GIANT WHITE CORN AND PORK SOUP (CROCK POT)
This recipe started on the back of the corn package, but I've changed it quite a bit to suit my tastes. It can be done all on the stove top, but I love not having to worry about boil overs, etc. This is mildly spicy. Giant white corn is available in Hispanic markets, Goya is a nationally-available brand.

Steps:
- Soak dried corn kernels overnight in cold water. Drain, rinse, place in crock pot. Cover with cold water and cook on LOW for 10 to 12 hours. The corn should be soft - tender enough to bite through. (My neighborhood Mexican market has started selling prepared corn kernels in a plastic bag, next to the prepared masa, in the refrigerated case - this simplifies prep!).
- Heat oil in skillet. Brown pork in skillet. Remove to crock pot. Deglaze pan with some water and pour juices into the crock pot.
- Add all remaining ingredients to crock pot and add enough water to cover. Cook on LOW for 6 to 8 hours. The corn will "open" up, kind of like popcorn.
- Sprinkle with chopped cilantro, if desired.
- Note 1: A 14 oz. can of diced tomatoes with chilis can be substituted for the tomato and jalapeno. I use 1 1/2 teaspoons salt if using fresh ingredients.
- Note 2: I start this the morning before I want to serve it. I cook the corn overnight and then finish the next morning. You can modify the time needed by cooking on high, etc.

NEW MEXICAN POZOLE
In New Mexico, there is abundance and generosity and plenty of comfort food at holiday parties. Posole, the savory and hearty, rather soupy stew made from dried large white corn kernels simmered for hours, is traditional and easy to prepare. Stir in a ruddy red purée of dried New Mexico chiles to give the stew its requisite kick. This is satisfying, nourishing, fortifying fare. The corn stays a little bit chewy in a wonderful way (canned hominy never does), and the spicy broth is beguiling.

- Drain soaked hominy and put in large soup pot. Cover with water and bring to boil. Let simmer briskly for 1 hour.
- While hominy is cooking, make red chile purée: Toast dried chiles lightly in cast-iron skillet or stovetop grill, just until fragrant. Wearing gloves, slit chiles lengthwise with paring knife. Remove and discard stems and seeds. Put chiles in saucepan and cover with 4 cups water. Simmer 30 minutes and let cool. In blender, purée chiles to a smooth paste using some cooking water as necessary. Purée should be of milkshake consistency.
- Season pork belly and pork shoulder generously with salt and pepper. After posole has cooked 1 hour, add pork shoulder, pork belly, onion stuck with cloves, bay leaf, garlic and cumin. Add enough water to cover by 2 inches, then return to a brisk simmer. While adding water occasionally and tasting broth for salt, simmer for about 2 1/2 hours more, until meat is tender and posole grains have softened and burst. Skim fat from surface of broth.
- Stir in 1 cup chile purée and simmer for 10 minutes. Taste and correct seasoning. (At this point, posole can be cooled completely and reheated later. Refrigerate for up to 3 days.)
- To serve, ladle posole, meat and broth into wide bowls. Pass bowls of diced onion, lime wedges, cilantro and oregano, and let guests garnish to taste.

CORN POTATO SOUP FOR THE CROCK POT
Every Monday is Soup Day at my house. I had some potatoes I needed to use up so this soup was born. I really like meals that I can use what's on hand. This is nothing fancy just a tasty easy soup.

Steps:
- Saute onion, celery, and bell pepper to translucent in the olive oil.
- Pour all ingredients except heavy cream and whole corn into crock pot.
- Cook on high for 4 hours.
- Blend 1/2 the ingredients in blender and pour back into crockpot.
- Add Heavy cream and whole sweet corn.
- Let warm for about 30 minutes.
- Serve and Enjoy.

SOUTHWESTERN PORK SOUP (FOR CROCK POT)
This is a great soup, so flavorful and so easy. Even though the avocado, lime juice and cilantro are "garnishes," the flavor of the lime and the cilantro especially is very key to the balance of flavors. This is good enough for company, really yummy. I think you probably could get away with using chicken meat in this too, although I tried this using the pork. Another find from the Robin Miller show, with my adjustments.

- In the bottom of a slow cooker, combine pork, onion, bell pepper, jalapeño, garlic, chili powder, cumin, 1/2 teaspoon salt, and 1/4 teaspoon ground black pepper (measuring both the salt and pepper with real measuring spoons, leveled).
- Stir to combine.
- Add broth, tomatoes, and beans, cover and cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours.
- When ready to serve, test for seasonings, then ladle soup into bowls and top with avocado, some cilantro, and a squirt or two of lime juice over each serving.
- Serve with some chips and a sprinkling of cheese too if desired.
