GARLIC, TOMATO AND CHICKEN SAUSAGE ZUCCHINI NOODLES
This one pot meal is easy to make and always a huge hit, slightly spicy with the Italian sausage and filled with veggies like garlic, tomatoes, onions, peppers and of course zucchini it's a dish everyone loves.

Steps:
- slice or spiralize the onion and red pepper
- heat a few tablespoons of olive oil in a pan and add the onion and pepper
- saute until the onion is translucent.
- slice the italian sausages and tomatoes (in half)- add to the pan
- add the garlic and stir - cooking until the tomatoes start to release juice
- add spices and broth
- bring to a boil and let the liquid boil down by half
- spiralize the zucchinis and add to the pan, stir and serve
- add parmesan cheese if you'd like and enjoy!

I am just loving my spiralizer attachment from KitchenAid®, and it's been super busy in my kitchen! If you don't have the attachment, there are other ways to spiralize, including using a vegetable peeler. This recipe was inspired by leftovers. Before serving, top this dish with your favorite chopped fresh herbs! I love roasting 2 chickens at once and serving them for dinner one night, then cutting the rest up and using for several different meals. I freeze what I won't use in the next 2 days. - Cut zucchini into noodles using a spiralizer.
- Heat 1 tablespoon olive oil in a large skillet over medium heat. Stir in tomatoes; cook until starting to brown, 6 to 7 minutes. Add garlic; cook and stir for 30 seconds. Toss in zucchini; season with salt, Italian seasoning, and pepper and stir to combine. Add chicken, spinach, peas, lemon juice, and zest. Drizzle with 1 tablespoon olive oil. Cover and simmer until heated through, about 5 minutes.

- Sprinkle both sides of chicken with pepper. In a large nonstick skillet over medium-high heat, brown chicken on each side in 1 teaspoon oil. Remove and keep warm. , In the same skillet, saute tomatoes and garlic in remaining oil for 1 minute. Add carrots; saute 2-3 minutes longer. Combine the tomato sauce, broth, tomato paste and rosemary; stir into skillet. Bring to a boil. , Return chicken to the pan. - Bring a pot of lightly salted water to a boil. Cook zucchini noodles (zoodles) in the boiling water until tender yet firm to the bite, about 3 minutes; drain.
- Heat 1 tablespoon olive oil in a skillet over medium heat; cook and stir green bell pepper, onion, seasoned salt, and sea salt for 3 minutes. - Preheat oven to 400℉. Put tomatoes on a baking sheet and toss with olive oil, garlic, and a few pinches of salt and pepper. Roast for 15-20 minutes until burst and golden, stirring a couple times during cooking time.
- While tomatoes are roasting, brown the sausage in a large skillet, breaking up with your spoon or spatula into small pieces. This should take about 7-8 minutes. Once sausage is cooked through, add a pinch of red pepper flakes and the zucchini noodles and cook for 2-3 minutes until cooked through. You don't want them to get mushy, just barely cooked. I like mine to have some crunch!
- Once tomatoes are finished roasting, add to the zoodles and toss. Stir in the basil. Serve with extra basil and parmesan cheese if desired!
