GINGER PEACH PIES
I love ginger in any way, shape or form, so I always look for ways to include it in recipes, especially desserts. Peaches and ginger star in this mini pie that offers the right amount of sweetness and spice. -Rae Endicott, Branson, Missouri

Steps:
- Bring peaches, ginger, and pectin to a boil in a large saucepan over medium heat. Stir in the sugar and butter; cook and stir until the sugar is dissolved. Return to a boil, stirring constantly for 1 minute more. Remove from heat, and skim off any foam with a spoon.
- Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the peach jam into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 10 minutes.
- Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

Steps:
- For crust:
- Whisk first 5 ingredients in medium bowl to blend. Add butter and shortening and rub in with fingertips until mixture resembles very coarse meal. Mix in 4 tablespoons ice water. Mix in more water by tablespoonfuls if dough is dry, tossing until moist clumps form. Gather dough into ball. Divide dough into 2 pieces, 1 slightly larger than the other. Flatten into disks; wrap and chill at least 2 hours and up to 2 days.
- For filling:
- Mix sugar, cornstarch, lemon juice and spices in large bowl. Bring medium saucepan of water to boil. Drop in 3 peaches at a time; blanch 1 minute. Transfer peaches to bowl of cold water. Using small sharp knife, peel 1 peach. Cut peach in half; discard pit and slice thinly. Stir peach slices into sugar mixture. Repeat with remaining peaches. Let filling stand until juices form, at least 30 minutes and up to 1 hour.
- Preheat oven to 375°F. Roll out larger dough disk on lightly floured surface to 13- to 14-inch round. Transfer to 9-inch-diameter deep-dish pie dish. Roll out smaller dough disk on lightly floured surface to 11-inch round. Using ruler as aid, cut dough into 1/2-inch-wide strips.
- Spoon filling into dough-lined dish. Arrange some of dough strips atop pie, spacing 3/4 inch apart. Form lattice by arranging more dough strips at right angle to first strips, spacing 3/4 inch apart. Trim overhang of bottom crust and lattice strips to 3/4 inch. Fold under and crimp edge decoratively.
- Bake pie until crust is golden and filling bubbles thickly, covering edge of crust with foil if browning too quickly, about 1 hour 20 minutes. Cool pie to room temperature before serving.
GINGER PEACH PIE
There's something classic about peach pie. This double crust beauty kicks the old classic up a notch with the addition of ginger and gingersnaps. When the aroma of the ginger intermingles with the peaches fresh out of the oven, you'll know you have a winner. If you'd like to save some time, please feel free to use store bought pie crusts. - Preheat the oven to 350°. Set a baking sheet lined with foil on the bottom rack. In a spice grinder, combine the tapioca and the vanilla bean seeds and grind to a fine powder. Add the candied ginger and pulse until finely ground.
- Transfer the tapioca mixture to a large bowl. Add the peaches and 3/4 cup plus 2 tablespoons of the sugar and toss. Let the filling stand for 10 minutes, or until slightly juicy.
- Spoon the filling into a 9-inch glass pie plate lined with 1 round of Flaky Pie Crust. Lightly brush the rim of the pastry with water. Position the rolled-out top crust over the filling and press the edges together to seal. Trim the overhang to 1/2 inch, fold it under itself and crimp decoratively. Lightly brush the top crust with water and sprinkle with the remaining 1 tablespoon of sugar.
- Bake the pie in the center of the oven for 1 hour and 45 minutes, or until the filling is bubbling and the crust is deep golden. Cover the edge of the pie with strips of foil halfway through baking to prevent overbrowning. Transfer the pie to a wire rack and let cool for at least 4 hours before cutting.

- Mix all filling ingredients together in a large bowl and stir to combine. Let the filling hang out while you roll out the dough. This will allow time for the juices in the filling to accumulate in the bottom of the bowl. We want to discard the juice when filling the pie to avoid having a soggy bottom on the pie crust.

- To make the crust: In a medium-sized mixing bowl, combine the flour, buttermilk powder (if you're using it), salt and baking powder.

- Sprinkle this mixture over the flour and fat., Squeeze the dough together; if it's not cohesive, add an additional 1 to 2 tablespoons water (just enough to make the dough stick together)., Shape the dough into a flattened disk, wrap it in plastic wrap, and refrigerate it for 30 minutes or longer., Preheat the oven to 425°F., Remove the dough from the fridge.
- If it's been refrigerated longer than 30 minutes, allow it to rest for 10 to 15 minutes, until it's pliable., Roll out the dough to about 14" in diameter; it'll be about 1/8" thick., Carefully transfer the dough to a 9" pie pan (a giant spatula works well here), fold the edges under, and crimp.

- Cut the butter into quarter-inch cubes then place in the freezer for at least ten minutes or until ready to use.
- Pulse together the flour, sugar, and salt in a food processor, once or twice until just combined. Add the butter cubes to the flour mixture and pulse a few times until the butter is evenly distributed, with the largest butter bits about dime-sized.
- Add the vinegar and ice water, pulsing once or twice between each tablespoon addition. The dough is ready when it appears crumbly, but will easily hold together when pinched between two fingers. There should be pea-sized butter pieces throughout. It’s better to err on the side of a slightly wetter dough than too dry – you can always add a bit more flour when you’re rolling.
- Turn the dough out onto a clean, lightly floured work surface and divide into two halves. Form each half into a round disk, working quickly and being careful not to over-handle the dough.

- In a food processor, combine the flour with the salt and pulse to blend. Add the butter and shortening and pulse until the mixture resembles coarse meal. Sprinkle the ice water over the mixture and pulse just until a dough starts to form. Scrape the dough out onto a work surface, gather up any crumbs and knead gently just until the dough comes together. Pat the dough into a disk, wrap in plastic and refrigerate until firm, about 1 hour.
- In the food processor, combine the flour with the brown sugar, granulated sugar, candied ginger and salt. Pulse until the ginger is very finely chopped. Add the butter and pulse until moist crumbs form. Transfer the crumbs to a bowl, pressing some into clumps. Refrigerate the streusel.
- In a large bowl, toss the sliced peaches with the lemon juice and almond extract. In a small bowl, whisk the brown sugar with the granulated sugar, flour, ginger and salt. Add the dry ingredients to the peaches and toss well. Scrape the fruit into the pie shell and scatter the streusel evenly on top.
