GERMAN CHOCOLATE BROWNIES
This from scratch German Chocolate Brownie recipe is so easy and the perfect mix of chocolate brownie, coconut, chopped pecans, and caramel goodness.

Steps:
- Preheat oven to 350 degrees F. Grease a 9x13'' pan with non-stick cooking spray.
- In a large mixing bowl, pour oil over cocoa powder and mix. Add softened butter and mix until smooth. Add sugar and mix for 1 minute.
- Add eggs, one at a time, mixing after each addition. Add vanilla and mix. Add flour and salt and stir to combine.
- Pour batter into prepared pan. Bake for 30-40 minutes or until a toothpick inserted into the center comes out clean.
- In a medium saucepan add brown sugar, granulated sugar, butter, egg yolks, and evaporated milk. Stir to combine and bring the mixture to a low boil over medium heat. Stir constantly for several minutes until the mixture begins to thicken.
- Remove from heat and stir in vanilla, nuts and coconut. Allow to cool completely.
- Once the brownies have cooled, cover the brownies with a layer of German chocolate frosting.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C). Butter an 8- or 9-inch square glass baking pan.
- Mix flour, baking powder, and salt together in a bowl.
- Melt butter in a saucepan over low heat. Add chocolate and stir until melted. Remove from the heat and cool for 10 minutes or more.
- Combine cooled chocolate mixture, sugar, and vanilla extract in a bowl. Add eggs; mix well. Add flour mixture and stir until well combined. Spread batter into the prepared baking pan.
- Bake in the preheated oven until a knife inserted into the center comes out clean, 20 to 30 minutes. Remove from the oven and set the oven to broil.
- Combine brown sugar, melted butter, corn syrup, and milk for topping in a bowl. Stir in coconut and pecans. Drop and gently spread mixture evenly over the warm brownies.
- Broil 4 inches from the heat until topping is bubbly, 1 to 2 minutes. Cool for 1 hour before slicing and serving.

I made this recipe on accident when making German Chocolate bars. The original recipe calls for German Chocolate Cake mix, but I had forgotten when I got to the store and grabbed brownie mix instead. Here is my take on it.

Steps:
- Preheat oven to 350.
- In a mixing bowl mix, brownie mix, vegetable oil, water and egg.
- Grease a 9"x9" baking dish with butter or cooking spray.
- Pour half the brownie mix into the baking dish and bake for 10 minutes.
- Remove from oven and sprinkle 1/2 the chocolate chips over the brownie layer.
- With a teaspoon, drop spoonfuls of frosting over chocolate chip layer.
- Pour remaining brownie mix over the top and sprinkle the remaining half of the chocolate chips.
- Return to oven and bake for 30 minutes or until toothpick inserted in center comes out clean.
- Let cool and enjoy.

- In a microwave safe bowl, combine butter and sugar. Microwave on high until butter has melted. Stir to combine. Stir in cocoa, salt, baking powder and vanilla. Whisk in the eggs one at a time until smooth. Stir in flour just until combined. Spoon brownie batter by tablespoon into each mini muffin tin cavity. Bake for 13-15 minutes or until tops are set. Allow brownies to sit in pan until they are cool enough to touch. Using the back of a melon baller, teaspoon or your thumb, make an indentation into each brownie. Prepare filling.
- To prepare the filling: combine egg yolk, milk and brown sugar in a saucepan. Add butter in chunks and cook over medium heat stirring constantly until thick, about 10 minutes.
- Stir in vanilla, salt, coconut, pecans. Carefully place a teaspoon full of the filing into the center of each brownie.
