- Preheat oven to 350°. In a small bowl, beat brown sugar, oil and egg until well blended. Beat in buttermilk. In a small bowl, combine flour, baking soda, ginger, salt and cinnamon; gradually beat into buttermilk mixture until blended. Stir in pears. Fill 18 paper-lined muffin cups two-thirds full. , For topping, combine brown sugar and ginger. Stir in butter until crumbly. Sprinkle over batter. , Bake 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool 5 minutes before removing from pans to wire racks. Serve warm.

This is based on my mother's zucchini bread recipe. It is a very moist bread.

Steps:
- Toss chopped pears with sugar, ginger, and cloves in a large bowl. Set aside and let the sugar dissolve in the pear juices.
- Preheat oven to 325 degrees F (165 degrees C). Grease an 8x4-inch loaf pan.
- Stir vegetable oil, vanilla extract, and eggs into the pears. In a separate bowl, combine flour, baking soda, baking powder, and salt. Add the flour mixture to the pear mixture and stir gently just to combine. Pour the batter into the prepared loaf pan.
- Bake in the preheated oven until golden brown and a toothpick inserted in the center comes out clean, about 40 minutes.

PEAR BUTTER
Pear butter is lightly scented with orange and nutmeg. This is an old recipe from a dear friend. Its taste is so good in toast or even on top of steak or chicken.

- Place pears into a large pot over medium heat, and add just enough water to cover the bottom of the pot and keep them from sticking, about 1/2 cup. Cook until the pears are soft, about 30 minutes. Press pears through a sieve or food mill, and measure out 2 quarts of the pulp.
- Pour the pear pulp and sugar into a large saucepan and stir to dissolve sugar. Stir in the orange zest, nutmeg and orange juice. Cook over medium heat until the mixture is thick enough to mound in a spoon. When the mixture begins to thicken, stir frequently to prevent scorching on the bottom. This will take about 1 hour.
- Ladle the pear butter into hot sterile jars, leaving 1/4 inch of headspace. Remove air bubbles by sliding a metal spatula around where the pear butter touches the glass. Wipe jar rims clean, and seal with lids and rings. Process for 10 minutes in a boiling water bath. The water should cover the jars by 1 inch. Check with your local extension for exact processing times for your area.

- Add the first 4 ingredients to the slow cooker; stir to combine.
- Cover and cook on LOW for 8 hours.
- Remove the lid and stir in the fresh and ground ginger.
- Increase temperature setting to HIGH; cook, uncovered, 1-2 hours, to thicken and blend, stirring occasionally.
- Let cool completely, then transfer to glass jars or other containers with tight fitting lids; store in the refrigerator where they will keep for several weeks.
GINGER PEAR CAKE

- Position a rack in the center of the oven and preheat to 325 degrees F. Lightly spray a 9 by 13 by 2-inch baking dish with vegetable cooking spray. Line the pan with parchment or waxed paper.
- Melt 2 tablespoons of the butter in a medium skillet over medium-high heat. Add the pears and cook, stirring occasionally, until golden brown, about 7 minutes. Stir in 1 tablespoon of the brown sugar and 1 teaspoon of the pumpkin pie spice and remove pan from the heat.
- Whisk the flour, ginger, the remaining 1 teaspoon of pumpkin pie spice, baking soda, baking powder, and salt in a large bowl.
- In another bowl, whisk the milk, molasses, and remaining brown sugar. Add the eggs and whisk until smooth. Use a spatula to stir the molasses mixture into the dry ingredients to make a thick liquid batter.
- Heat the water and remaining 2 tablespoons butter in a small saucepan until just boiling. Whisk the hot water into to the batter until just combined. Stir in the pears. Pour the batter into the prepared pan. Bake in the center of the oven, until a toothpick inserted into the center comes out clean, about 40 minutes.
- Cool cake in the pan on a rack. Cut into 12 squares. Dust with confectioners' sugar before serving, if desired.

- Ginger Brown-Butter: Slice the unpeeled ginger root into 1/4 inch rounds.
- set aside.
- Sift flour and ground ginger.
- Set aside.
- Whisk together the eggs and sugar until combined.
- Beat in flour and ground ginger.
- set aside.
- In a small saucepan, heat butter with vanilla bean and ginger root over high heat until brown and foamy.
- Continue heating until bubbles subside and the butter is dark brown and smoking.
- Whisking continuously, pour hot butter in a steady stream into the egg mixture.
- Combine well.
- Strain and discard vanilla bean and ginger root.
- The ginger brown-butter can be made to this point and refrigerated for a week.
- Warm to room temperature before using.
- Poaching the Pears: Combine all ingeredients except pears in a stainless steel saucepan.
- Peel, halve and core pears and drop immediately into liquid.
- Place a clean kitchen towel over the pears on the surface of the liquid, to keep them submerged.
- Bring to a boil and reduce heat to just below a simmer until the pears can be easily pierced with a wooden skewer.
- Spread pears on a parchment lined sheetpan and refrigerate until cool.
- These will keep covered for a couple of days.
- Reserve 1 cup of the poaching liquid.
- Assembling The Tart: Preheat oven to 350.
- Line a 10-inch tart ring with sweet tart dough.
- Pour or pipe ginger brown butter into the pastry shell, filling to 1/2 inch of the top.
- Place pears, cut side down on a cutting board and cut them crosswise into 1/8 inch slices.
- Keep the sliced pear halves in tact.
- Press slightly to shingle the slices and slightly elongate their shape.
- Slip a thin offset spatula under each of the sliced pear halves and place on top of the brown butter, stem end toward the center.
- Arrange pear halves around the tart like the spokes of a wheel.
- If there is room in the center add another pear half or additional slices.
- You should have approximately 7 halves around the outside and one half in the middle.
- This will depend largely on the size of the pears.
- Bake for 1 to 1 1/4 hours, until well browned.
- Cool.
- Just before serving, boil the reserved poaching liquid until it reduces to 1/4 cup.
- It will be very thick.
- With a pastry brush, paint a thin layer of glaze over the pears.
- Remove tart from the tart ring and slice.
- Serve with vanilla or ginger ice cream.

PEAR AND GINGER UPSIDE-DOWN CAKE

- Preheat oven to 350°F. Spray 9-inch-diameter cake pan with 2-inch-high sides with nonstick vegetable oil spray. Sift flour and next 8 ingredients into medium bowl. Combine milk and vanilla in glass measuring cup. Beat butter and sugar in large bowl until lightly and fluffy. Add egg and beat until will blended. Add molasses and beat will. Mix in dry ingredients alternately with milk mixture, beginning and ending with dry ingredients. Arrange pears in bottom of prepared pan. Pour batter over.
- Bake cake until tester inserted into center comes out clean, about 40 minutes. Transfer pan to rack and cool 10 minutes. Using small knife, cut around sides of pan to loosen cake. Turn cake out into rack and cool slightly. (Cake can be prepared 1 day ahead. Cover and store at room temperature.)
- Serve warm or at room temperature with whipped cream.
GINGER PEAR UPSIDE-DOWN CAKE

- Preheat the oven to 325 degrees Fahrenheit. Oil a 9-inch springform pan, and line the bottom with a 10-inch circle of parchment paper.
- To make the topping, combine 3 Tbs butter, ½ cup brown sugar, and cinnamon in a medium saucepan. Melt the butter over medium heat for about 1 minute; then pour the mixture into the prepared springform pan, completely coating the parchment paper. Place the quartered pears on top of the butter-sugar mixture, lining the pieces up tightly in a decorative circle so that none of the bottom shows through.
- To make the batter, cut 2 sticks of butter into 1-inch pieces, and put them in a large mixing bowl. Add ¾ cup brown sugar, and cream the mixture on medium speed for 3-5 minutes, until it is smooth and a pale tan color. Add the grated ginger, and beat 1 minute more.
- Add the eggs one at a time, beating on low speed and making sure that each egg is fully incorporated before adding another. When all the eggs have been added, slowly pour in the molasses and beat to fully mix.
- In a separate medium bowl, sift together the flour, baking powder, baking soda, and salt. Whisk to fully combine.
- Alternately add small amounts of flour and buttermilk to the batter, stirring and folding with a rubber spatula until the dry ingredients are just absorbed. Do not overmix the batter.
- Carefully transfer the pan to the center rack of the oven, and bake for about 1 hour and 45 minutes, until a skewer inserted in the cake's center comes out clean. Let the cake cool in the pan for 10 minutes on a wire rack. Cover the pan with an upside-down serving plate; then carefully invert them together. Release the sides of the pan, and lift it away. Gently lift the pan's base off the cake, and peel away the parchment paper. Allow the cake to cool for a half hour or so, and serve warm, with whipped cream.
