Crispy, gluten-free graham crackers that taste just like the real thing! Vegan, gluten-free, naturally sweetened, and made in 1 bowl. Perfect for s'mores and beyond!

2 Tbsp coconut sugar ((or sub organic cane sugar))
1/2 tsp baking soda
1/4 tsp sea salt
1/4 tsp ground cinnamon
1/4 cup maple syrup
1 Tbsp molasses ((we used blackstrap molasses))
2 ½ Tbsp melted coconut oil
1 ¼ cup oat flour ((ground from gluten-free oats // see notes for substitution ideas))
1/4 cup arrowroot starch ((we think cornstarch would also work, and maybe also tapioca starch))
1 ½ tsp ground flax seeds ((also called flaxseed meal))

Steps:

  • Preheat the oven to 350 F (176 C) and line a large baking sheet with parchment paper.
  • In a medium mixing bowl, whisk together the coconut sugar, baking soda, salt, cinnamon, maple syrup, molasses, and melted coconut oil until well combined and smooth.
  • Add in the oat flour, arrowroot starch, and ground flax seeds and mix with a wooden spoon until the flour is completely incorporated. Your dough should not feel too tacky (sticking to your hands) or too dry (crumbly), but should hold its form. If the dough appears too dry, it likely just needs more mixing. If it feels sticky, it needs more oat flour.
  • Place a sheet of parchment paper on a large cutting board or countertop. Place dough in the center and then place another sheet of parchment paper on top of the dough. Working from the center out, roll the dough into a large rectangle (~10 x 12 inches) about 1/16-inch thick. Rolling to this thickness makes these crackers crispy (our preferred texture) rather than soft. If you have any difficulty rolling the dough, place it in the fridge to chill for 10-20 minutes and then try again.
  • Use a pizza cutter or knife to cut the dough into 2-inch x 3-inch rectangles (keep in mind they will expand slightly during baking). Then use a metal spatula lightly floured with oat flour to transfer to a baking sheet. If you have a hard time transferring or handling, pop in the refrigerator to chill for 5-10 minutes. Space crackers ~1 inch apart to allow for spreading.
  • Continue rolling out and cutting remaining dough until you have used it all up. Prick each graham cracker twice with a fork. Recipe as written makes ~15 crackers (will vary based on how thinly they are rolled and whether modifying batch size).
  • Bake for 10-14 minutes or until slightly firm and darker in color. Watch closely near the end to avoid burning.
  • Let cool for 5-10 minutes on the baking sheet, then gently transfer to a cooling rack. Enjoy plain, make s'mores, or try our graham cracker crust!
  • Once completely cooled, crackers can be stored in an airtight container for up to 2-3 days at room temperature, 7-10 days in the fridge, or 1-2 months in the freezer. Dough can also be frozen for up to 1 month and rolled/baked after defrosting in the fridge overnight.

If you are vegan or have a dairy allergy, the dairy can be replaced with dairy-free alternatives and the honey can be replaced with another liquid sweetener; I like golden syrup.

1 1/2 cups brown rice flour (7 1/2 ounces/ 212 grams)
1/2 cup cornstarch (2 ounces/ 57 grams)
1/3 cup dark brown sugar (2 2/3 ounces/ 75 grams)
1 teaspoon baking powder
1/2 teaspoon salt
5 tablespoons butter or dairy-free shortening, cold (2 1/2 ounces/ 70 grams)
6 tablespoons milk, traditional or dairy-free (3 1/4 ounces/ 90 grams)
3 tablespoons honey (1 ounces/ 30 grams)

Steps:

  • Preheat oven to 350°F. In the bowl of a food processor, combine brown rice flour, cornstarch, dark brown sugar, baking powder, and salt. Pulse to combine. (If you don't have a food processor, whisk dry ingredients together in a medium mixing bowl.)
  • Add the butter. Pulse until flour mixture is coarse. No large pieces of butter should remain. (Or cut cold butter into flour mixture with a pastry cutter, two knives or by rubbing the butter between your fingers.)
  • Add milk and honey. Pulse until dough forms. (Or stir using a wooden spoon.)
  • Turn dough out onto a lightly rice floured piece of 12x16 parchment paper. Pat dough into a rectangle. Dust the top of the dough lightly with rice flour.
  • Place another piece of 12-by-16-inch parchment paper on top of the dough. Roll dough out until it covers all of the paper. Dough rectangle will be about 1/8 inch thick.
  • Carefully remove top piece of parchment paper. Transfer dough, with bottom parchment paper, to a 12 x 18 baking pan.
  • Using a pizza wheel, score the dough into rectangles. (The rectangles should be 6 x 2 3/4 inches large for "standard" graham crackers and 3 by 2 3/4 for a "s'more" size graham cracker.) The graham crackers will break apart after baking. Do not worry if the dough seems to still be touching after scoring with the pizza wheel.
  • Prick dough all over with a fork.
  • Chill dough for 10 minutes. Bake for 15 minutes or until evenly brown.
  • Remove graham crackers from the pan and place on a wire rack to cool. (I slide the parchment, with the crackers, directly onto the cooling rack.) Allow crackers to cool completely. Break along scored lines.

Graham flour is a coarse-grained whole-wheat meal and can be found in specialty and health food stores. It makes a graham cracker with a lovely texture and subtle nutty flavor, but regular whole-wheat flour makes a decent substitute if you can't find it.

24 tablespoons (3 sticks) unsalted butter, at room temperature
1 cup packed dark brown sugar
1/2 cup molasses
2 cups whole-wheat graham flour

1 cup Dutch-process cocoa powder

Steps:

  • In a large bowl, whisk together the graham flour, all-purpose flour, cocoa powder, cinnamon, baking powder, baking soda and salt. In a large bowl using an electric mixer, beat the butter and brown sugar until combined, about 2 minutes. Add the molasses and beat to combine. Add the flour mixture to the butter mixture and beat until well combined. Divide the dough in 2, wrap each half in plastic wrap and flatten into a disc. Chill until firm enough to roll, at least 1 hour.
  • Preheat the oven to 350 degrees F.
  • On a floured piece of parchment and using a floured rolling pin, roll one of the discs to an even 1/8-inch-thick rectangle. Trim the edges and cut the dough into about twelve 2-inch-by-4-inch rectangles, but don't separate the cookies. Score each rectangle in half crosswise, but don't cut all the way through. Using a fork, make 3 indentations in each square. Transfer the parchment with the rolled dough to a baking sheet. Freeze for 10 minutes.
  • Bake until the edges have darkened slightly and the dough is set and dry, 15 to 18 minutes. While the cookies are still warm, use a knife to cut them apart. Let the cookies cool completely on the sheet on a rack. Repeat with the remaining dough, rerolling the scraps once.

½ cup shortening
¾ cup packed brown sugar
1 teaspoon vanilla extract
2 cups whole wheat flour
1 cup all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
¼ cup milk

Steps:

  • In a medium bowl, cream together the shortening and brown sugar. Stir in the vanilla. Combine the whole wheat flour, all purpose flour, baking powder, baking soda and salt, stir into the creamed mixture alternately with the milk. Cover and chill dough until firm.
  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. On a lightly floured surface, roll the dough out to 1/8 inch thickness. Cut into rectangles. Place 1/2 inch apart onto the prepared cookie sheets.
  • Bake for 10 to 12 minutes in the preheated oven, or until crisp. Edges will be golden brown. Remove from baking sheet to cool on wire racks.

  • In a medium mixing bowl, combine the graham cracker crumbs and sugar together with a fork. Pour in the melted butter and salt and mix well with a fork until the crumbs are evenly moistened. The crumbs should be sandy, but a clump will just hold together when pinched. Note: I've tested this recipe with three different brands of gluten-free graham crackers, but your graham crackers might be slightly different. If a clump will not hold together because your crumbs are too dry, add 1/2 tablespoon more melted butter. If your graham crackers are too wet, add 1/4 cup more graham crackers crumbs.
  • Dump the buttery graham crackers into a 9-inch pie dish, 9-inch tart pan, 9 or 10-inch springform pan, or 8x8 baking dish.
  • Use a flat-bottomed measuring cup to firmly pack the crumbs down into a layer on the bottom of the baking dish or pan, being sure to save some of the crumbs along the sides. If you're making a graham cracker crust without sides, such as using an 8x8 baking dish for cheesecake bars, skip the sides and pack all the crumbs into the bottom.
