10 cups thinly sliced peeled sweet potatoes (about 3 pounds)
1/4 cup butter
1/3 cup packed light brown sugar
1 tablespoon lime rind
2 tablespoons fresh lime juice
1 tablespoon grated orange rind
1 tablespoon grated peeled fresh ginger
1 teaspoon low sodium soy sauce
1 teaspoon salt
1/4 teaspoon black pepper
cooking spray

Steps:

  • Preheat oven to 425 degrees.
  • Lightly spoon flour into dry measuring cup; level with a knife. Combine flour and potato in a large bowl; toss well.
  • Melt butter in a small saucepan over low heat. Add sugar and next 7 ingredients (sugar through pepper); cook 4 minutes or until sugar dissolves. Pour over potato mixture; toss well. Spoon mixture into a shallow 2-quart casserole dish coated with cooking spray.
  • Cover and bake at 425° for 55 minutes or until tender. Let stand 10 minutes.

Steps:

  • Preheat oven to 425°F. In a large bowl, combine all ingredients and toss. Arrange potatoes in a single layer on a baking sheet. Roast for 10 minutes, then shake or flip the potatoes over. Continue roasting for 10 minutes or until tender and slightly browned. Serve warm or at room temperature. Variation: There's a nice depth of flavor that comes from roasting all of the ingredients together, but those who really love ginger and lime might enjoy this variation. Instead of adding the ginger, lime zest and juice to the olive oil mixture, toss them with the potatoes after roasting for a hotter and zestier flavor.

½ cup honey
3 tablespoons grated fresh ginger
2 tablespoons walnut oil
1 teaspoon ground cardamom
½ teaspoon ground black pepper

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a large bowl, toss together the sweet potatoes, honey, ginger, walnut oil, cardamom, and pepper. Transfer to a large cast iron frying pan.

zest and juice 1 lime
1 tbsp maple syrup or clear honey
thumb-size piece fresh root ginger , cut into matchsticks, plus 1 tsp grated root ginger
2 skinless, boneless chicken breasts
450g/1lb sweet potatoes , roughly chopped
1 tbsp olive oil

Steps:

  • Mix half the lime zest and all the juice with the maple syrup and grated ginger. Slash each chicken breast 3-4 times with a sharp knife, then coat well with the marinade. Set aside for 10 mins. Heat the grill and line the grill tray with foil.
  • Cook the sweet potatoes in salted boiling water for 10-12 mins until tender. Drain and mash well, adding the rest of the lime zest, plus some seasoning. Meanwhile, grill the chicken breasts for 10-15 mins, until cooked through and slightly caramelised.
  • Heat the oil in a small frying pan. When it's really hot, add the ginger matchsticks and fry for 1 min until the ginger is crisp. Lift out the matchsticks with a slotted spoon, then stir the mash into the gingerinfused oil. Divide the mash between 2 plates, top each with a chicken breast, scatter with the crisp ginger and serve with some sugar snap peas.

1/2 teaspoon mustard seeds
2 small green serrano chilies, cut horizontally in half
1 medium red onion, finely chopped
1 teaspoon ginger, freshly grated
1/2 teaspoon ground turmeric
1/2-3/4 teaspoon salt
2 tablespoons lemon juice, to taste

  • boil sweet potatoes in water to cover till just tender. cool, peel, and cut into 1-inch pieces.
  • heat oil in large saute pan over high heat. when oil begins to smoke, add mustard seeds, covering pan. when seeds stop sputtering, add chiles. when chiles are toasted, add onion and ginger. saute until onion is lightly browned, then add turmeric and stir.
  • add sweet potatoes and salt and toss gently to mix. cover and steam over low heat until flavors meld, about 4 minute sprinkle with lemon juice and serve hot.
