2 tablespoons lime juice
1 tablespoon fish sauce or soy sauce
1 teaspoon sesame oil
2 tablespoons creamy peanut butter
1 tablespoon honey
3/4 teaspoon ground ginger
1/2 teaspoon salt
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon garlic powder
1 pound fresh green beans, trimmed and halved
2 red jalapeno peppers, seeded and thinly sliced
2 radishes, julienned
1/4 cup chopped salted peanuts

Steps:

  • For vinaigrette, in a small bowl, whisk the first 10 ingredients until blended., In a large saucepan, bring 6 cups water to a boil. Add green beans in batches; cook, uncovered, 3-4 minutes or just until crisp-tender. Drain beans and immediately drop into ice water. Drain and pat dry. , Transfer beans to a large bowl. Add jalapenos and radishes. Drizzle with vinaigrette; toss to coat. Top with peanuts.

2 pounds fresh green beans, trimmed
1 cup thinly sliced red onion, separated into rings
1 cup canned bean sprouts, rinsed and drained
VINAIGRETTE:
1/4 cup rice vinegar
2 tablespoons sesame oil
1 tablespoon minced fresh gingerroot
1 tablespoon reduced-sodium soy sauce
2 teaspoons sesame seeds, toasted
1 teaspoon honey
1/2 teaspoon minced garlic

Steps:

  • Place green beans in a large saucepan and cover with water. Bring to a boil. Cook, uncovered, for 4-7 minutes or until crisp-tender. Drain and immediately place in ice water; drain and pat dry. , In a large salad bowl, combine the beans, onion and bean sprouts. In a small bowl, whisk the vinaigrette ingredients. Pour over bean mixture and toss to coat.

1 pound fresh green beans, trimmed
1 tablespoon reduced-sodium soy sauce
2 teaspoons canola oil
1 teaspoon sugar
1 teaspoon cider vinegar
1 teaspoon sesame oil
1/4 teaspoon salt
2 teaspoons sesame seeds, toasted

Steps:

  • Place beans in a large saucepan and cover with water. Bring to a boil. Cook, uncovered, for 8-10 minutes or until crisp-tender. Drain and rinse in cold water; pat dry. Place in a serving bowl., In a small bowl, whisk the soy sauce, canola oil, sugar, vinegar, sesame oil and salt. Pour over beans and toss to coat. Sprinkle with sesame seeds; toss again. Here is a recipe for fresh green beans, boiled just until barely tender and bright green, then tossed in a pan with minced garlic and ginger. The beans can be cooked a day ahead, leaving nothing more to do before the meal than to assemble everything over high heat.

2 1/2 pounds green beans (French-style slim haricots verts work especially well), trimmed
4 tablespoons vegetable oil
1/4 cup minced fresh ginger (about 6 inches ginger root, peeled)
4 medium-size garlic cloves, minced

Steps:

  • Bring a large pot of salted water to a boil, and fill a large bowl with ice water. Working in two batches, boil beans until just tender but still crisp and bright green. Start testing after 4 minutes or so, being careful not to overcook. When done, plunge beans into ice water to stop cooking, lift out immediately when cool and drain on towels. (Recipe can be made to this point up to a day in advance and kept refrigerated, wrapped in towels.)
  • When ready to cook, heat 2 tablespoons oil in a wide skillet over high heat. Add half the beans, half the ginger and half the garlic, and cook, stirring and tossing constantly, until beans are heated through and ginger and garlic are softened and aromatic. Sprinkle with salt, and remove to a serving dish. Repeat with remaining oil, beans, ginger and garlic. Serve.

2 teaspoons sesame seeds
2 tablespoons vegetable oil
2 garlic cloves, finely chopped
2 tablespoons fresh ginger, peeled and finely chopped
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
2 lbs green beans, trimmed
2/3 cup vegetable stock or 2/3 cup chicken stock

Steps:

  • In a thick bottom frying pan, grill the sasame seeds at medium heat, shaking it from time to time, for 3 minutes or until they're golden. Set aside.
  • In a non-stick frying pan with cover, heat the oil at medium heat. Add garlic, ginger, salt and pepper and cook for about 30 seconds or until garlic and ginger begins exit their aroma. Add green beans and cook, stirring, for 2 minutes. Add vegetable stock, cover and cook 6 minutes. Remove the cover and keep on cooking for about 2 minutes or until the liquid is evaporated and green beans are tender but still crisp. Sprinkle with sesame seeds.

1 tablespoon canola oil
1 teaspoon soy sauce
1 teaspoon freshly grated gingerroot (FRESH only!) or 1 teaspoon freshly grated galangal (FRESH only!)
1 garlic clove, finely minced
3/4 cup walnut halves
1 lb green beans, rinsed and trimmed
2 teaspoons fresh lime juice or 2 teaspoons fresh lemon juice
1 tablespoon olive oil
cilantro leaf (optional)

Steps:

  • Preheat oven to 250 degrees.
  • On a baking sheet spread the canola oil and heat up in the oven. Once the pan is hot, remove from oven and add the soy sauce, fresh ginger, garlic and walnut halves. Stir to coat.
  • Bake, stirring occasionally, for about 25 minutes, or until walnuts are browned and crisp.
  • Remove the pan from the oven and set the nuts on a paper towel to drain and cool.
  • In a medium saucepan, steam the green beans for approximately 5 minutes, or until crisp-tender. Drain and toss the beans with the toasted walnuts, lime juice and olive oil in a serving bowl.

1 garlic clove, smashed

Steps:

  • Bring a large pot of water to a rolling boil. Prepare a large bowl of ice water (I do this right in my sink.) Have a large strainer ready to drain the beans.
  • While water is heating, prepare sauce (glaze) by combining oil, ginger, honey, soy sauce, sesame oil and Sriracha in a small bowl.
  • Add beans to boiling water and cook for 4 minutes, stirring occasionally (if your beans are really small and thin, only cook for 3½ minutes). Drain well and immediately plunge into the bowl of ice water (this will stop the cooking process) then drain again and allow to sit for 5 minutes. Shake strainer occasionally to remove as much water as possible.
  • Spread drained beans out on several thicknesses of paper toweling or a clean kitchen towel and pat to dry as much as possible. At this point, beans can be wrapped in dry paper towels, placed in a ziplock bag and refrigerated till just before serving.
