Paleo Almond Flour Banana Muffins image

Almond Flour Banana Muffins is easy, low carb, paleo and gluten free banana muffin recipe with no added sugar, melt in your mouth texture and perfect for healthy breakfast.

3 ripe bananas (brown spots, large)
3 eggs (large)
1 tsp pure vanilla extract
1 tsp cinnamon
1 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
3 cups almond flour
1/4 cup dark chocolate chips
Cooking spray (I use Misto)

Steps:

  • Preheat oven to 350 degrees F and spray silicone muffin tin with cooking spray. Set aside.
  • In a powerful blender or food processor, add bananas, eggs, vanilla, cinnamon, baking soda + powder, salt and process until smooth.
  • Add almond flour and process just enough to combine. Pause, scrape the walls and process just a bit again to combine. Add chocolate chips and stir with a spatula.
  • Using an ice cream scoop, divide batter between 12 openings of previously prepared muffin tin and bake for 30 minutes, or until golden brown and toothpick inserted come out clean.
  • Remove from the oven, let cool 20 minutes and enjoy.

3 c blanched almond flour(i use almond meal from trader joes and they turn out great!)
1 tsp baking soda
1/2 tsp sea salt
1/2 tsp baking powder
3 eggs
2-3 very ripe bananas, mashed
1/2 c honey(or maple syrup, agave, or xylitol)
1/4 c melted coconut oil(or melted butter)***
1 tsp vanilla extract
1/4 c chopped nuts

Steps:

  • 1. Preheat oven to 350F. Grease a 12 muffin tin. Mix dry ingredients in a large bowl. Mix wet ingredients in a med. bowl in order listed. Add wet mixture to dry mixture. Stir just to combine. Fill muffin cups. Sprinkle with chopped nuts. Bake about 20 min. (tops will be set and spring back when lightly touched)
  • 2. ***the last time I made these, I accidentally omitted the oil and they still turned out great!

1 tablespoon apple cider vinegar
3 bananas, mashed
¼ cup coconut oil, melted
¼ cup honey
1 teaspoon vanilla extract
3 cups almond flour
1 teaspoon ground cinnamon
¾ teaspoon baking powder
½ teaspoon ground nutmeg
½ teaspoon salt

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Prepare a bread pan with cooking spray.
  • Mix eggs and vinegar together in a bowl; add bananas, coconut oil, honey, and vanilla extract and stir until blended.
  • Sift flour, cinnamon, baking powder, nutmeg and salt together in a large bowl; stir into banana mixture until well blended. Pour batter into prepared bread pan.
  • Bake in the preheated oven until a knife inserted into the center comes out clean, about 1 hour. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

1 1/3 cups whole wheat flour (or sub flour of your choice)
1/2 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup oat bran
1/2 cup chopped walnuts
2 ripe bananas
1/3 cup canola oil (or any light oil)
1 teaspoon vanilla extract
2/3 cup almond milk (any vegan milk will do)

Steps:

  • Preheat oven to 375 degrees F/190 degrees Celsius In a large bowl mix together the first 7 ingredients.
  • In a smaller bowl, mash up the bananas quite well then add in the oil, vanilla and milk.
  • Combine the banana mixture with the flour mixture and blend until "just" mixed.
  • Spoon into a lightly oiled muffin tin and bake for 15-20 minutes.
