CREAMY PRAWN LINGUINE



Creamy Prawn Linguine image

This recipe gives you a delicious creamy garlic prawn pasta dish. Made with linguine or spaghetti you are likely to make this over and over again!

2 tbsp butter
Olive oil
300g linguine, (or other pasta type if you prefer)
325g peeled frozen prawns
4 garlic cloves, crushed
100ml white wine
125ml cream
30g parmesan cheese
150ml chicken stock
30g cheddar cheese, grated
A handful of finely chopped parsley
Black Pepper to suit
1 tbsp lemon juice

Steps:

  • I like to use a wok to make this dish, just because you can use it easily to serve up by bringing it to the table. Then everybody can help themselves to however much they want. You will also need a sieve for this recipe.
  • First, defrost the prawns. I put the frozen prawns in a bowl and cover with luke warm water to defrost them.
  • Then boil a pan of water and cook the pasta for 10 minutes. I always add a few drops of olive oil to the pasta when I am boiling it. When the pasta is ready, remove and drain in the sieve. Keep some pasta water in a cup in case you need to water down the sauce later.
  • In the meantime prepare the garlic and other ingredients.
  • Sieve the prawns until all the water has dripped off. Squeeze them by hand to remove any excess water.
  • Then cover them with lemon juice. Then fry the prawns in 1 tbsp of butter in the wok, turning until they are cooked on both sides. Remove the prawns to a plate (including any liquid that may be present).
  • Then fry the garlic in another tablespoon of butter in the wok for about 1 minute. Then add the wine, bring to the boil and simmer until the wine is reduced.
  • Add the cream, stock and cheddar cheese. Stir until the cheese has melted and then add the parmesan and continue stirring. The sauce should start to thicken now.
  • Then add the prawns (and liquid) back to the pan, followed by the linguine. Now stir well so that the pasta gets well covered by the sauce. The longer you keep stirring it the thicker the sauce will get.
  • Now add the parsley and black pepper and stir until the consistency is as you want it. If you need more juice then add some of the pasta water you kept earlier.
  • When it is all well mixed and the sauce is as you like it, it is ready to serve up.

(Shrimp) This pasta version of Creamy Garlic Prawns is a quick meal you'll get on the table in 20 minutes, this is luscious but it's not too rich. The key is to emulsify the sauce (i.e. thicken it) by tossing the pasta in the sauce just before serving - this is the proper Italian way to make pasta. Serves 3 very hungry people or 4 normal servings.

8 oz / 250g fettuccine (, or other long strand pasta of choice)
30 g / 2 tbsp butter (, separated)
300 g / 10 oz small peeled prawns / shrimp, raw ((Note 1))
3 garlic cloves (, minced)
1/4 cup / 65 ml dry white wine ((Note 2 for sub))
1 cup / 250 ml heavy / thickened cream ((Note 3))
1/2 cup / 125 ml chicken broth ((or fish or vegetable broth), preferably low sodium)
3/4 cup / 50 g finely grated parmesan cheese (1.5 oz) ((freshly grated) (Note 4))
2 tbsp finely chopped parsley
Black pepper
Parmesan (, for serving)

Steps:

  • Bring to boil a large pot of water. Add pasta and cook per packet MINUS 1 minute. (Note 5).
  • Just before draining, scoop out 1 cup of pasta cooking water and set aside. Drain pasta.
  • Meanwhile, melt 1 tbsp of butter in a large non stick skillet over medium high heat. Add prawns and cook for 1 1/2 minutes on each side until just cooked through. Remove prawns.
  • In the same skillet, add 1 tbsp butter. Once melted, add garlic. Stir for 20 seconds until fragrant.
  • Add wine and stir. Simmer for 2 minutes until wine mostly reduces (see video).
  • Add cream, broth and parmesan. Stir until the parmesan is melted, then leave to simmer for 1 1/2 minutes until it thickens slightly (will thicken more in next step).
  • Add prawns, stir, then add pasta plus about 1/4 cup of reserved pasta water. Toss pasta (still on stove) and the sauce will thicken in about 30 - 45 seconds and start clinging to the pasta.
  • Take it off the stove before the sauce is as thick as you want - it will thicken more.
  • Sprinkle with most of the parsley and black pepper, check salt (I don't need more). Toss again until the sauce consistency is to your taste. Add a tiny splash of pasta water if it gets too gluggy.
  • Serve immediately, garnished with remaining parsley and parmesan if desired.

1 lb spaghetti
3 tablespoons butter
2 tablespoons olive oil
4 garlic cloves, sliced
2 teaspoons dried chili pepper flakes
1 lemon, zested

1/2 teaspoon salt

Steps:

  • Peel the prawns and cut them in half lengthways.
  • Cook the pasta in a large saucepan of boiling salted water for 8‐10 minutes or until al dente. Drain reserving ¼ cup pasta water and keep warm.
  • Heat the butter and oil in a large frying pan over medium heat. Add the garlic, chilli and lemon zest. Cook, stirring for 2 minutes or until golden.
  • Add the prawns and cook, stirring, for 2‐3 minutes or until the prawns are tender.
  • Add the pasta, lemon juice, parsley and reserved pasta water.
  • Season with sea salt and freshly cracked black pepper and toss to combine.

160g Spaghetti
1 cup cherry tomatoes
2 cloves garlic, chopped
2 tsp capers
200g prawns
Zest and juice of 1 lemon
1 small red chilli
1 knob parmesan cheese
Handful fresh basil
Olive oil

Steps:

  • Boil a kettle and pour water into a large pot over a high temperature. Add a good pinch of salt and add your pasta. While the pasta is cooking, heat your olive oil in a large pan. Throw in your cherry tomatoes and cook for three minutes stirring constantly. Add your prawns, garlic, chilli, lemon zest, half of your lemon juice and the capers. Cook until prawns have turned a lovely orange colour.
  • When your pasta is aldenté, take it straight from the pot using tongs and add it to the pan with the prawns and tomatoes. Lower the heat of the pan so it stays warm but will not burn the ingredients while you toss it all together with the remainder or the lemon juice and a good lug of olive oil.
  • Serve with torn basil leaves and freshly grated parmesan.

200 g linguine
100 ml olive oil
3 large garlic cloves, chopped
40 g cured ham, sliced
2 small red chilies, finely chopped
200 ml white wine
400 g raw prawns
1 small handful fresh basil, chopped
25 g fresh parmesan cheese, sliced
sea salt, to taste
fresh ground black pepper, to taste

Steps:

  • Bring a large pan of well-salted oil to the boil. Add the pasta and cook until al dente.
  • Meanwhile, put the olive oil, garlic and chilli in a saute pan and heat slowly until it just starts to sizzle. This ensures that the oil gets infused with the garlic and chilli flavour, rather than just burning.
  • Add the wine to the pan and reduce the heat. Reduce slightly.
  • In a separate pan, dry-fry the cured ham until crispy (or do it under the grill).
  • Just before the pasta is ready, add the prawns to the garlic and chilli mix and stir until pink.
  • Drain the linguine, reserving a little of the water and add the pasta to the prawn mix. Stir well to coat. If necessary, use a little of the pasta water.
  • Turn off the heat and stir through the basil, Parmesan and ham.
  • Season and serve immediately.

¾ cup kosher salt
1 gallon cold water
2 pounds peeled and deveined large shrimp (21 to 30 per pound)
1 (16 ounce) package angel hair pasta
¼ cup unsalted butter
¼ cup olive oil
3 tablespoons minced garlic
⅓ cup white wine
¼ cup lemon juice
½ teaspoon crushed red pepper flakes
1 teaspoon freshly ground black pepper
½ cup chopped fresh parsley
1 tablespoon lemon zest

Steps:

  • Dissolve the kosher salt in 1 gallon of water in a large pot. Add the shrimp, and refrigerate 2 to 4 hours. Drain and pat shrimp dry with paper towels.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the angel hair pasta, and return to a boil. 3 tablespoons capers
1 bunch fresh asparagus, trimmed

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes.
  • While pasta is cooking, heat butter and 2 tablespoons olive oil in a large pan over medium heat. Add garlic and cook until fragrant, making sure not to burn, about 2 minutes. 2-3 fat garlic clove, finely chopped
50g butter
175g pack raw shelled king prawns, de-veined and split in half lengthways
finely grated zest 1 lemon, then cut the lemon into wedges
small pack parsley, chopped

Steps:

  • Boil the pasta following pack instructions. Meanwhile, very gently cook the garlic in the butter in a medium pan until softened. Add the prawns and cook until they just turn from grey to pink. It is important not to overcook them or they will be tough. Remove from the heat and stir in the zest and seasoning.
  • Drain the pasta and toss into the pan with the prawn mixture and parsley until well mixed. Divide between two bowls and serve with the lemon wedges.

3 cloves garlic, minced
1 lemon, juiced
1 orange, juiced
