30 MINUTE CHICKEN & TARRAGON PASTA
Tarragon and chicken are perfect partners in this sophisticated midweek supper treat

Steps:
- Cook the pasta in boiling water for 8-10 minutes, or according to packet instructions, until just tender.
- Meanwhile, heat the oil and fry the chicken over a high heat for 4-5 minutes, stirring, until golden and cooked. Add the garlic, cream, tarragon and 3 tbsp of the pasta cooking liquid. Gently heat through.
- When the pasta is cooked, stir in the spinach (it will immediately wilt in the hot water). Drain well, then toss into the creamy chicken. Season with salt and pepper and serve with lemon for squeezing.

GARLIC & TARRAGON LIMA BEAN PASTA
Steps:
- Boil a large pot of water, add a dash of olive oil and a few tsp. of salt (depending on your preferences). Add pasta and cook until al dente. While the pasta cooks, heat olive oil in a large frying pan. Add the roasted garlic (should be soft like a paste), beans and artichoke hearts if used. Season with tarragon, salt & pepper to taste. Add enough parmesan to coat the beans evenly (approx. 1-2 cups is normally enough). When pasta is done, mix the bean mixture in, and add more parmesan if required, and a drizzle of olive oil if dry.
GRILLED GARLIC TARRAGON LOBSTER TAILS
This is a fantastic, low carb treat. Different and delicious with only 2 grams of net carbs per tail. It is very simple to make, even for a beginner, yet sure to impress. Great for people who are not low carbing as well! Adapted from the Atkins Calendar.

Steps:
- Preheat grill.
- Remove the soft part of lobster tail with scissors.
- Hit shell lightly with a mallet to make it lie flat.
- Melt butter in saucepan and add garlic, ginger, tarragon, mustard and salt.
- Spoon some of the butter mixture over tails and reserve remaining.
- Let stand 20 minutes.
- Grill lobster 4 inches from heat for 10 - 15 min with meaty side up, basting frequently with reserved butter mixture.

- Preheat oven to 500°F. Combine oil, garlic and tarragon in small bowl. Coat chicken pieces with oil mixture. Arrange chicken on baking sheet. Season with salt and pepper. Bake chicken 10 minutes. Reduce heat to 375°F. Bake until chicken is just cooked through, about 30 minutes longer.
PASTA WITH FRESH HERBS, LEMON AND PEAS
Buy a bunch of parsley along with basil or chives to keep on hand in your refrigerator. The herbs will keep for a week if properly stored. Produce departments often use misters, but greens don't keep well once wet. When you get home, spin the herbs in salad spinner if they're wet, wrap them in a paper towel and then bag them.

- Bring a large pot of water to a boil. Meanwhile, in a large bowl or pasta bowl, combine the herbs, lemon zest, garlic, lemon juice and olive oil.
- When the water comes to a boil, salt generously and add the pasta. A few minutes before the pasta is done, add the peas to the water. When the pasta is just about al dente, remove a half cup of the cooking water and add to the bowl with the herbs. Drain the pasta and peas, toss with the herb mixture and the cheese, and serve.
