GARLIC RANCH PASTA (WW)
This is written as a Weight Watchers recipe but is easily adaptable to full fat ingredients and tastes good either way! It's not meant to be a complicated, balanced meal but a quick, tasty supper dish that goes well with just about anything. I like the flavour of garlic to be quite strong so feel free to use less if you do not.

Steps:
- Cook the pasta according to the package directions.
- A few minutes before the pasta finishes cooking, melt the butter in a non-stick skillet.
- Crush the garlic into the pan and cook, stirring, for 1 minute. Make sure the garlic and butter are mixed together so the garlic does not burn.
- Add the ranch dressing, sour cream and salt and pepper.
- Over a low-medium heat, warm the sauce gently, stirring occasionally.
- When the pasta is cooked, mix it with the sauce and serve hot.
- Top with parmesan cheese if you have the points to spare!

- Preheat oven to 350°. Cook pasta according to package directions. , In a large bowl, mix Italian cheese blend, 1 cup Parmesan cheese, sour cream and salad dressing. Drain pasta; add to cheese mixture. Fold in spinach. Transfer to a greased 13x9-in. baking dish., Tear French bread into pieces; place in a food processor. Cover and pulse until crumbs form. Toss bread crumbs with oil, lemon zest, parsley, garlic salt and remaining Parmesan cheese. Sprinkle over pasta mixture., Bake, covered, 25 minutes. Uncover; bake until golden brown and bubbly, 5-10 minutes.

- Bring a large pot of salted water to a boil and cook the pasta according to the package instructions. Drain the pasta, then rinse it under cold water to cool completely; drain it well again.
- Meanwhile, reserve 2 tablespoons of the carrot for garnish. Put the remaining carrot in a large bowl and whisk in the mayonnaise, sour cream, chives, celery leaves, lemon juice, Worcestershire, onion powder, garlic, 1 teaspoon salt and 1/2 teaspoon pepper until combined. The dressing can be refrigerated, covered, up to 1 day.
- Add the pasta to the bowl with the dressing and toss to combine. To serve, top it with the Parmesan, reserved carrots and additional chives and season with pepper.

RANCH DRESSING PASTA
This is a good alternative to your regular pasta. I have used hidden valley ranch brand and others, all were great. I do like the fiesta ranch the best in this recipe. This is a recipe that comes together quickly. You could add warm cooked chicken chunks to this recipe for protein in the meal.

- Start a large pot of water on high, for the egg noodles.
- Meanwhile in a mixing bowl, blend salad dressing mix and salsa.
- Stir in tomatoes, oil and garlic.
- Remove as much rind as possible from brie and discard. Cut Brie into bite sized pieces and stir into tomato mixture.
- Cook noodles according to package directions, and drain. Return noodles to same pot that you cooked them in and over medium heat, pour tomato mixture over noodles, stirring just to heat and melt cheese.
- Serve immediately.

- In a medium-sized bowl, toss shrimp with 1 tsp olive oil, 1 tbsp minced garlic, 1/2 tsp kosher salt, and 1/4 tsp red pepper flakes. Increase the pepper flakes to 1/2 tsp if you like things spicy. Cover and refrigerate for about 10 minutes.
- Boil pasta in salted water according to package direction, under cooking by about a minute. Reserve 1/2 cup of cooking water. Drain and set aside.
- Coat a very large skillet in cooking spray. Saute shrimp over medium-high heat until just cooked through, about a minute or two a side depending on the size of your shrimp. Transfer cooked shrimp to a bowl and squeeze the juice of 1/2 a lemon over them. Set aside.
- Lower the heat in the same skillet to medium and add in 1 tsp olive oil. Add asparagus to the skillet along with 1 tsp italian seasoning, 1 tbsp minced garlic, and 1/4 tsp salt. Saute until just softened, about 5 minutes. If the browned bits on on the bottom on the skillet start to get too dark, add in a few splashes of reserved pasta water to scrape them up.
