Even as a young girl, I was always going through recipe books in search of something new to make. That's how I came across these brownies, a favorite for our family reunions and other get-togethers. They capture the rich flavor of a favorite cake with a few easy steps. Broiling the sweet coconut topping makes it goey and good. -Karen Grimes, Stephens City, Virginia

1/2 cup butter, cubed
4 ounces German sweet chocolate, coarsely chopped
2 large eggs, lightly beaten
1/2 cup sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
TOPPING:
2 tablespoons butter, melted
1/2 cup packed brown sugar
1 cup sweetened shredded coconut
1/2 cup chopped pecans
2 tablespoons corn syrup
2 tablespoons 2% milk

Steps:

  • Preheat oven to 350°. In a microwave, melt butter and chocolate; stir until smooth. Cool slightly. In a large bowl, beat eggs and sugar. Stir in vanilla and chocolate mixture. Combine flour, baking powder and salt; gradually add to chocolate mixture. , Pour into a greased 9-in. square baking pan. Bake 18-22 minutes or until a toothpick inserted in the center comes out clean (do not overbake). , For topping, combine butter and brown sugar in a large bowl. Add coconut, pecans, corn syrup and milk; mix well. Drop by teaspoonfuls onto warm brownies; spread evenly. , Broil 6 in. from heat 2-4 minutes or until top is browned and bubbly. Cool on a wire rack. Cut into bars.

1/3 cup unsweetened cocoa powder
1/2 cup oil ((vegetable or canola oil))
1/2 cup butter (, softened)
2 cups granulated sugar
4 large eggs
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon salt
1/4 cup light brown sugar
1/4 cup granulated sugar
1/4 cup butter
2 egg yolks
1/3 cup evaporated milk
2 teaspoons vanilla extract
1/2 cup chopped pecans
1/2 cup shredded sweetened coconut

Steps:

  • Preheat oven to 350 degrees F. Grease a 9x13'' pan with non-stick cooking spray.
  • In a large mixing bowl, pour oil over cocoa powder and mix. Add softened butter and mix until smooth. Add sugar and mix for 1 minute.
  • Add eggs, one at a time, mixing after each addition. Add vanilla and mix. Add flour and salt and stir to combine.
  • Pour batter into prepared pan. Bake for 30-40 minutes or until a toothpick inserted into the center comes out clean.
  • In a medium saucepan add brown sugar, granulated sugar, butter, egg yolks, and evaporated milk. Stir to combine and bring the mixture to a low boil over medium heat. Stir constantly for several minutes until the mixture begins to thicken.
  • Remove from heat and stir in vanilla, nuts and coconut. Allow to cool completely.
  • Once the brownies have cooled, cover the brownies with a layer of German chocolate frosting.

1/2 cup butter
4 ounces sweet baking chocolate, chopped
1/2 cup sugar
1 teaspoon vanilla
2 eggs, beaten well
1 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons butter, melted
1/2 cup brown sugar
2 tablespoons corn syrup
2 tablespoons milk
1 cup flaked coconut
1/2 cup finely chopped pecans or 1/2 cup walnuts

Steps:

  • Preheat oven to 325.
  • Melt 1/2 cup butter and add 4 oz chopped chocolate to melt over low heat.
  • Cool 10 minutes or more.
  • Add sugar and vanilla.
  • Add beaten eggs and beat well.
  • Whisk together the flour, baking powder, salt and add to the mixture.
  • Mis well and spread in 8 inch or 9 inch square glass pan that has been buttered.
  • Bake at 325 for 18-23 minutes until a knife inserted is clean when removed.
  • Remove and set the oven to broil.
  • Combine the 2 T. of melted butter with 1/2 cup of brown sugar, the 2 T. of corn syrup, the 2 T. of milk.
  • Stir in the 1 cup of flaked coconut and 1/2 cup finely chopped nuts.
  • Drop the misture by teaspoonsful evenly over the warm brownies.
  • Spread gently.
  • Broil 4 inches from the heat for 1-2 minutes or until bubbly.
  • Cool 1 hour.

3 eggs, beaten
1 container Betty Crocker™ Rich & Creamy coconut pecan frosting
1 cup semisweet chocolate chips (6 oz)
1/2 cup chopped walnuts

Steps:

  • Heat oven to 350°F. In 3-quart saucepan, melt 2 cups chocolate chips and the butter over low heat, stirring constantly; remove from heat. Stir in flour, sugar, vanilla, baking powder, salt and eggs. Spread batter in ungreased 13x9-inch pan.
  • Bake 27 to 34 minutes or until center is set. Cool completely, about 1 hour.

Made this for my office and for Honolulu's Finest...they both loved it. Take only a small piece if you're on a diet or diabetic; it's very rich. Tried this in a 9x13 pan ... took an extra five minutes to bake.

1 1/4 cups unsweetened cocoa powder
2 cups sugar
2 cups vegetable shortening
1/2 cup light corn syrup
1 1/2 teaspoons pure vanilla extract

1 1/2 cups half-and-half
1 cup sugar
1/2 cup unsalted butter, room temperature
6 large egg yolks
2 teaspoons pure vanilla extract
24 ounces sweetened flaked coconut
2 cups pecans, chopped

Steps:

  • BROWNIES: Preheat oven to 350.
  • Butter and flour a 17x11-1/2x1 baking sheet.
  • Whisk flour and cocoa in a medium bowl; set aside.
  • Using a mixer, beat sugar, shortening, corn syrup, vanilla, and salt in a large bowl.
  • Beat in eggs.
  • Add flour mixture and beat just enough to blend. Spread to edges in prepared baking sheet.
  • Bake until tester inserted in center comes out with a few moist crumbs attached (about 23 minutes).
  • Cool completely on a rack.
  • TOPPING: In a large saucepan over medium heat, stir together the half-n-half, sugar, butter, yolks, and vanilla until mixture thickens (about 180 degrees). Stir constantly for about 15 minutes. Do not allow to boil.
  • Fold coconut and pecans into topping. Chill one hour then spread over brownies.

  • Preheat oven to 350°F.
  • Mix cake mix with 1/3 cup Pet milk, oleo and chopped nuts.
  • Press half into a 9 X 13 inch ungreased pan.
  • Bake for 6 minutes using temperature on cake box.
  • Mix and melt caramels with 1/3 cup Pet milk;.
  • Pour caramel mixture on cake and sprinkle chocolate chips over this.
  • Crumble rest of cake mixture and bake for 20-25 minutes.

I made this recipe on accident when making German Chocolate bars. The original recipe calls for German Chocolate Cake mix, but I had forgotten when I got to the store and grabbed brownie mix instead. Here is my take on it.

1 (20 ounce) envelope brownie mix (use your favorite box mix)
15 ounces coconut pecan frosting
1 cup chocolate chips
1/3 cup vegetable oil
2 tablespoons water
1 egg

Steps:

  • Preheat oven to 350.
  • In a mixing bowl mix, brownie mix, vegetable oil, water and egg.
  • Grease a 9"x9" baking dish with butter or cooking spray.
  • Pour half the brownie mix into the baking dish and bake for 10 minutes.
  • Remove from oven and sprinkle 1/2 the chocolate chips over the brownie layer.
  • With a teaspoon, drop spoonfuls of frosting over chocolate chip layer.
  • Pour remaining brownie mix over the top and sprinkle the remaining half of the chocolate chips.
  • Return to oven and bake for 30 minutes or until toothpick inserted in center comes out clean.
  • Let cool and enjoy.
