- Place cornstarch in a large bowl; gradually whisk in water until smooth. Whisk eggs into cornstarch mixture; toss steak strips in mixture to coat.

- Bring a large pot of salted water to a boil, and fill a large bowl with ice water. Working in two batches, boil beans until just tender but still crisp and bright green. Start testing after 4 minutes or so, being careful not to overcook. When done, plunge beans into ice water to stop cooking, lift out immediately when cool and drain on towels. (Recipe can be made to this point up to a day in advance and kept refrigerated, wrapped in towels.)
- When ready to cook, heat 2 tablespoons oil in a wide skillet over high heat. Add half the beans, half the ginger and half the garlic, and cook, stirring and tossing constantly, until beans are heated through and ginger and garlic are softened and aromatic. Sprinkle with salt, and remove to a serving dish. Repeat with remaining oil, beans, ginger and garlic. Serve.

MONGOLIAN GINGER BEEF

- For black bean sauce: Heat a wok or heavy skillet over medium-high heat. Add the oil, black beans and garlic. Stir-fry for 30 seconds. Add the chicken stock, soy sauce, rice wine, and sugar. Bring mixture to a boil stirring often. Mix cornstarch with water to create a slurry. Add to mixture and stir until sauce thickens.
- For Mongolian Ginger Beef: Combine soy sauce, chopped garlic, sesame oil and black pepper in a large mixing bowl and whisk together. Slice flank steak on a bias, approximately 1/8-inch thick. Add to marinade, cover, and refrigerate for a minimum of 2 hours.
- Lightly oil Mongolian grill or wok. Grill the beef for 2 minutes. Add the peppers, onions, and broccoli. Continue cooking for 1 to 2 minutes until beef is cooked throughout. Add sauce and toss with beef mixture. Coat well and remove from heat. Garnish beef with green onion straws and serve with steamed jasmine rice.

- Clean and trim green beans.
- Heat 1 teaspoons olive oil in a large sauté pan over medium heat. Add green beans and season with 1/8 teaspoons salt and 1/8 tsp pepper. Cook 4 minutes until green beans begin to soften and brown, stirring occasionally. Remove green beans from pan and set aside.

- In a medium-sized bowl, whisk to combine rice vinegar, soy sauce, brown sugar, sesame oil, ginger, garlic powder, and vegetable oil.
- Place Skirt Steak strips and green beans in 2 separate food-safe plastic bags. Split the marinade in half between the beef and green beans.
- Add 1 Tbsp. of sesame seeds to the bag of beef. Add red chile flakes to the bag of green beans. Close both bags securely then ensure contents are well coated with marinade by massaging or lightly shaking bags. Marinate in the refrigerator for 10 to 30 minutes.
- Remove beef and green beans from bags. Discard the marinade from the beef bag. Reserve marinade from green beans, as desired for additional sauce after cooking.
- Preheat the air fryer to 400°F, according to manufacturer's instructions.
- Spray the inside of the air fryer basket with cooking spray. Start by cooking the green beans. Cook for 8-12 minutes, until crispy and slightly brown, flipping halfway through. Remove cooked green beans from the air fryer. Set aside and keep warm.
- Next, place beef in the air fryer, being careful to not overcrowd the basket, cooking in batches if necessary. Cook for 8-10 minutes per batch, flipping halfway through. Cook until outside of beef is browned, no longer pink, and reaches a minimum internal temperature of 145°F. Remove beef from the air fryer.

- Place green beans on the top rack of the air fryer and beef on the lower roasting rack.
