GRILLED LEMON GINGER CHICKEN



Grilled Lemon Ginger Chicken image

If you're looking for a healthy, tasty lemon ginger grilled chicken, then this recipe for you. This chicken is perfect on a green salad or in wraps.

4 to 6 chicken breasts (skinless and boneless)
1/3 cup lemon juice
2 tablespoons olive oil
1-2 cloves garlic ( minced )
2 teaspoons ginger (grated)
1 tablespoon fresh flat leaf parsley (chopped)
1 1/2 teaspoons honey
1 teaspoon fresh thyme
1/2 teaspoon sea salt
1/2 teaspoon black pepper

Steps:

  • Place the chicken breasts in a large resealable plastic bag.
  • Combine the remaining ingredients and pour them over the chicken.
  • Seal the bag and allow it to marinate in the refrigerator for 30 minutes to 1 hour.
  • Preheat the grill for medium heat.
  • Remove the chicken from the bag and reserve the marinade.
  • Place chicken on a lightly oiled grill grate and brush with marinade two to three times during the first half of the cooking time.
  • Cook the chicken breasts for 20 minutes or until temperature reaches 165 F/75 C at the center (or thickest) part of the breast.

I learned to make this when I was vacationing in Bermuda after high school. It has been 18 years, and this is still one of our favorite dishes ever! My children ALL love it - from the toddler to the teen! And it's so easy that even my non-cooking husband can whip this up! The longer you marinate the chicken, the better it is!

½ cup fresh lemon juice
½ cup soy sauce
½ teaspoon ground ginger
¼ teaspoon ground black pepper
4 (6 ounce) skinless, boneless chicken breast halves

Steps:

  • Rinse chicken breasts and pat dry with paper towels. Stir together the lemon juice, soy sauce, ginger, and black pepper in a bowl; pour into a large, resealable plastic bag. Add the chicken breasts, seal the bag, and massage to evenly coat chicken with lemon juice mixture. Place in refrigerator to marinate at least 20 minutes, or up to 24 hours.
  • Preheat an outdoor grill for medium-high heat. Lightly oil grill grate, and place about 4 inches from heat source.
  • Drain and discard marinade from the bag, and place chicken on preheated grill. Cook until chicken is no longer pink and juices run clear, 6 to 8 minutes on each side.

1 teaspoon black pepper
3/4 teaspoon salt
3/4 teaspoon ginger
3 medium garlic cloves, crushed
2 tablespoons olive oil
1 tablespoon lemon juice
1 -1 1/2 lb skinless chicken

Steps:

  • Blend salt, ginger, pepper, garlic, oil, & lemon juice in a bowl.
  • Take a skewer (preferably) or sharp knife & poke several holes into the chicken.
  • Rub the mixture into the chicken so that all sides are covered.
  • Place chicken into a glass bowl & cover with the remaining mixture. Let it marinate for at least 2 hours.
  • Cook the chicken either baked, broiled, or grilled. All are good.

This is really easy with my microplane--I just grate the ginger and garlic into a measuring cup, add the rest of the ingredients and nuke it in the microwave til it's all melted. This is good with any kind of fish, chicken or pork tenderloin, too.

1/2 cup lemon juice
5 garlic cloves, grated (or crushed)
1 tablespoon finely shredded gingerroot
1 tablespoon soy sauce
fresh ground pepper

Steps:

  • Mix all the ingredients in a small saucepan over moderate heat and stir until the butter is melted, or use the microwave.
  • Marinate seafood or meat 30 minutes to 2 hours (any more and the lemon starts to "cook" the meat.
  • Baste with marinade while cooking.
