SMALL CROCK POT CHICKEN STEW
This dump-and-go crock pot chicken stew recipe has tender chicken, potatoes, and veggies in a seasoned chicken broth. It is both healthy and delicious. This smaller recipe is ideal for a small household or is quickly doubled to full size.

Steps:
- Prepare veggies. Chop 1 medium onion, 2 peeled carrots, and 1 rib of celery. Next, 2 medium potatoes are peeled and cut into 3/4 to 1-inch cubes. Optional - 4 oz. mushrooms cleaned and halved.
- Clean, trim, and cube 2 skinless boneless chicken breasts-about 1 to 1 1/2 pounds.
- Add the chicken, prepared veggies, 1/2 cup frozen corn, 14 oz of chicken broth, 1/2 teaspoon celery seed, 1/4 to 1/2 teaspoon thyme(optional), 1/2 teaspoon salt, 1/4 teaspoon pepper, and optionally on 1/2 cup of diced tomatoes to a 3 1/2 to 4 quarts crock pot.
- Cook on low for 8 hours or high for 4 hours. Add peas 30 minutes before the end of cooking. Also, 1 tablespoon tapioca if you want thicker stew.

CROCK POT CHICKEN STEW

- Place onions, celery, carrots, potatoes, garlic, bay leaf, 1 teaspoon salt, thyme, rosemary, paprika, and poultry seasoning in the bottom of a large slow cooker. Stir to combine.
- Season the chicken with salt and pepper, to taste. Place the chicken on top of vegetables.
- Pour chicken broth over everything, cover, and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
- When there are about 30 minutes left in the cooking time, remove the chicken from the slow cooker and chop or shred the meat. Return chicken meat to the slow cooker and discard bones. Discard bay leaf and herb stems (if using fresh herbs).
- In a small bowl, whisk together cornstarch and cold water until smooth. Stir the cornstarch slurry into the stew and cook on HIGH without the lid for 30 minutes (or until broth thickens a little bit). Taste and season with additional salt and pepper, if desired.
- Garnish with chopped fresh parsley, just before serving.

CROCK POT CHICKEN STEW
Steps:
- Throw everything in the crock pot except the corn starch and parsley.
- Cook on low for 6-8 hours until chicken is falling apart.
- Shred the chicken. Meanwhile, stir together the corn starch and water in a cup. Stir into the crock pot. And stir in the chicken.
- Cook for another 30 minutes and serve with fresh parsley on top.

GINGERED CHICKEN STEW (CROCK POT)
This is a modified version of a recipe I found on about.com. The spices are warming but not hot and the allspice really does work nicely with the ginger. I really like pineapple so Core plus 1 point per recipe for the cornstarch

- In 3-5 quart crockpot, combine chicken, carrots, ginger, water (or broth), allspice, and pepper. Cover crock pot and cook on low for 7-8 or high for 3-4 hours until chicken is cooked.
- In small bowl, combine reserved pineapple juice and cornstarch and mix until smooth. Add to crockpot, stirring constantly.
- Add pineapple chunks, water chestnuts and bell pepper to crock pot. Cover and cook on high for 20-25 minutes until mixture is thickened.

GINGERY CHICKEN STEW
Just 1 1/2 pounds of chicken to serve four people? Yes, because the emphasis is on the winter squash and daikon radish in this stew; unexpected, but substantial. It may seem downright semivegetarian, but the variety of flavors more than makes up for it.

- Put the oil in a large pot over medium-high heat. When it's hot, add the chicken, sprinkle with the salt and pepper, and cook, turning the pieces as they release easily from the pan, until they're well browned on both sides, 8 to 12 minutes. Remove the chicken from the pot.
- Add the onion, daikon and ginger to the pot and cook until they begin to soften, 3 to 5 minutes. Add the stock, soy sauce, lime juice and star anise and bring to a boil, stirring to scrape up any brown bits from the bottom of the pot. Return the chicken and adjust the heat so the mixture bubbles gently but steadily.
- Cook the chicken, covered, until very tender, about 30 minutes. Stir in the squash. Simmer, stirring occasionally and adding enough stock to keep it from sticking, until the squash is tender but not mushy, 10 to 15 minutes. If you like, remove the chicken thighs, cut the meat from the bones and return it to the pot. Fish out and discard the star anise. Adjust the seasonings to taste and serve.

EASY CROCK POT CHICKEN STEW

- In a 5- to 6-quart slow cooker, stir together soy sauce, sugar, garlic, cilantro, ginger, 1/2 cup scallions, vinegar, coriander, and pepper. Add chicken and carrots; toss to coat. Cover, and cook on low until chicken is tender, about 6 hours. Using a large spoon, skim off and discard any fat from surface of cooking liquid.
- In a 2-cup glass measuring cup, whisk cornstarch with 1 tablespoon water. Ladle 1 cup cooking liquid into measuring cup; whisk to combine. Pour into a small saucepan, and bring to a boil; cook until thickened, about 1 minute. With slow cooker turned off, stir in cornstarch mixture. Serve chicken with white rice, and garnish with cilantro sprigs and remaining 1/2 cup scallions.
- Preheat oven to 350 degrees. Follow step 1 (above), using a 5-quart Dutch oven or heavy pot with a tight-fitting lid instead of the slow cooker. Add 1 cup water, and cover. Transfer to oven; cook until chicken is tender, about 1 1/2 hours. Proceed to step 2 (above).
CROCK POT GINGER CHICKEN
This is a really great recipe, simple and delicious! It can make more than 4 servings depending on how many pieces you can put in.
