GINGER & CARAMEL APPLE PUDDINGS

Steps:
- Heat oven to 180C/160C fan/gas 4. Lightly butter and flour 6 x 8cm deep ramekins, tapping out excess flour. Heat the butter in a pan until foaming, add the apple and cook for 1 min on a medium heat. Toss in the sugar and cook until dissolved. Divide between the ramekins.
- For the puddings, beat the butter and sugar together with an electric whisk until fully combined. In a separate bowl, mix together the egg, buttermilk, chopped ginger and ginger syrup, then stir this into the butter mixture. Fold in the flour, ground ginger, baking powder, bicarbonate of soda and a pinch of salt. Divide between the ramekins so they are filled to 1cm below the top. Place them on a baking tray and bake for 20 mins, until golden and risen.
- Serve warm, dusted with icing sugar. Accompany with cream or custard.

GINGER-SESAME CARAMEL APPLES
Steps:
- Put the yogurt chips in a microwave-safe bowl and heat in 30-second intervals, stirring between each, until melted. Combine the sesame seeds and ground ginger in a shallow dish. Dip each caramel apple in the melted yogurt mixture then roll in the sesame seeds. Let stand on parchment paper until set. If you like, place each caramel apple in a jumbo muffin liner and package in a clear gusseted treat bag. Tie with festive ribbon.

Sweet and crisp apple is a nice surprise in this Asian inspired salad. It goes well with the crunchy wontons, toasted almonds and the slight bite from the just-sweet-enough sesame ginger dressing.

- Cut the apple into thin matchsticks. Peel and segment the orange and cut each segment in half crosswise.
- Put the kale in a large bowl. Add most of the apple, orange, chow mein noodles and almonds. Pour in the Asian Style Sesame Ginger Dressing and toss to coat. Season with salt and pepper. Top the salad with the reserved apple, orange, chow mein noodles and almonds.
