BLUE CHEESE PINWHEELS

Steps:
- Preheat the oven to 400 degrees.
- Butter an 8 or 9 inch baking dish.
- Open the sheet of puff pastry and flatten with a rolling pin.
- Crumble the blue cheese on the sheet, leaving a 1 inch border all around.
- Roll up the pastry the long way.
- Cut into 12-14, 1/2 inch thick slices.
- Place the rounds in the baking dish.
- Brush with egg wash.
- Bake until puffed up and golden brown, 10-12 minutes.

- For the base spread and tortillas: Mix together the cream cheese and pesto until well combined. Lay out the spinach, whole wheat and jalapeno-Cheddar tortillas and divide the cream cheese mixture among them. Using a spoon or offset spatula, spread the mixture all the way to the edges of each tortilla.
- For the veggie pinwheels: Evenly distribute the spinach over the top of the base spread on the spinach tortillas. Arrange the artichokes, green olives and sun-dried tomatoes over the spinach. Roll up the tortillas tightly and individually wrap in plastic. Set aside.
- For the meaty pinwheels: Shingle the cheese, pepperoni, salami and capicola onto the base spread on the whole wheat tortillas, slightly favoring one side. Roll up the tortillas tightly and individually wrap in plastic. Set aside.
- For the spicy pinwheels: Divide the pepper jack between the jalapeno-Cheddar tortillas topped with the base spread. Divide the arugula, sliced peppers and chopped cherry peppers between the tortillas. Roll up the tortillas tightly and individually wrap in plastic. Refrigerate the rolled tortillas for at least 2 hours and up to 12 hours.
- Unwrap and slice each tortilla into 1-inch segments/pinwheels. Arrange on a platter and serve.
BLUEBERRY GINGERBREAD PANCAKES

- Preheat oven to 200°F. Sift first 6 ingredients into medium bowl twice. Whisk molasses, buttermilk, eggs and 3 tablespoons oil in large bowl to blend. Add dry ingredients and whisk mixture just until smooth. Fold into blueberries.
- Heat large nonstick skillet over medium-low heat. Brush skillet generously with additional oil. Working in batches, drop 3 tablespoons batter for each pancake into skillet. Using back of spoon, spread each pancake to 3-inch round. Cook until bottoms are light golden brown, about 1 1/2 minutes. Turn pancakes over and cook until just cooked through, about 1 1/2 minutes. Transfer pancakes to baking sheet; keep warm in oven up to 20 minutes. Brush skillet with additional oil for each batch.
BLUEBERRY GINGERBREAD
Great tasting and a definite twist for gingerbread! Not overpowering. When storing, do not cover tightly, the top will become very moist instead of nice and crunchy. Serve plain or with a generous dollop of whipped cream.

- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour an 11x7 inch baking dish.
- In a large bowl, mix together the oil, 1 cup sugar and molasses until well blended. Beat in the egg. In a separate bowl, stir together the flour, cinnamon, nutmeg, ginger, baking soda and salt. Remove 2 tablespoons of the flour mixture, and toss with blueberries to coat. Stir the remaining dry mixture into the wet ingredients alternately with the buttermilk, mixing after each addition. Carefully stir in blueberries. Pour the batter into the prepared pan, and sprinkle remaining white sugar over the top.
- Bake for 35 to 40 minutes in the preheated oven, until a toothpick inserted into the center comes out clean.

- Separate crescent dough into four rectangles; seal perforations.
- Spread cream cheese over each rectangle to within 1/4 inch of edges.

An easy appetizer that even the guys love. I like to use my own black bean dip, but purchased dip works fine. The jalapeno-flavored cheese dip can be used instead of regular nacho dip. You do want a thicker (but still spreadable) cheese dip...the sauces don't hold up for these roll-ups.

- Spread each tortilla with about 2 tablespoons bean dip and 2 tablespoons cheese dip.
- Sprinkle with onions.
- Tightly roll up tortillas and wrap individually in plastic wrap.
- Refrigerate at least 1 hour, but no longer than 24 hours.
- (Storing the roll-ups too long results in soggy tortillas.).
- To serve, cut off ends from each roll and discard.

- In a bowl combine flour, baking powder, salt, herbs and chili powder.
- In another bowl combine milk and 2 tbs of oil. Add to the dry ingredients and mix into a dough. If it is too dry add the 3rd tbs of oil.
- Turn out onto a lightly floured surface and knead into a soft dough.
- Either pat it down into a rectangle or roll it out. It should be about 1 cm/0.5 inches thick.
- Spread with the cheese and roll up starting on the longer end.
- Slice into 10 slices and place on a paper-lined baking sheet. Pat down gently.
- Bake in the preheated oven at 200°C/400°F for about 15 minutes.

- In a large bowl, cream the butter, cream cheese and sugar until light and fluffy. Gradually beat in flour and mix well. Cover and refrigerate for 1 hour. , In a large saucepan, bring 1/2 cup cranberries, sugar and water to a boil over medium heat. Reduce heat; simmer, uncovered, for 5-6 minutes or until berries pop. Remove from the heat; stir in marmalade and ginger. Set aside., Divide dough in half. On a floured surface, roll each portion into a 16 x12-in. rectangle. Let stand for 20 minutes.
