- Place watermelon in a blender. Cover and process until blended. Strain and discard pulp; transfer juice to a pitcher. Stir in limeade concentrate. Refrigerate for 6 hours or overnight., Just before serving, stir in carbonated water. Garnish servings with lime slices.

- Put watermelon into blender in batches and process until smooth. Strain through a sieve and discard solids.
- Combine lime juice, sugar, honey and ginger in a bowl. Whisk until sugar dissolves.
- Combine lime mixture and watermelon with seltzer, pour into tall glasses over ice, and garnish with mint. Or combine lime and watermelon and chill for several hours before adding seltzer to allow for deeper development of ginger flavor.

SALTED LEMON-GINGER SPRITZER
A little sweet, lightly sour and a touch briny: This spritz is inspired by the salty lemonade found in Vietnam as a way to beat the heat. Without ice and ginger beer, this mix keeps well in the fridge, so consider making a large batch to help get you through the summer. If adding ginger kombucha, bear in mind that, though most brands are not legally considered alcoholic by the Alcohol and Tobacco Tax and Trade Bureau, they do contain trace amounts (up to 0.5 percent). If you're strictly abstaining, opt for something like non-alcoholic ginger beer or ginger ale.

- Place the lemon and salt in a large wine glass and using the back of a spoon, lightly muddle to break up and release some of the oils and juices. Add lemon juice and ginger (if using) and top with lots of ice and ginger beer. Garnish with lemon wedge or fresh ginger.

- Put the melon chunks in a blender or food processor with the lime juice and apple juice. Whizz to the smoothest you can get, then stir in the lime zest. Cover and chill until ready to serve.
- To serve, pour the melon mixture into a big jug with the wine, then add an equal part of lemonade and give it a good stir. Thread a few melon balls onto skewers, if you like, add one to each glass with some crushed ice, and top up with the melon spritzer.
