2 Papaya (Peeled, seeded, cut into 1/2 chunks)
2 Scallions (fine chop)
3 Garlic Cloves (fine chop)
1 Shallot (fine chop)
2 Limes (for fresh lime juice)
1 pinch Kosher salt
Black pepper (to taste)
3 tbsp Cilantro (fine chop)

Steps:

  • Squeeze lime juice into a small bowl. then, chop up the cilantro, scallions, shallot, garlic. Add any additional aromatics, herbs, or seasoning that suit your taste. Add them to the lime juice and stir lightly.
  • Add Papaya to the lime juice mixture, gently stir while adding salt and pepper to taste.

Steps:

  • For a thicker sauce, chop cilantro and garlic and place in a blender. Puree with 1/4 cup water and the oil. Add lime juice, cayenne pepper, coriander and salt.
  • For a thinner sauce, chop cilantro and garlic very finely. Then stir in 1/4 cup water, oil, lime juice, cayenne pepper, coriander and salt.
  • The emulsified version can be served as a dip with pita bread. Serve the thinner version with fried halloumi or other fried cheese, vegetable fritters or with a salad.

Steps:

  • Combine vinegar, honey, and garlic in medium bowl.
  • Add papaya, chilies, onions, cilantro, and cayenne pepper; toss and chill.
  • Serve with corn chips.

1/2 cup coarsely chopped fresh cilantro

1/2 cup minced red, yellow, or green bell pepper or a combination
1 tablespoon extra virgin olive oil
2 tablespoons fresh lime juice
Salt and black pepper to taste
1 jalapeño or other fresh chile, stemmed, seeded, and minced, or hot red pepper flakes to taste
1/4 cup or more chopped fresh cilantro leaves

Steps:

  • Combine all the ingredients. Let sit for about 5 minutes, then taste and adjust the seasoning.
