Healthier Peanut Butter Balls image

Make healthier peanut butter balls with only 5 simple ingredients: peanut butter, oats, dates, chocolate and coconut oil! No powdered sugar or butter needed. These peanut butter balls are dairy-free, gluten-free and vegan!

4-5 medjool dates (I used Natural Delights)
2 Tablespoons gluten-free old fashioned oats
½ cup natural roasted and salted peanut butter
½ cup chocolate chips (I used Enjoy Life chocolate chunks)
½ Tablespoon coconut oil

Steps:

  • Add dates to food processor or mini chopper and pulse until dates are finely chopped and form a sticky ball. Add in oats and pulse a few more times until combined. Add peanut butter and process until combined. If the mixture seems too oily, add another Tablespoon of oats.
  • Scoop out peanut butter dough by the tablespoon and roll into balls. Place balls on parchment paper. Place peanut butter balls in the freezer until firm (several hours or overnight). This step makes it easier to dip the balls into the chocolate.
  • A couple minutes before taking the balls out of the freezer, combine your chocolate chips with the coconut oil and melt the mixture. Use a double boiler or microwave in 30 second increments (stirring after every 30 seconds) until the chocolate is melted.
  • Dip chilled balls into the melted chocolate and roll until covered. Place back on parchment paper. Once all balls are covered, place back in freezer until hard. Store in freezer or fridge until ready to enjoy.

1-1/2 cups peanut butter
1/2 cup butter, softened
1 cup sugar
1 cup packed brown sugar
3 large eggs, room temperature
1 teaspoon vanilla extract
4-1/2 cups quick-cooking oats
2 teaspoons baking soda
1 cup miniature semisweet chocolate chips
1 cup M&M's miniature baking bits

Steps:

  • Preheat oven to 350°. In a large bowl, cream peanut butter, butter and sugars until blended. Beat in eggs and vanilla. In another bowl, whisk oats and baking soda; gradually beat into creamed mixture. Stir in chocolate chips and baking bits., Drop by heaping tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake 12-14 minutes or until edges are browned. Remove from pans to wire racks to cool. Store in airtight containers.

2 ripe bananas
1/2 cup peanut butter
1/2 cup brown sugar or 1/2 cup maple syrup
1/2 cup sunflower seeds or 1/2 cup Rice Krispies
1 1/3 cups Bisquick reduced-fat baking mix
1 tablespoon water

Steps:

  • Preheat oven to 350.
  • Mash bananas with peanut butter,water and sugar.
  • Mix in bisquick and nuts.
  • Drop by Tablespoons on greased cookie sheet and bake 15-20mins.
  • You can get really creative with these and sub all kinds of things.

1/2 cup margarine or 1/2 cup butter, softened
1/2 cup creamy peanut butter
1 tablespoon vanilla
1 egg
1 cup all-purpose flour
1/2 cup whole wheat flour
1 teaspoon baking soda
3/4 cup salted peanuts (or walnuts, almonds,etc)
3/4 cup candy covered plain chocolate candies

Steps:

  • Heat oven to 375*.
  • In large bowl, beat brown sugar, margarine and peanut butter until light and fluffy.
  • Add vanilla and egg; blend well.
  • Stir in all purpose flour, whole wheat flour and baking soda; mix well.
  • Stir in peanuts and candy-coated chocolate pieces.
  • Drop dough by rounded tablespoonfuls 2 inches apart onto ungreased cookie sheets.
  • Bake at 375* for 6 to 10 minutes or until light golden brown.
  • Immediately remove from cookie sheets.
  • Cool completely.
