soy sauce
2 teaspoons oil
4 garlic cloves
1 piece ginger
700 g pork
1 tablespoon oil
440 g stir fry vegetables
400 g pak choi
4 tablespoons oyster sauce
400 g noodles

Steps:

  • To make the marinade, put the soy sauce, sesame oil, garlic and ginger, along with a little seasoning, into a large bowl. Trim the fat from the pork loin steaks and cut into strips. Add the pork to the marinade, stir well, cover with clingfilm and leave to marinate for at least 10 minutes.
  • Heat a large wok until hot then add the vegetable oil and the marinated pork and stir-fry for a couple of minutes until nicely browned. Tip into a bowl and set aside.
  • Finely chop the chilli and spring onions (from the stir-fry vegetable pack) and fry for 1-2 minutes. Add the baby corn and broccoli and a splash of water and fry for 2-3 minutes. Then add the rest of the vegetables and the oyster sauce and fry for another 2-3 minutes. Add a little water to make it a little more saucy. Stir in the cooked pork and cooking juices, heat through for 1 minute, then remove from the heat.
  • Cook the noodles in a pan of boiling salted water for about 4 minutes until tender but still retaining a slight bite, then drain and immediately toss with a little sesame oil. Divide equally among serving bowls, then spoon over the pork, vegetables and serve at once.
