FRESH APPLE SPICE CAKE

1 cup chopped pecans
1/2 cup dark rum, such as Mount Gay
1 cup golden raisins
1 cup granulated sugar
1 cup dark brown sugar, lightly packed
3 extra-large eggs, at room temperature
3/4 cup vegetable oil
2 teaspoons pure vanilla extract
2 teaspoons grated orange zest (2 oranges)
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/8 teaspoon ground cloves
1 1/2 pounds Granny Smith apples, peeled, cored, and 1/4-inch-diced (3 to 4 apples)
Vanilla ice cream, such as Haagen-Dazs
Caramel sauce, such as Fran's, heated

Steps:

  • Preheat the oven to 350 degrees F. Grease and flour a 9-by-13-by-2-inch baking pan.
  • Place the pecans on a sheet pan and toast them for 5 to 10 minutes, until lightly toasted. Set aside. Combine the rum and raisins in a small bowl, cover with plastic wrap, and microwave for 60 seconds. Set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the granulated sugar, brown sugar, eggs, vegetable oil, vanilla, and orange zest on medium speed for 3 minutes. Sift the flour, baking powder, salt, cinnamon, nutmeg, ginger, and cloves into a medium bowl. With the mixer on low, slowly add the flour mixture to the wet mixture, just until combined. Drain the raisins, discarding the liquid. With a rubber spatula, fold the raisins, pecans, and apples into the batter. Spread into the prepared pan and smooth the top.
  • Bake for 35 to 40 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool, cut into squares, and serve warm or at room temperature with a scoop of vanilla ice cream and a drizzle of warm caramel sauce.

8 tablespoons (1 stick) unsalted butter, melted
1 large egg, lightly beaten
3/4 cup sugar
1/2 cup dark molasses (not blackstrap)
1 cup hot water
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground ginger
1 teaspoon cinnamon
3 tablespoons unsalted butter
3 large apples, peeled, cored, and sliced 1/4-inch thick
3 tablespoons light brown sugar, packed

Steps:

  • Preheat the oven to 350 degrees F. Butter and lightly flour a 10-inch cake pan.
  • In a mixer fitted with a paddle attachment (or using a hand mixer), combine the melted butter, egg, and sugar. Add the molasses and water and mix. In another bowl, sift the flour, baking soda, salt, ginger, and cinnamon together. Working in batches, mixing after each addition, add the dry ingredients to the molasses mixture. Mix until smooth.
  • Pour into the prepared pan and bake in the center of the oven for about 35 minutes, until browned and the top of the cake feels dry and firm to the touch. Let cool in the pan for 10 minutes, then turn out onto a wire rack to completely cool.
  • For the topping: In a large skillet, melt 3 tablespoons of the butter over medium heat. Add the apple slices and cook, stirring, until tender, about 10 minutes. Add 3 tablespoons of the brown sugar and stir to combine. Cook a few more seconds to dissolve the brown sugar then pour it over the cake and serve.

This cake uses cake mix and canned pie filling and takes only minutes from counter to oven. So easy, and so tasty! Top with a dusting of powder sugar; sugar and cinnamon; or your favorite frosting. It's also wonderful served warm with a dollop of ice cream.

1 (18 1/4 ounce) box spice cake mix
2 eggs
1 (21 ounce) can apple pie filling
1 tablespoon vanilla extract

Steps:

  • Preheat oven to 350 degrees.
  • Grease bottom and sides of a 9 X 13 inch cake pan.
  • Dump spice cake mix into a large mixing bowl. Using a fork, work out any large lumps of mix.
  • Add eggs, pie filling, and vanilla extract. Stir together well.
  • Bake at 350 degrees for 32-36 minutes until cake top springs back when pressed down lightly.
  • Cool and top with your favorite topping if desired (I like to sprinkle it with a little cinnamon and sugar and serve with a dollop of whipped cream.).

1/4 teaspoon salt
2 large eggs, beaten
1/2 cup applesauce
1/4 cup vegetable oil
1 teaspoon vanilla
1 tablespoon molasses
2 tablespoons fresh ginger, peeled & diced finely
1 1/2 cups apples, quartered & thinly sliced (2 med)
1/2 cup walnuts, chopped

Steps:

  • Mix together flour, sugar, baking soda, salt, and set aside.
  • Beat eggs, then mix in apple sauce, oil, vanilla, molasses, ginger, apples & walnuts.
  • Add apple mixture to dry ingredients, mix until just moist.
  • Pour into a greased 9 x 9 baking pan and bake in a 350 degree oven for approximately 55 minutes, until a toothpick inserted in the center comes out clean.
  • Let cool slightly, slice & serve. If you want more sweet, you could drizzle a caramel glaze over the top, or spike by drizzling brandy over it.

1 (18 1/2 ounce) package spice cake mix
2/3 cup water
1 egg
1/4 teaspoon cinnamon
1/4 cup butter or 1/4 cup margarine, melted
1 teaspoon vanilla
2 cups apples, peeled and sliced
2 tablespoons butter or 2 tablespoons margarine

Steps:

  • Blend half a package (approximately 2 1/4 cups) cake mix, water, and egg in a mixing bowl.
  • Beat at medium speed until batter is smooth.
  • Pour half the batter into a greased 9" square pan.
  • Combine remaining cake mix with cinnamon; add melted butter (or margarine) and vanilla.
  • Toss with a fork to form large crumbs.
  • Sprinkle half of crumb mixture over batter in pan.
  • Arrange 1 cup of apple slices over crumb mixture.
  • Carefully spoon on remaining batter.
  • Arrange rest of apple slices over batter.
  • Dot with the butter and sprinkle with remaining crumb mixture.
  • Bake in 350 degree oven 40-45 minutes or until done.
  • Serve warm.
