2 tablespoons vegetable oil
1 5-pound beef chuck roast
Salt and pepper
2 cups beef stock or reduced sodium canned beef broth
1/2 cup red wine (optional)
3 onions, cut into large wedges
4 cloves garlic, chopped
2 dried bay leaves
1 teaspoon dried thyme
2 tablespoons tomato paste
2 pounds carrots, cut into 1 1/2-inch chunks
2 pounds potatoes, cut into 1 1/2-inch chunks

Steps:

  • Preheat oven to 350 degrees. In a Dutch oven, heat oil over medium-high heat. Sprinkle roast all over with 1 teaspoon salt and 1/2 teaspoon pepper. Place in pan, and brown on all sides, about 10 minutes.
  • Turn meat fat side up. Add stock, wine, if using, onions, garlic, bay leaves, and thyme. Stir in tomato paste. Bring to a simmer, cover; put in the oven, and roast for 3 hours. Add carrots and potatoes, and cook until vegetables are tender, about 1 hour more.
  • Transfer the roast, carrots, and potatoes to a platter. With a spoon, skim the fat off the surface of the cooking liquid. Cut the roast into thick slices, and serve with the vegetables. Pass the pan juices separately.

1kg silverside or topside of beef with no added fat
2 tbsp olive oil
8 young carrots, tops trimmed (but leave a little, if you like)
1 celery stick, finely chopped
200ml white wine
600ml rich beef stock
2 bay leaves
500g onion
a few thyme sprigs
1 tsp butter
1 tsp light brown or light muscovado sugar
2 tsp plain flour

Steps:

  • Heat oven to 160C/140C fan/gas 3. Rub the meat with 1 tsp of the oil and plenty of seasoning. Heat a large flameproof casserole dish and brown the meat all over for about 10 mins. Meanwhile, add 2 tsp oil to a frying pan and fry the carrots and celery for 10 mins until turning golden.
  • Lift the beef onto a plate, splash the wine into the hot casserole and boil for 2 mins. Pour in the stock, return the beef, then tuck in the carrots, celery and bay leaves, trying not to submerge the carrots too much. Cover and cook in the oven for 2 hrs. (I like to turn the beef halfway through cooking.)
  • Meanwhile, thinly slice the onions. Heat 1 tbsp oil in a pan and stir in the onions, thyme and some seasoning. Cover and cook gently for 20 mins until the onions are softened but not coloured. Remove the lid, turn up the heat, add the butter and sugar, then let the onions caramelise to a dark golden brown, stirring often. Remove the thyme sprigs, then set aside.
  • When the beef is ready, it will be tender and easy to pull apart at the edges. Remove it from the casserole and snip off the strings. Reheat the onion pan, stir in the flour and cook for 1 min. Whisk the floury onions into the beefy juices in the casserole, to make a thick onion gravy. Taste for seasoning. Add the beef and carrots back to the casserole, or slice the beef and bring to the table on a platter, with the carrots to the side and the gravy spooned over.

2 kg / 4 lb beef chuck roast , rolled ((Note 1))
1 tsp each salt and pepper
2 tbsp olive oil
1 onion ((large), cut into large dice)
5 garlic cloves (, peeled and smashed (Note 2a))
5 carrots (, peeled and cut into 2.5cm/1" pieces)
3 celery stalks (, cut into 4 cm / 1.5" pieces)
1 cup (250ml) dry red wine ((sub with beef broth))
3 cups (750ml) beef broth (, salt reduced)
1/3 cup (50g) flour ((plain / all purpose) (GF - Note 2b))
1 tsp dried rosemary
1 1/2 tsp dried thyme
750g / 1.5 lb potatoes (, peeled and cut into 2.5 cm / 1" pieces)

Steps:

  • Pat beef dry with paper towels. Sprinkle generously with salt and pepper all over.
  • Heat oil in a skillet over high heat. Brown aggressively all over - a deep dark brown crust is essential for flavour base! Should take about 7 minutes.
  • Transfer beef to slow cooker.
  • In the same skillet, add onion and garlic. Cook for 2 minutes until onion is browned.
  • Add wine, reduce by half. Transfer to slow cooker.
  • Mix together flour and about 1 cup of the broth. Lumps is fine. Pour into slow cooker.
  • Add remaining broth, carrots, celery, rosemary and thyme into slow cooker.
  • Cover and slow cook on LOW for 5 hours. (45 min pressure cook on HIGH, Note 3a for Oven and Stove)
  • Add potato, slow cook on LOW for 3 hours. (10 min pressure cooker on HIGH, Note 3b)
  • Remove beef. Rest for 5 minutes, then slice thickly.
  • Adjust salt and pepper of Sauce to taste.

At Spoon and Stable, his Minneapolis restaurant, Gavin Kaysen cooks a version of his grandmother Dorothy's pot roast using paleron (or flat iron roast), the shoulder cut of beef commonly used in pot au feu, as well as housemade sugo finto, a vegetarian version of meat sauce made with puréed tomatoes and minced carrot, celery, onions and herbs. This recipe uses a chuck roast and tomato paste, both easier to find and still delicious.

3 pound boneless beef chuck roast
Kosher salt and ground black pepper
3 tablespoons canola oil
4 tablespoons butter
2 medium red onions, cut into quarters

Steps:

  • Preheat oven to 340 degrees. Season meat generously with salt and pepper. On the stove top, heat oil in a large Dutch oven, or other heavy roasting pan with a lid, over medium-high heat. Sear the meat until a dark crust forms, 3 to 4 minutes per side. Remove meat to a plate.
  • Reduce heat to medium and add butter to the pan. Melt the butter and add the whole head of garlic and vegetables, stirring frequently and scraping the bottom of the pot, until the vegetables start to color, 8 to 10 minutes.
  • Add tomato paste and cook, stirring frequently, until it darkens slightly, about 5 minutes.
  • Add bay leaves, rosemary and wine and cook, stirring occasionally, until liquid is reduced to a thick gravy consistency, 5 to 7 minutes.
  • Return meat to the pot. Add broth, then cover the pot and transfer to the oven. Cook for 2 hours 20 minutes.
  • Let roast sit at room temperature for at least 10 minutes. Remove meat to a cutting board to slice. Discard bay leaves and rosemary stems. Squeeze any garlic cloves remaining in their skins into the stew and discard the skins. Serve slices of meat in shallow bowls along with the vegetables and a generous amount of cooking liquid ladled over top.

1/4 cup flour
1 teaspoon salt
1/4 teaspoon pepper
5 pound rump of beef
2 or 3 tablespoons fat or oil
2 onions, sliced, or 10-12 small white onions, peeled
1 or 2 carrots, scraped and cubed
Herbs and other seasonings as desired
N/A seasoning
1 cup liquid (wine, bouillon, tomatoes, vegetable broth, etc.)
Other vegetables as desired

Steps:

  • Season the flour with the salt and pepper and pound the mixture into the meat with the edge of a plate. Brown meat on all sides in the hot fat or oil. Add the onions, cover and cook over low heat 10 minutes. Add the carrots, herbs, seasonings and liquid. Cover tightly and simmer 3 1/2 - 5 hours, until meat is fork tender. Add desired vegetables during the last 20 or 30 minutes.
  • Pot Roast Variations
  • 1. For part of the liquid, use a 10-ounce can (1 1/3 cups) of puréed tomatoes. For seasoning, add 1 tablespoon minced parsley or dill. When the meat has been removed from the pan, add 1 cup sour cream to the sauce.
  • 2. For the liquid, use 3/4 cup dry white wine, 2 tablespoons brandy or rum, and 1 tablespoon chili sauce. For seasoning, add 4-6 coriander seeds and 12 peppercorns.
  • 3. For the liquid, use 1/2 cup syrup from canned fruit, 2 tablespoons vinegar, 1/2 cup water, 1 beef bouillon cube. For seasoning, add a pinch of powdered fennel and a teaspoon of minced dill.
  • 4. For the liquid, use half dry vermouth, half chicken bouillon.

1/2 teaspoon ground fennel
1 (3-pound) chuck roast
Extra virgin olive oil
3 large carrots, peeled and cut into 2-inch-long chunks
1/2 pound cipollini onions, peeled, or 1 large Vidalia onion, cut into 1/4- to 1/2-inch dice
3 garlic cloves, smashed
1 1/4 cups hard cider (or apple cider if you prefer nonalcoholic)
3 1/2 cups beef broth
6 fresh thyme sprigs
1 fresh rosemary sprig
1 fresh or dried bay leaf
2 tablespoons all-purpose flour
2 tablespoons tomato paste

Steps:

  • Preheat the oven to 325ºF.
  • Combine the salt, pepper, and ground fennel in a small bowl. Generously season the roast with the spice mixture.
  • Add enough oil to a large Dutch oven to coat the bottom. Heat it over medium-high heat, add the roast, and sear 8 to 10 minutes total, turning to brown all sides. Transfer the roast to a bowl.
  • Add the carrots, onions, and garlic and season lightly with salt and pepper. Sauté the vegetables until browned, 5 to 8 minutes, being careful not to burn the garlic. Remove the vegetables and place in a clean bowl.
  • Deglaze the pot with 1 cup of the cider. Using a wooden spoon, scrape up any brown bits that have stuck to the bottom of the pot. Bring the liquid to a boil over high heat. Add 2 cups of the broth and bring it to a boil again.
  • Add 4 sprigs of the thyme, the rosemary, bay leaf, and roast to the pot (reserving the vegetables in the bowl). Bring the liquid to a boil, then reduce heat to a simmer.
  • Cover the pot, place it in the oven, and roast for 2 hours. Add the reserved vegetables and roast for 1 more hour, until the roast is fork-tender but not mushy.
  • Remove the roast and vegetables to a large bowl or platter and cover to keep warm. Let the braising liquid cool slightly, then strain the liquid into a bowl (discard the solids).
  • Skim off any fat that has risen to the top.
  • Purée the braising liquid in a blender.
  • To make the sauce, heat 2 tablespoons oil in the Dutch oven over medium heat. Add the flour and stir to combine with the oil. Stir in the remaining 1/4 cup cider and the tomato paste and mix well.
  • Return the braising liquid to the pot along with the remaining 1 1/2 cups beef broth and the remaining 2 thyme sprigs. Increase the heat to medium-high and bring to a boil. Reduce to a simmer and cook for 15 to 20 minutes, until the sauce is thickened.
  • Season the sauce with salt and pepper to taste. Remove the thyme sprigs.
  • To serve, slice the pot roast, arrange the vegetables around it, and pour the sauce over the top.
  • Variations: Tipsy Pot Roast
  • In many pot roast recipes, there is an element of alcohol. In mine, I use hard cider, but you can also try red wine, a heavy beer, or-for your Irish friends-Guinness. The booze gives the meat an extra dimension but won't get the family hammered.

1 1/2 tablespoons canola oil
1 1/2 cups beef broth
1/2 cup dry red wine
1/4 cup all purpose flour
2 tablespoons tomato paste
2 tablespoons Worcestershire sauce
2 pounds small Yukon gold potatoes
3 large carrots, cut into 3-inch pieces
2 celery ribs, cut into 3-inch pieces
1 medium sweet onion, cut into 1-inch wedges
2 cloves garlic, minced
6 sprigs fresh thyme
1 bay leaf
2 tablespoons chopped fresh parsley leaves

Steps:

  • Season beef with 1 1/2 teaspoons salt and 1 teaspoon black pepper. Heat canola oil in a large skillet over medium heat. Add beef and cook until evenly browned, about 3-4 minutes per side. In a medium bowl, whisk together beef broth, wine, flour, tomato paste and Worcestershire; set aside. Place potatoes, carrots, celery, onion, garlic, thyme and bay leaf into a 6-qt slow cooker. Stir in beef broth mixture; season with salt and pepper, to taste. Top with beef. Cover and cook on low heat for 7-8 hours, or until meat is fork-tender. Remove beef, potatoes, carrots, celery and onion from the slow cooker; shred beef, using two forks. Cover with aluminum foil. Strain cooking juices through a fine-mesh sieve into a small saucepan over medium heat; discard solids. Skim any remaining fat from surface and discard. Bring to a boil; reduce heat and simmer, whisking constantly, until desired thickness, about 5-10 minutes. Season with salt and pepper, to taste. Serve beef, potatoes, carrots, celery and onion with juices immediately, garnished with parsley, if desired.

1 whole (4 to 5 pounds) chuck roast
2 tbsp. olive oil
2 whole onions
6 whole carrots (up to 8 carrots)
Salt, to taste
Pepper, to taste
1 c. red wine (optional, you can use beef broth instead)
2 c. to 3 cups beef stock
3 sprigs fresh thyme, or more to taste
3 sprigs fresh rosemary, or more to taste

Steps:

  • First and foremost, choose a nicely marbled piece of meat. This will enhance the flavor of your pot roast like nothing else. Generously salt and pepper your chuck roast.
  • Preheat the oven to 275˚. Heat a large pot or Dutch oven over medium-high heat. Then add 2 to 3 tablespoons of olive oil (or you can do a butter/olive oil split).
  • Cut two onions in half and cut 6 to 8 carrots into 2-inch slices (you can peel them, but you don't have to). When the oil in the pot is very hot (but not smoking), add in the halved onions, browning them on one side and then the other. Remove the onions to a plate.
  • Throw the carrots into the same very hot pan and toss them around a bit until slightly browned, about a minute or so.
  • If needed, add a bit more olive oil to the very hot pan. Place the meat in the pan and sear it for about a minute on all sides until it is nice and brown all over. Remove the roast to a plate.
  • With the burner still on high, use either red wine or beef broth (about 1 cup) to deglaze the pan, scraping the bottom with a whisk to get all of that wonderful flavor up.
  • When the bottom of the pan is sufficiently deglazed, place the roast back into the pan and add enough beef stock to cover the meat halfway (about 2 to 3 cups). Add in the onion and the carrots, as well as 3 or 4 sprigs of fresh rosemary and about 3 sprigs of fresh thyme.
  • Put the lid on, then roast in the oven for 3 hours (for a 3-pound roast). For a 4 to 5-pound roast, plan on 4 hours.

1 tablespoon fennel seed

2 (355 ml) bottles ginger beer
1 -2 cup chicken stock
2 tablespoons molasses

Steps:

  • Preheat oven to 350°F.
  • Season pork with salt.
  • Heat vegetable oil in a large pot over high heat; sear pork on all sides, approximately 7-10 minutes.
  • Remove pork, set aside.
  • Add onion, garlic and ginger, cook over medium heat until lightly browned.
  • Add all spices and toast until fragrant.
  • Deglaze with ginger beer and chicken stock.
  • Add molasses, bring up to a simmer.
  • Add pork, cover pot with lid and place in oven.
  • Braise until pork is tender, turning pork over half way through cooking, approximately 2 ½ hours.
  • Turn pork over half way through cooking.
  • Once pork is tender, remove from pot.
  • Remove fat cap, divide meat into 2 inch pieces and set aside.
  • With a fine strainer, pour liquid into a large wide-based pot.
  • Reduce braising liquid by 2/3 over high heat until thickened and will coat back of a spoon.
  • Glaze pork in sauce before serving.

2 tbsp Oil
Salt (To taste)

1 tsp Paprika
2 cups Onion (Roughly chopped)
3 tbsp Garlic (Finely chopped)
1 tbsp Ginger (Finely grated)
2 cups Beef broth (Low sodium)
3/4 cup Red wine (Optional- I didn't use this)
2 sprigs Thyme (Fresh)
2 springs Rosemary (Fresh)
1 sprig Sage (Fresh)
1 Bay leaf
2 pounds Potatoes (Cut into 2 inch cubes)
4 Carrots (Cut into 2 inch pieces)
2-3 Stalks Celery (Optional, Cut into 2 inch pieces)

Steps:

  • Heat oil in a large Dutch Oven over medium-high heat.
  • Add roast and season one side with salt, pepper and paprika Sear it.
  • Then, flip it over and season the other side with salt, pepper and paprika. Sear it.
  • Sear and brown the sides of the roast too.
  • Remove roast to a plate and keep aside.
  • In the same Dutch Oven, add onions, garlic, ginger and saute until golden brown and fragrant.
  • Add the roast back into to Dutch Oven.
  • Add beef broth, red wine (optional), thyme, rosemary and bay leaf.
  • Bring to a simmer.
  • Then, cover the Dutch Oven with lid and transfer to oven.
  • Bake at 350 degrees for 1.5 hours or until roast is almost tender.
  • Remove from oven and add carrots, potatoes and celery.
  • Return to oven and bake for 1.5 hours until roast and vegetables are all fully cooked.
  • Now, you have 2 options: Shred roast with 2 forks OR remove it and cut into large pieces and add that back into the pot.
  • Discard the bay leaf as well as thyme and rosemary sprigs. Enjoy!

Meltingly tender, slow-braised Garlic & Ginger Pot Roast with lovely mellow carrots, potatoes, and green onions. This is braised in the oven, not a slow-cooker. Sometimes things are worth the effort, this is one of those things!

3-4 pound boneless chuck roast
salt and pepper
2 teaspoons vegetable or canola oil
3 inch piece of fresh ginger root (cut in half and smashed with the side of a knife to break it up a bit)
6 cloves of garlic (peeled and lightly smashed with the side of a knife)
4 cups beef broth or stock
2 tablespoons fish sauce or soy sauce
1-2 pounds small (red potatoes, scrubbed and halved)
3 medium size carrots (peeled and cut diagonally into 1-inch thick pieces)
6 green onions (washed and trimmed of the root end)
1 teaspoon cornstarch mixed into 1/4 cup water
Hot (cooked rice or noodles)
soy sauce
toasted sesame oil

Steps:

  • Preheat the oven to 350°F.
  • Generously salt and pepper the chuck roast.
  • Place a large, heavy, oven-safe pan with a tight fitting lid over high heat. When the pan is very hot, add the oil and swirl to coat the bottom of the pan. When the oil is shimmery, lay the chuck roast down on the hot pan and do not move it for 4 minutes. After 4 minutes, lift the corner of the roast to see whether it has a dark brown surface. If it does not, continue cooking for another 1-2 minutes before flipping to cook the other side the same way. After the roast is well-browned on both sides, toss in the ginger and garlic, pour in the broth or stock and the fish or soy sauce, put the lid in place and put the covered pan in the preheated oven. Leave it alone without peeking in the pan for 2 hours.
  • After 2 hours, scatter the potatoes, carrots, and onions around the roast in the pan, replace the lid and cook for another hour or until the beef, potatoes, and carrots are all fork-tender. Using a slotted spoon, transfer the vegetables to a bowl (fishing out and discarding the pieces of ginger.) Use tongs to transfer the roast to a cutting board and lightly tent it with foil to prevent it from drying.
  • You can cut the roast, drizzle the pan sauces over it, and serve it with the vegetables immediately, or you can thicken the sauces before serving. If desired, drizzle with soy sauce and toasted sesame oil.

2 or 3 tablespoons olive oil
2 whole onions, peeled and halved

2 or 3 sprigs fresh rosemary
2 or 3 sprigs fresh thyme

Steps:

  • Preheat the oven to 275 degrees F.
  • Generously salt and pepper the chuck roast.
  • Heat the olive oil in large pot or Dutch oven over medium-high heat. Add the halved onions to the pot, browning them on both sides. Remove the onions to a plate.
  • Throw the carrots into the same very hot pot and toss them around a bit until slightly browned, about a minute or so. Reserve the carrots with the onions.
  • If needed, add a bit more olive oil to the very hot pot. Place the meat in the pot and sear it for about a minute on all sides until it is nice and brown all over. Remove the roast to a plate.
  • With the burner still on high, use either red wine or beef broth (about 1 cup) to deglaze the pot, scraping the bottom with a whisk. Place the roast back into the pot and add enough beef stock to cover the meat halfway.
  • Add in the onions and the carrots, along with the fresh herbs.
  • Put the lid on, then roast for 3 hours for a 3-pound roast. For a 4 to 5-pound roast, plan on 4 hours. The roast is ready when it's fall-apart tender.

2-3 pound boneless beef chuck roast
2 tablespoons canola or olive oil

2 pounds yellow or baby potatoes (cut into large chunks )
2½ cups beef broth
1 spring rosemary
fresh parsley for garnish

Steps:

  • Preheat oven to 300°F.
  • Combine salt, pepper, and flour. Spread flour in a dish or on a piece of parchment paper and dip roast into the flour mixture to coat it on all sides.
  • Heat oil over medium heat in a large Dutch oven or stockpot. Brown roast on all sides (about 5 minutes).
  • Remove meat from the pot and set it aside.
