4 ounces Ghirardelli Semi-Sweet Chocolate Baking Bar
½ cup unsalted butter, cut into pieces
1 cup firmly packed brown sugar
1 teaspoon pure vanilla extract
2 large eggs
¾ cup all-purpose flour
2 tablespoons all-purpose flour
¼ teaspoon baking powder
⅜ teaspoon salt
½ cup Ghirardelli Semi-Sweet Chocolate Baking Chips

Steps:

  • Preheat the oven to 350 degrees F. Butter and flour an 8-inch square baking pan.
  • Chop the semi-sweet chocolate baking bar into 1-inch pieces.
  • In the top of a double boiler or in a heatproof bowl over barely simmering water, melt the chopped chocolate and butter, stirring occasionally until smooth. Remove the pan from the heat and let cool to room temperature.
  • Stir the brown sugar and vanilla into the chocolate mixture. Add the eggs and mix well.
  • In a bowl, sift together flour, baking powder, and salt. Slowly fold the flour mixture into the chocolate mixture, mixing well until blended. Stir in the chocolate chips and pour the batter into the prepared pan.
  • Bake for 25 to 30 minutes, until a tester comes out clean. Remove from the oven and cool for at least 10 minutes before cutting into 2-inch squares.

This recipe came from the can of Ghirardelli Brand Sweet Ground chocolate and Cocoa (found with the baking supplies). They were so great that I made them twice in one day! I omitted the walnuts but added the chocolate chips.

3/4 cup sugar
1 teaspoon vanilla extract
1/2 cup butter or 1/2 cup margarine, melted
3/4 cup Ghirardelli sweet ground chocolate and cocoa
2/3 cup unsifted flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup walnuts, chopped
1 cup chocolate chips

Steps:

  • Preheat oven to 350°F.
  • Using a spoon, stir eggs, sugar, and vanilla; add butter.
  • Sift together Sweet ground chocolate, flour, salt and baking powder.
  • Stir into egg mixture.
  • Add nuts and/or chocolate chips.
  • Spread into 8" or 9" square baking pan.
  • Bake 20-30 minutes.
  • For chewy brownies use 8" pan and less baking time.
  • For cake like brownies use 9" pan and more baking time.
  • Cut into squares.

3/4 cup sugar
1 teaspoon vanilla
1/2 cup butter, melted
3/4 cup Ghirardelli sweet ground chocolate and cocoa
2/3 cup flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chopped walnuts
1/3 cup ghirardelli milk chocolate chips

Steps:

  • Grease a 8x8 inch baking pan and set aside.
  • Preheat oven to 400 degrees.
  • In a medium bowl stir together the eggs, sugar and vanilla.
  • Mix well.
  • Add butter mixing to incorporate.
  • Sift the ground chocolate with the flour, baking powder and salt.
  • Stir into the egg mixture and add the walnuts.
  • Spread into the prepared baking pan.
  • Bake for 20 minutes or until a toothpick inserted in center comes out clean.

1 1/2 cups sugar

1/3 cup light corn syrup
3 tablespoons water
1/3 cup heavy whipping cream
1 1/2 cups pecans, chopped

Steps:

  • Brownies: Preheat oven to 350ºF. Using a spoon, stir eggs with 3/4-cup sugar and 1 teaspoon vanilla; add butter. Sift ground chocolate with flour, baking powder, and salt. Stir into egg mixture; add nuts. Stir in chips. Spread into greased 8" or 9" square pan. Bake 20 to 30 minutes. For extra chewy brownies, use 8" pan and less baking time. For cake-like brownies, use 9" pan and longer baking time. Cut into squares.
  • Caramel Pecan Topping: Once brownie is baked and cooled, in a 3-quart saucepan, bring 3/4-cup sugar, corn syrup, water, and a pinch of salt to a boil until it turns a golden caramel. Remove pan from heat, and slowly add cream and 1 teaspoon vanilla. Quickly stir in pecans, and pour over brownie layer. Cool on rack. Chill brownies, covered, until caramel is firm (2 hours).

4 ounces unsalted butter
1 cup granulated white sugar
1 large egg
4 ounces Ghirardelli 100% Cacao Unsweetened Chocolate Bar
½ cup all-purpose flour
4 each large egg yolks
⅓ cup granulated white sugar
⅓ cup firmly packed dark brown sugar
¾ cup evaporated milk
1 ½ tablespoons cornstarch
1 teaspoon vanilla extract
1 ½ cups heavy cream
1 cup chopped pecans, toasted
1 cup good quality store bought caramel sauce

Steps:

  • To make the brownies, spray an 8-inch square pan with nonstick spray and coat with flour. Preheat the oven to 350 degrees F.
  • Melt the chocolate and the butter together over a double boiler. Whisk until smooth.
  • Whisk the sugar and egg together in a bowl. Stir the chocolate and butter into the sugar mixture. Stir in the flour. Spread in the prepared pan.
  • Bake for 15 minutes. Cool, remove from the pan and cut into 1/2 inch squares.
  • To make the parfait, whisk together the egg yolks and the sugars. Whisk in the evaporated milk and then the cornstarch. Cook over medium heat, stirring constantly, with a heat resistant rubber spatula, until thick, about 5 minutes. (If the mixture gets lumpy at anytime during the cooking process, briefly switch to a whisk and whisk until smooth.) Place the mixture in a clean bowl and place plastic wrap directly on the surface. Refrigerate until cold.
  • Whip the cream until soft peaks form. Fold the cream into the cooled mixture.
  • To assemble the parfaits, in the bottom of martini, wine or any clear glass with approximately a 3/4 cup capacity, put about 4 pieces of brownies, about 2 teaspoons caramel sauce, and 2 teaspoons pecans. Top with about 3 tablespoons parfait mixture. Repeat layering with 2 more layers of brownies, caramel sauce and pecans and 1 more layer of parfait, ending with a layer of the brownies, pecans and caramel.
  • Cover with plastic wrap. Refrigerate at least 30 minutes or up to overnight.

I get requests every year for these Brownies at Xmas. Ghirardelli knocked Brownies out of the park with this recipe! Instead of using the double boiler method, I use my microwave to melt the chocolate and butter.

4 ounces unsweetened chocolate squares
16 tablespoons unsalted butter
3 eggs
2 cups sugar
1 teaspoon vanilla
1/2 teaspoon peppermint extract
1/4 teaspoon salt
1 cup flour
12 Ghirardelli Dark Chocolate with Mint Filling Squares
1/4 cup candy cane, crushed

Steps:

  • Heat oven to 350 degrees.
  • Spray 9" square pan with cooking spray; dust with flour tapping out excess. In double boiler over hot water, melt chocolate and butter. Cool to room temperature.
  • In large bowl with electric mixer or whisk, beat eggs, sugar, vanilla, peppermint extract and salt until combined. Beat in chocolate mixture; gently stir in flour. Pour batter into prepared pan.
  • Bake about 45 minutes or until knife inserted into brownies comes out clean. Arrange mint squares on top in one layer; place brownies in overn 1 minute.
  • Spread melted mint squares with spatula to frost brownies evenly; sprinkle with crushed candy canes. Cool completely and cut into 16 squares.
