Re-create a taste of Spain in your garden with this tapas style salad, perfect for nibbling on in the sun

400g can cannellini bean or other white bean
1 small red onion
2 tbsp red wine vinegar
140g button mushroom , thinly sliced
handful flat-leaf parsley , coarsly chopped
3 tbsp olive oil
100g thinly sliced chorizo

Steps:

  • Rinse and drain the beans, then pat dry with kitchen paper. Mix the onion with the vinegar and leave for 5 mins to soak. Mix the mushrooms and parsley into the beans, then add the onions and vinegar, oil and seasoning, then mix well.
  • Arrange overlapping slices of chorizo over two plates and spoon the salad in the centre. Serve with crusty bread.

1 pound green beans, stem ends removed
1/3 cup diced roasted red pepper
1 clove garlic, minced
1/2 medium red onion, diced
1 tablespoon red wine vinegar
Salt and freshly ground black pepper

Steps:

  • Cook green beans in a pot of boiling salted water until crisp tender, about 5 to 6 minutes. Remove to a bowl filled with ice water to stop the cooking. Drain and dry with paper towels then place in a serving bowl. Toss with remaining ingredients. Season, to taste, with salt and pepper. Let sit at room temperature, at least 30 minutes.

Easy Mediterranean Bean Salad image

Easy three bean salad recipe packed with Mediterranean flavors from fresh herbs, capers, and a zesty Dijon garlic vinaigrette. Instead of mushy canned green beans, use fresh steamed ones, or swap them out for another type of bean. I chose to use cannellini beans! After dressing the bean salad, allow it to chill in the refrigerator for at least 30 minutes before serving, so that the beans can absorb the zippy dressing.

1 15 oz can kidney beans, (drained and rinsed)
1 15- oz can cannellini beans, (drained and rinsed)
1 15- oz can garbanzo beans (chickpeas), (drained and rinsed)
1 green bell pepper, (cored and chopped)
1 red bell pepper, (cored and chopped)
1/2 English cucumber, (diced)
1 cup chopped red onions
1 1/2 tbsp capers, (drained)
1 cup chopped fresh parsley
10-15 fresh mint leaves, (torn or gently chopped)
10-15 fresh basil leaves, (torn or gently chopped)
1-2 garlic cloves (minced)
1/2 tbsp Dijon mustard
2 tbsp lemon juice
1 tsp sugar
1/4 cup Early Harvest extra virgin olive oil
Salt and black pepper

Steps:

  • In a large mixing bowl, combine the beans, chopped peppers, onions, capers and fresh herbs. Mix using a wooden spoon.
  • In a small bowl, add the vinaigrette ingredients. Whisk vigorously to combine.
  • Add the vinaigrette to the salad bowl. Toss to coat.
  • For best results, cover and refrigerate for a bit before serving so that beans soak up the vinaigrette flavors. Give the salad another quick toss before serving.

Baby Greens and Garlicky White Bean Salad image

This is a very garlicky salad. A nice fast dinner. A slight adaptation from a recipe in "Weight Watchers Miracle Foods" cookbook. Each serving is 3 points as written. Though I suggest a tad more sauce, which would make the points go up a smidge. Red onion is preferred because of the milder taste. If you like the taste of raw onion, then yellow is fine too. The original recipe called for serving it immediately. I like to let it sit a few minutes so the tastes will meld, but it would not keep for more then an hour or 2. If you don't have baby greens, spinach would be excellent.

2 1/4 cups baby greens
1 (15 ounce) can navy beans
1/2 cup sliced onion
1 tablespoon olive oil
1 tablespoon apple cider vinegar
1 garlic clove, minced (or more to taste)
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Chop the greens finely.
  • Mix them, the rinsed and drained beans, and the onion in a bowl.
  • In a smaller bowl or shaker combine the vinegar, the oil, and the garlic.
  • Add the salt and pepper and mix it all well.
  • Add the dressing to the greens and toss it together.
  • Let it sit about 5 minutes so the tastes will meld.

1 teaspoon lemon, rind of, grated
1 garlic clove, crushed
1 tablespoon lemon juice
1 tablespoon parsley, chopped
1/4-1/2 cup black olives, sliced (optional)

Steps:

  • Place the four bean mix, baby spinach leaves, and olives, if using, in a large bowl.
  • Combine olive oil, lemon rind, garlic, lemon juice and parsley in a small bowl and whisk to combine.
  • Pour dressing over bean mix and toss gently to mix.

  • Cook the green beans in boiling water for 2-3 mins until just tender, then drain well and steam-dry for a min.
  • Meanwhile, gently fry the garlic in the oil until pale golden - no further. Toss with the beans, season and serve.
