- In a 4-qt. slow cooker, combine all ingredients. Cook, covered, on low until apples are tender, 4-5 hours. Mash if desired. Refrigerate leftovers.

Steps:
- Heat oven to 350ºF.
- Beat 1/2 cup butter, cake mix, eggs and applesauce in large bowl with mixer until blended. Stir in 1/2 cup chopped ginger. Pour into 13x9-inch baking dish sprayed with cooking spray.
- Bake 45 to 50 min. or until toothpick inserted in center comes out clean. Cool completely.
- Beat cream cheese and remaining butter in separate large bowl with mixer until blended. Add vanilla and ground ginger; mix well. Gradually beat in powdered sugar; spread onto cake. Garnish with remaining chopped ginger.

ROASTED APPLESAUCE
This is without a doubt *the* most fabulous applesauce I have ever had! It's the only apple sauce my kids will eat, The flavor is incredible! So much richer in flavor than apples that have been steamed or simmered in water. I have actually used whatever apples I happen to have in hand. Even those that are looking tired and not so crisp any more. Great with any pork or chicken entree.

Steps:
- Preheat oven to 400°F.
- Spray baking dish w/ non-stick spray.
- Spread apples out in a casserole pan. Sprinkle with lemon juice, cinnamon sticks, sugar, salt and butter. Stirring occasionally.
- Bake until the apples are roasted and soft, about 30 minutes or longer.
- UPDATE: I roast until they are tender and begin to caramelize.
- Serve chunky or mash to desired consistency.
- Serve hot or cold.
- Yields 2 cups.

Steps:
- Peel, core, and slice apples.
- In a large pot, bring apples, lemon juice, pears, ginger, and 1 1/2 cups water to a boil over high. Reduce heat and simmer until apples are very soft and falling apart, 25 to 30 minutes.
- Mash with a potato masher or pulse in a food processor until smooth with small chunks remaining. (Add sugar, if using.)
- Let cool, then transfer applesauce to airtight containers.

- Peel, core, and cut the apples into eights. Place them directly into a large enough pot to hold the apples with a good few inches above them.
- Pour the water and sugar over the apples, mix, and bring to a boil. Cover the pot and turn the heat to a simmer. Keep the pot covered for about 10 minutes to steam the apples.
- Keep the heat at a simmer, and continue to cook the apples until they are very soft, about 40 minutes. As they cook, continue to stir and break the apple chunks into smaller pieces periodically. This is a chunky applesauce, so don't break them down too much -- just into small bite-sized pieces.
