2 tablespoons olive oil, plus more for grates
6 cloves garlic, smashed and coarsely chopped
2 tablespoons (about 15 sprigs) fresh thyme leaves
2 rib-eye steaks, each about 1 pound and about 1 1/2 inches thick
Coarse salt and pepper

Steps:

  • In a medium baking dish (or bowl), combine oil, garlic, and thyme. Add steaks, and turn to coat. Cover dish and refrigerate; let marinate, turning steaks occasionally, at least 1 hour and up to overnight.
  • Heat grill to medium-high; lightly oil grates. Remove steak from marinade, letting excess drip off (discard marinade); season with salt and pepper. Place steak on grill; cover. Cook, turning once, until meat is desired doneness, 12 to 16 minutes for medium-rare.

Number Of Ingredients 8

2 pounds beef Flank Steak
Salt and pepper
1/4 cup olive oil
3 tablespoons red wine vinegar
3 tablespoons chopped fresh thyme or 1 tablespoon dried thyme leaves
2 tablespoons sweet or smoked paprika
3 teaspoons garlic
1/4 teaspoon ground red pepper

Steps:

  • Combine Marinade ingredients in medium bowl. Place beef steak(s) and marinade in food-safe plastic bag; turn steak(s) to coat. Close bag securely and marinate in refrigerator 6 hours or as long as overnight, turning occasionally.
  • Remove steak(s) from bag; discard marinade. Place steak(s) on grid over medium, ash-covered coals or over medium heat on preheated gas grill. Grill according to the chart for medium rare (145°F) to medium (160°F) doneness, turning occasionally. [Grill top round steaks to medium rare (145°F) doneness.]
  • Serve half of steak(s) immediately, as desired. Cover and refrigerate remaining steak(s) for later use. Before serving, carve steak(s) into thin slices; season with salt and pepper, as desired.

This is my favorite marinade for steaks. You can take a cheap cut, marinate it for a day or two and it becomes so tender and flavorful.

1/2 cup balsamic vinegar
1/4 cup soy sauce
3 tablespoons minced garlic
2 tablespoons olive oil
2 teaspoons ground black pepper
1 teaspoon Worcestershire sauce
1 teaspoon onion powder
1/2 teaspoon liquid smoke
1/4 teaspoon cayenne pepper

Steps:

  • Mix all together and marinade steaks 24-48 hours.
  • Grill and enjoy.

2 garlic cloves, crushed
2 tablespoons thyme leaves, chopped
4 tablespoons olive oil
2 lemons
4 (7 ounce) firm fish steaks (such as tuna, swordfish or shark)
salt and pepper

Steps:

  • Light the barbecue, if you're using one, and let the coals burn to a white ash.
  • Put the garlic, thyme, olive oil and the juice of one lemon in a large shallow container and mix together well.
  • Add the fish steaks and season with salt and freshly ground black pepper, then cover and chill for 20min.
  • Cut the other lemon into four slices and put to one side.
  • Cook the fish on the barbecue, or on a preheated griddle pan, for 4-5min on one side and brush over a little of the marinade.
  • Turn over, put a slice of reserved lemon on top of each steak and continue to cook for 3-4min or until cooked through.
