SOUTH WEST CHEESY CHILI DIP
This is one of my favorite dips for parties. It is a definite at my house for Super bowl. I've been making this for over 10 years. It is a hit at every party I throw.We all love cheese and chili in my home. This is a very simple recipe to make. You can also make this in the crock pot. Enjoy all!!!

Steps:
- 1. Get a 13x9 pan, or a 9x9 for deep dish dip. Spread the Re-fried beans on the bottom of the pan.
- 2. Soften cream cheese and spread on top of the re-fried beans.
- 3. spread chili on top of cream cheese
- 4. Spread salsa on top of chili,and top with shredded cheese.Bake in oven at 350 degree's until hot and cheese is melted. Should take 30-45 minutes.
- 5. Remove from oven and top with chopped green onion. Optional add ins -chopped Jalapeno pepper and black olives on the top of Mexican cheese. Serve with tortilla chips.

- In a small skillet, saute onion in oil until tender. Add garlic; cook 1 minute longer., Transfer to a 3-qt. slow cooker. Stir in the chili, salsa, cream cheese and olives. Cover and cook on low for 4 hours or until heated through, stirring occasionally. Stir before serving with tortilla chips.

Steps:
- Preheat oven to 350.
- Combine chili, cream cheese and chili powder with hand mixer.
- Add monterey jack and garlic, and stir until blended.
- Spread in baking dish and cook 20-25 minutes.
- Remove from oven.
- Top with tomato, green onion, olives and dollops of sour cream.
- Serve immediately with tortilla or corn chips.
SOUTHWESTERN CHILI
Steps:
- In a casserole cook the onions, peppers and garlic in the oil over moderate heat, stirring occasionally, for 5 minutes. Add the chili powder, cumin and oregano and cook, stirring, for 3 minutes. Add the tomato paste and cook, stirring, for 2 minutes more. Add the beef and cook, stirring occasionally, until no longer pink. Add the tomatoes, 1 cup of the broth, the vinegar and chocolate and bring the mixture to a boil, crushing the tomatoes with the back of a spoon. Simmer the chili, covered, for 1 hour, adding additional broth, if necessary. Add the kidney beans and simmer, uncovered, for 15 minutes more. Ladle into bowls and serve with rice and desired toppings.

- In an enameled cast-iron Dutch oven over medium heat, toast chiles 2-3 minutes (do not burn). Remove from heat; transfer to a small bowl. Add hot water to cover. Soak 30 minutes., Meanwhile, in the same pot, heat 2 tablespoons olive oil over medium heat. Brown beef in batches. Remove with a slotted spoon. Add onion and remaining oil to pot; cook and stir until onion is tender, about 5 minutes. Add garlic; cook 1 minute more. Remove from heat., Drain and split chiles, discarding stems and seeds. Pulse, covered, with salt, pepper, cumin and 2/3 cup water in a blender until pureed, adding water if needed (mixture should be a slightly runny paste)., Return beef to pot, and pot to stovetop. Add V8 juice, broth, chili mixture and remaining water. Bring to a boil. Reduce heat; simmer, uncovered, stirring occasionally, until thickened and meat is tender, 1-1/2 to 1-3/4 hours. If desired, top with jalapeno pepper slices.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large mixing bowl, combine Cheddar cheese, mayonnaise, half of the olives, jalapeno peppers, garlic and hot pepper sauce. Spread the mixture into a 9-inch pie pan.
