Garlic Roasted Mushrooms with Thyme image

These oven baked garlic mushrooms make a flavorful vegetable side dish that comes together in less than 30 minutes.

16 ounces baby bella mushrooms (also known as cremini mushrooms)
3 tbsp olive oil
4 cloves garlic (crushed or minced)
2 tbsp fresh thyme leaves
Sea salt (to taste)
Freshly ground black pepper (to taste)

Steps:

  • Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Prepare the mushrooms by washing them, scrubbing off any dirt, and trimming the bottom of the stems. Slice any large mushrooms into smaller pieces. In a large bowl, toss the mushrooms with olive oil, garlic, thyme, salt, and pepper. Spread them out in a single layer on the baking sheet.
  • Bake the mushrooms for 15 to 20 minutes, until tender and dark brown. Enjoy warm!

16 even-sized open cup mushrooms, stalks cut level
3 tbsp olive or vegetable oil
2 cloves garlic, chopped very finely
3 tbsp unsalted butter, softened
2 tbsp fresh thyme, chopped
½ tsp garlic powder
5 tbsp fresh breadcrumbs
1½ tbsp lemon juice
salt and freshly ground black pepper to taste

Steps:

  • Preheat the oven to 400F. Lightly fry the mushrooms, cap-side down, in hot oil for 2-3 minutes.
  • Arrange the mushrooms in a a 9x13 cooking dish (or whatever rectangular oven-proof dish you have on hand) with the stalks facing upwards.
  • In a small bowl, mix together the butter (make sure its softened), garlic, thyme, lemon juice and seasoning.
  • Spoon a little garlic butter on to each mushroom, then lightly press the breadcrumbs on top.
  • Either refrigerate for later use, or bake immediately in the oven for 15 minutes or golden around the mushroom cap.

1/4 pound oyster mushrooms, cleaned
1/4 pound hen of the woods, cleaned
1/4 pound shiitake mushrooms, cleaned and halved
1/4 pound cremini mushrooms, cleaned and halved
4 cloves garlic, thinly sliced
1/4 cup olive oil
Salt and freshly ground pepper
6 sprigs fresh thyme
1 tablespoon Worcestershire sauce
1 tablespoon chopped fresh thyme leaves

Steps:

  • Preheat oven to 375 degrees F.
  • Combine the mushrooms and garlic in a large roasting pan, add the olive oil, and pepper and stir to combine. Add the sprigs of thyme and roast in the oven until golden brown and all of the liquid has evaporated, 25 to 30 minutes, stirring occasionally. Remove from the oven and stir in the Worcestershire, salt, and chopped thyme.

2 pounds mixed mushrooms, such as baby bella, shiitake or shimeji, cleaned
1/4 cup melted unsalted butter
2 tablespoons extra-virgin olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
4 cloves garlic, sliced
2 sprigs rosemary
2 sprigs thyme

Steps:

  • Preheat the oven to 400 degrees F.
  • Add the mushrooms, melted butter, olive oil, salt, pepper, sliced garlic, rosemary sprigs and thyme sprigs to a 9-by-13-inch baking dish. Toss the ingredients together until evenly combined.
  • Bake until the mushrooms are softened and slightly browned, 30 to 35 minutes. Remove the pan from the oven and discard the rosemary and thyme sprigs.
  • Serve immediately or keep at room temperature until ready to serve.

6 tablespoons butter
1/2 cup all-purpose flour
4 tablespoons dry onion flakes (or 1 small fresh onion, chopped finely)
4 tablespoons granulated garlic (or 1 clove garlic, minced)
1 tablespoon dried parsley
1/2 teaspoon white pepper
2 teaspoons dried thyme
8 cremini mushrooms (medium sized)
9 white mushrooms (medium sized)
1 1/2 cups chicken broth
8 ounces half-and-half or 8 ounces whole milk

Steps:

  • Prep:.
  • Chop 4 Crimini mushrooms and 4 White mushrooms finely and set aside.
  • Slice remaining White and Crimini mushrooms and reserve in separate bowl.
  • Directions:.
  • In a 5-quart pot, melt butter on med-high heat until slightly browned, 1-2 minutes - this will happen fairly quickly so be careful to watch it; turn heat down to medium.
  • Gradually whisk in all-purpose flour - mixture will be bubbly.
  • Stir in dried onion, granulated garlic, parsley and white pepper to rue and stir constantly for 2 minutes until onion and garlic are fragrant and slightly browned; mixture will seem on the dry side.
  • Slightly lower your heat to Medium-Low and add contents of chopped mushrooms and mix thoroughly for 1 minute.
  • Add your chicken stock to the mushroom mixture and bring heat up to Medium, stirring occasionally so your mixture doesn't stick to the bottom.
  • Cook for 5 minutes to thicken.
  • Add in the dried Thyme and mix thoroughly.
  • Add your whipping cream, half-and-half or whole milk and whisk together. This will thin out your mixture a bit and make for a smooth consistency.
  • Heat your mixture for 2 minutes.
  • Add your sliced mushrooms and stir, until bubbly.
  • Turn heat to Medium-Low and simmer for an additional 5 minutes, stirring occasionally.
  • Remove from heat. You soup will thicken as it stands.

1 pound white button mushrooms
4 stalks green onions
2 tablespoons olive oil
2 tablespoons balsamic vinegar
2 teaspoons minced fresh thyme leaves
½ teaspoon salt, or more to taste
¼ teaspoon black pepper

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with foil and spray with cooking spray.
  • Gently clean off mushrooms with a damp paper towel. Cut off stems and discard. Cut any larger mushrooms in half so mushrooms are all about the same size and place in a medium bowl.
  • Cut the white parts of the green onions into 1/2-inch pieces and add to the mushrooms. Thinly slice the green parts and set aside for later.
  • Whisk oil, vinegar, thyme, 1/2 teaspoon salt, and pepper together in a small bowl. Drizzle over the mushroom mixture and toss to coat. Place in a single layer on the prepared baking sheet.
  • Roast in the preheated oven for 10 minutes. Flip mushrooms over and roast for an additional 10 minutes. Remove from the oven and season with more salt, if desired. Sprinkle with reserved green onion parts.

1/2 lb white mushroom, washed (halved if small or quartered if large)
1 tablespoon olive oil
salt and pepper
1 clove garlic, minced
2 teaspoons fresh thyme leaves
6 kalamata olives, pitted & coarsely chopped
1 teaspoon balsamic vinegar

Steps:

  • Heat oven to 450 degrees F.
  • Toss mushrooms with olive oil and season with salt and pepper.
  • Place in a single layer in a shallow roasting pan or jelly roll pan.
  • Roast for 12 to 15 minutes until released juices are nearly evaporated and outside edges have just begun to brown.
  • Remove pan from oven and turn mushrooms with spatula.
  • Continue roasting until liquid has completely evaporated and mushrooms are uniformly brown, 5-10 minutes longer.
  • While mushrooms roast, combine olives, garlic and thyme in a medium bowl.
  • Add roasted mushrooms and vinegar and toss to coat.
  • Serve warm or at room temperature.
