1 can (10-3/4 oz.) condensed cream of potato soup
1-1/2 cups BREAKSTONE'S or KNUDSEN Sour Cream
3 Tbsp. HEINZ Distilled White Vinegar
1 pkg. (32 oz.) ORE-IDA Diced Hash Brown Potatoes, thawed
1 pkg. (8 oz.) KRAFT Shredded Swiss Cheese
8 slices cooked OSCAR MAYER Bacon, crumbled, divided
6 green onions, sliced, divided
2 cups french-fried onions

Steps:

  • Heat oven to 350ºF.
  • Mix soup, sour cream and vinegar in large bowl until blended. Add hash browns, cheese, half the bacon and 1/2 cup green onions; mix lightly.
  • Spoon into 13x9-inch baking dish sprayed with cooking spray.
  • Bake 50 min. or until heated through, topping with French fried onions after 20 min. Sprinkle with remaining bacon and green onions.

The is a German casserole recipe made vegetarian given to me by my good German friend, Nicola Wieland. I'm thankful she took the time to translate this recipe for me. Enjoy!

14 ounces sauerkraut, canned
800 g potatoes
1 (12 1/2 ounce) can vegetarian sausages (you can also use a larger can if you want more sausage in the casserole)
1 large onion, chopped
1 1/2 tablespoons canola oil
1 teaspoon cumin
salt, to taste
3 1/2 ounces sour cream

Steps:

  • Boil the potatoes with the skins on them until they are cooked, but not too soft (maybe about 10-15 minutes).
  • Skin the potatoes and cut in slices.
  • Cut the sausages in long slices.
  • In a pan heat the oil and cook the onion a few minutes, then add sauerkraut and seasoning. Saute for a couple more minutes then set aside.
  • Spray 8x8 cooking dish with cooking spray and lay in alternating layers the potatoes, then sausages, then sourkraut.
  • In a small bowl whip the sour cream with salt according to your taste and then pour/spread over the top.
  • Bake it in the oven at medium heat for around a 1/2 hour.

1/2 lb Velveeta cheese
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons half-and-half cream
2 -4 green onions, sliced
3/4 cup Miracle Whip
1/4 cup sour cream (2 oz)
3/4 teaspoon salt (or to taste)
3/4 teaspoon black pepper (or to taste)

Steps:

  • Preheat oven to 350°F.
  • Melt cheese and butter together over low heat with cream; then add half of bacon and onions.
  • Add all Miracle Whip and sour cream.
  • Gently fold in potatoes and spoon into a greased casserole dish.
  • Top with remaining bacon, onions and spices (spices may be mixed in with the cheese if desired).
  • Bake for about 55 minutes.

8 hard-boiled large eggs, chopped

  • Place potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain., In a skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, reserving 1 tablespoon drippings., In a large bowl, gently toss the potatoes, bacon, eggs, onion, salt and pepper. 4 cups cubed potatoes
6 slices bacon
1 cup diced celery
3 green onions, diced
½ cup mayonnaise
¼ cup vinegar
2 teaspoons white sugar

1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

4 yellow potatoes, we used yukon gold potatoes
2 eggs
1 teaspoon salt
¼ teaspoon nutmeg
3 cups flour
1 tablespoon butter
½ cup bacon, diced
1 cup chicken broth
½ cup white wine
1 bunch green onion, chopped
water, to boil
salt, for boiling water

Steps:

  • Peel potatoes. Cut them into 1-inch (2 ½ cm) slices and boil them in salted water for 25 minutes or until they are tender.
  • After boiling, take them out and let them cool for 10 minutes, allowing them to steam to remove excess moisture.
  • Mash potatoes until no lumps remain.
  • Add eggs, salt, nutmeg, and 2 cups (250 grams) flour, and knead into a dough. If dough is too sticky, add more flour until it holds its shape but is still smooth.
  • Put a piece of dough on a floured surface and roll into a 1-inch (2.5 cm) thick log.
  • Cut in 1-inch (2.5 cm) pieces and roll them carefully in your floured palm for a noodle shape. Repeat with the remainder of the dough.
  • Boil noodles in a large pot with salted water. Stir carefully once or twice to make sure noodles don't stick to bottom of the pan. Once they float on the surface, they are cooked and ready to be taken out.
  • In a medium-sized pan, melt the butter.
  • Add noodles and bacon and fry until both are golden brown on all sides.
  • Add chicken broth and white wine and let reduce for a few minutes until sauce becomes slightly creamy.
  • Top with green onions before serving.
  • Enjoy!

1 (28 ounce) bag o'brien frozen potatoes, with peppers and onions
1 (14 ounce) can sauerkraut, drained and rinsed
1 (10 3/4 ounce) can condensed cream of potato soup
1 1/3 cups half-and-half
paprika
1 lb kielbasa (I use turkey lielbasa for less fat.) or 1 lb Polish sausage, cut into 6 pieces (I use turkey lielbasa for less fat.)

Steps:

  • Heat oven to 375°F Spray 9X13 glass baking dish with cooking spray. In baking dish mix potatoes and sauerkraut.
  • In medium bowl, mix soup and half-and-half. Stir soup mixture into potato mixture; mix well. Sprinkle with paprika.
  • Bake 20 minutes. Arrange sausage pieces over potato mixture, pressing lightly into mixture. Bake 25 to 30 minutes longer.

12 medium red potatoes (about 3 pounds)
8 bacon strips
2 medium onions, chopped
3/4 cup packed brown sugar
2/3 cup water, divided
1/3 cup white vinegar
1/3 cup sweet pickle juice
2 teaspoons dried parsley flakes
1 teaspoon salt
1/2 to 3/4 teaspoon celery seed
4-1/2 teaspoons all-purpose flour

Steps:

  • In a saucepan, cook potatoes until just tender; drain. Peel and slice into an ungreased 2-qt. baking dish; set aside. , In a skillet, cook bacon until crisp; drain, reserving 2 tablespoons drippings. Crumble bacon and set aside. Saute onions in drippings until tender. Stir in the brown sugar, 1/2 cup water, vinegar, pickle juice, parsley, salt and celery seed.
