POTATO AND SAUERKRAUT SOUP WITH KIELBASA



Potato and Sauerkraut Soup with Kielbasa image

To ensure a balanced flavor, rinse the sauerkraut before adding it to this soup. This tones down the intense sharpness of the sauerkraut and allows the smokey kielbasa and other aromatics to shine through.

3 tablespoons unsalted butter
14 ounces kielbasa, diced
1 onion, diced
2 stalks celery, diced, plus 1/4 cup celery leaves, roughly chopped
1 1/4 pounds russet potatoes, peeled and diced
1 1/2 teaspoons caraway seeds
1 14.5-ounce can sauerkraut, drained and rinsed
Kosher salt and freshly ground pepper
1/2 cup heavy cream
2 tablespoons spicy brown mustard
1/4 cup fresh dill, roughly chopped

Steps:

  • Melt the butter in a large wide pot or Dutch oven over medium heat. Add the kielbasa and cook, stirring occasionally, until golden and crisp, 3 to 5 minutes. Remove with a slotted spoon to a plate, leaving the drippings in the pot.
  • Add the onion, diced celery and potatoes to the pot and cook, scraping up any browned bits with a wooden spoon, until the onion and celery are softened, about 5 minutes. Add the caraway seeds and sauerkraut and cook, scraping up any remaining browned bits, 1 to 2 more minutes. Add 6 cups water, 1/2 teaspoon salt and a few grinds of pepper. Cover and bring to a boil. Uncover, reduce the heat to a rapid simmer and cook until the potatoes are tender, 15 to 20 minutes.
  • Stir together the heavy cream and mustard in a small bowl. Once the potatoes are tender, reduce the heat to medium low and whisk the heavy cream mixture into the soup. Return the kielbasa to the pot. Increase the heat to medium and simmer until thickened slightly, 3 to 5 minutes. Season with salt and pepper.
  • Divide the soup among bowls. Top with the chopped celery leaves and dill.

4 tablespoons butter
1 medium onion, finely diced
1/4 cup flour
1 1/2 cups chicken broth
2 1/2 cups milk
1 - 14 ounce Polska Kielbasa, halved and sliced
1 1/2 cups cooked diced potatoes
1 cup sauerkraut
1/2 teaspoon dried parsley
1 cup shredded cheddar cheese
black pepper

Steps:

  • In a large saucepan, melt butter over medium heat.
  • Add onions and saute for about five minutes, until tender.
  • Add flour, stirring until completely combined. Cook for one minute, then add the chicken broth and milk.
  • Turn heat to medium high, then cook stirring often until broth begins to thicken.
  • Reduce heat to medium then add kielbasa, diced potatoes, sauerkraut and parsley. Simmer for five minutes, then add shredded cheddar.
  • Stir to combine and remove from heat. Serve sprinkled with black pepper.

2 (14 1/2 ounce) cans beef broth
1/2 cup water
1 large potato, peeled and diced
2 carrots, peeled and thinly sliced
2 stalks celery, thinly sliced
1/2 cup diced yellow onion
16 ounces kielbasa, thinly sliced
2 (11 1/2 ounce) cans campbell's bean with bacon soup
black pepper, season to taste

Steps:

  • In a kettle or Dutch oven, add broth, water and vegetables.
  • Bring to a boil; reduce heat, and simmer for 10 minutes.
  • Add both cans of soup, and the sliced kielbasa.
  • Season with black pepper.
  • Heat through and serve.
  • Note: When adding carrots, I added 1 cup of sliced baby carrots, and I substituted Hillshire Farm Smoked Sausage for the kielbasa.

Like warm German Potato Salad with Kielbasa - a hearty one-skillet meal, quick to fix. It's a favorite on crisp autumn days.

8 medium potatoes
8 -10 slices thick-cut bacon
2 medium yellow onions
1 1/2 lbs kielbasa or 1 1/2 lbs smoked sausage
1/3 cup chicken stock
2/3 cup apple cider vinegar
1/2 teaspoon German mustard
1 teaspoon kosher salt (or to taste)
1 teaspoon brown sugar (or to taste)
1/4 teaspoon paprika
1 teaspoon chopped fresh parsley, for garnish

Steps:

  • Peel potatoes (if desired) and place in lightly salted water to cover in a saucepan.
  • Cook at a medium boil till barely tender, 15 to 18 minutes.
  • Meanwhile, in a large heavy skillet, cook the bacon strips to desired crispness and remove bacon to absorbent paper.
  • You should have at least 3 Tbs. of drippings in the skillet (add a little oil or more bacon fat, if needed).
  • Saute the onions in the dripping over medium-low heat until golden.
  • Heat the remaining ingredients to boiling (a 2-cup glass measuring cup in the microwave is fine).
  • Drain and thickly slice the potatoes while still warm. Add to the onions in the skillet and turn gently to coat with drippings.
  • Reduce heat to low and pour the hot dressing over all and again, turn gently to coat evenly.
  • Cut sausage into 1-2 inch slices and briefly sauté in a bit oil (in the same pot the potatoes were cooked in; saves a pan to clean), till browned slightly.
  • Add sausage slices to skillet and turn gently to coat evenly.
  • Chop bacon to desired size (not too small) and add to skillet.
  • Sprinkle with fresh parsley and serve hot or warm.

1 can (15-1/2 ounces) great northern beans, rinsed and drained
1 can (14-1/2 ounces) stewed tomatoes, cut up

Steps:

1 1/2 lbs lean fresh kielbasa or 1 1/2 lbs smoked kielbasa, sliced
1 cup chopped onion
2 cups chopped celery
4 cups shredded cabbage
2 cups sliced carrots
1 bay leaf
1/2 teaspoon dried thyme
2 tablespoons white vinegar
3 cups beef broth
2 cups water
3 cups peeled and cubed potatoes
salt and pepper
chopped fresh dill (optional)

Steps:

  • Melt butter in a large skillet, add sausage, onions and celery, and cook over medium heat until sausage are lightly browned.
  • Pour mixture into a soup pot and add remaining ingredients except for potatoes.
  • Bring to a boil, reduce heat, cover and simmer for 1 hour.
  • Add potatoes and cook until potatoes are tender.
  • Season with salt and pepper and garnish with dill, if desired.

My granddaughter Vivian is addicted to this soup. The original soup calls for "Bratwurst" or "Knackwurst" but I usually use Polish Kielbasa instead.

1 lb fully cooked bratwurst, knackwurst or kielbasa, sliced into into 1/2 inch slices
3-4 large potatoes, peeled and cubed
1 medium onion, chopped
1 small head cabbage, shredded
3-4 medium carrots, sliced
3-4 celery stalks, sliced
kosher salt and freshly ground black pepper to taste
3 c milk
3 Tbsp all purpose flour
1 c swiss cheee, shredded
fresh snipped parsley

Steps:

  • 1. In a Dutch oven, combine sausage, potatoes, onion, carrots, celery, salt and pepper. Add 2-3 cups water (I sometimes use chicken broth). Bring to a boil and reduce heat. Cover and simmer for 20 minutes or until potatoes are nearly tender.
  • 2. Stir in cabbage and cook for 10 minutes longer or until vegetables are tender. Stir in 2 1/2 cups milk.
  • 3. Stir flour and remaining milk together and then add to soup. Cook on low until thick and bubbly. Stir in cheese until melted. Garnish with fresh parsley.
