This is a very quick and delicious dish. Serve with additional cheese if you desire.

1 (8 ounce) package linguini pasta
½ pound sweet Italian sausage, casings removed
2 red bell peppers, chopped
1 onion, chopped
1 clove garlic, minced
1 cup white wine
¼ cup grated Parmesan cheese

Steps:

  • Cook pasta in a large pot of boiling salted water until al dente.
  • While the pasta is cooking, prepare the sauce. Saute sausages in a heavy skillet over medium high heat until light brown, breaking up clumps with back of spoon. Add peppers, onion, and garlic; saute until tender. Add wine and simmer until liquid is slightly reduced, about 6 minutes.
  • Drain pasta, and add to the skillet. Toss to combine. Add cheese, and toss to blend. Serve.

1 1/2 lbs garlic pepper pork sausage or 2 -3 sausage links
1 small onion, chopped
3 garlic, clover minced
3 -4 fresh basil leaves, chopped
3 roma tomatoes, chopped
5 cherry tomatoes
1/2 cup baby portabella mushrooms, sliced
1/2 cup water
1/4 cup red bell pepper
1/4 cup scallion, chopped
2 tablespoons evoo extra virgin olive oil
2 tablespoons fresh parsley
1 tablespoon red banana pepper, finely chopped
1 tablespoon creole seasoning
1/2 tablespoon Season-All salt
1/2 teaspoon of crushed peppercorn
1/2 teaspoon salt, for taste

Steps:

  • Cook Linguine noodles and set aside.
  • In medium heat add 1/4 cup of water to cook your pork sausage. Keep adding water until the sausage is firm enough to slice.
  • Slice sausage about 1/2 to 1 inch thick. set aside.
  • In a wok or large saute pan add evoo in medium heat, add garlic and onion saute until garlic is golden brown.
  • Add red bell pepper, tomatoes, cherry tomatoes, red banana peppers and 1/4 cup of water simmer for 3 to 5 minutes.
  • Add baby portabella mushroom, creole seasoning and crushed peppercorn. simmer for 2 minutes.
  • Take a fork and crush cherry tomatoes and stir.
  • Add fresh basil, linguine noodles, season all and add the rest of the water mix together and simmer for about 3 mins or until water evaporates.
  • add scallions and salt for taste.
  • Tip: If you want a little bit more spice add 1/8 tsp of crush red pepper.

1/2 pound sweet Italian sausage, casings removed

1/2 cup dry white wine or low-sodium chicken broth
2/3 cup heavy cream

Steps:

  • Bring a pot of salted water to a boil; add the pasta and cook as the label directs. Reserve 1 cup of the cooking water, then drain the pasta. Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the sausage and cook, stirring, until browned, 3 minutes. Increase the heat to high; add the onion, celery and mushrooms and cook, stirring, until tender, 4 minutes. Add the garlic and cook 1 minute. Reduce the heat to medium high; add the tomatoes and wine and cook, stirring occasionally, until the liquid is reduced by half, about 5 minutes. Add the cream and cook until slightly thickened, about 4 minutes. Stir in the parsley and reduce the heat to low. Add the pasta to the skillet and cook, tossing, until it absorbs some of the sauce, 2 to 3 minutes. (Add some of the reserved pasta cooking water to loosen, if needed.) Season with salt and pepper.

3 cloves garlic, minced
1/2 cup extra-virgin olive oil
Pinch red pepper flakes
2 tablespoons chopped flat-leaf parsley
1/2 lemon, zested, optional
Freshly grated Parmigiano-Reggiano, optional

Steps:

  • Bring a large pot of cold water to a boil over high heat, then salt it generously. Add the pasta and cook, stirring occasionally until al dente, tender but not mushy, about 8 minutes.
  • While the pasta cooks, combine the garlic, olive oil, 1 teaspoon salt and the red pepper flakes in a large skillet and warm over low heat, stirring occasionally, until the garlic softens and turns golden, about 8 minutes.
  • Drain the pasta in a colander set in the sink, reserving about a 1/4 cup of the cooking water. Add the pasta and the reserved water to the garlic mixture. Mix well.   • Cook linguine. Drain, reserving 1 1/2 cups pasta water; return pasta to pot.
  • Meanwhile, cook sausage and 2 tablespoons water in a large covered nonstick skillet over medium until fat renders, 5 minutes. Uncover; raise heat to medium-high. Brown sausage, breaking it up with a spoon, 7 minutes.
  • Add garlic, bell peppers, and 1/4 cup reserved pasta water; cook until peppers soften, 6 minutes. Add 3/4 cup pasta water and butter; swirl to combine.

This is delicious! It's a great way to use fresh garden vegetables. The raisins add a tasty dimension to the dish. Use your favorite cheese and you can use parsley instead of cilantro.

4 Tbsp extra virgin olive oil, divided
1-1/4 lb eggplant, cut into 1/4" cubes
8 oz linguine
8 oz sausage
1 medium onion, chopped
1/2 tsp oregano
1/4 tsp red pepper flakes
2 clove garlic, minced
1-1/2 c chopped tomatoes
1/4 c raisins
1 Tbsp capers, rinsed & drained
2 Tbsp red wine vinegar
sea salt to taste
fresh ground pepper to taste
1/3 c chopped cilantro
1/2 c parmesan cheese

Steps:

  • 1. Preheat oven to 400°F. Put eggplant on a rimmed baking sheet in a single layer. Add 2 Tbsp olive oil and stir to coat well. Season with black pepper. Bake for 20 to 25 minutes, until tender and lightly browned, stirring once or twice. Remove from oven and set aside.
  • 2. Meanwhile, cook the linguine according to package directions. Drain coat with about 1 Tbsp olive oil and set aside.
  • 3. Brown and break apart sausage in a large skillet. Drain. Set aside.
  • 4. Coat the skillet with 1 Tbsp olive oil and heat on medium high heat. Add onion and cook until translucent, return sausage to skillet stirring to mix. Add oregano, red pepper flakes, and garlic and cook for 1 more minute.
  • 5. Add tomatoes and bring to a simmer, then reduce heat to medium. Stir in eggplant, raisins, and capers and simmer until thickened slightly, 5 to 7 minutes. Stir in vinegar and all but 1 Tbsp cilantro. Season with salt and pepper to taste.
  • 6. Return linguine to the pot it was cooked in and put on low heat. Immediately add eggplant-sausage mixture and mix well. Divide among 4 plates and top each with 2 Tbsp cheese. Sprinkle evenly with remaining cilantro.

3 hot italian sausages

1 red bell pepper, large, diced
1 green bell pepper, large, diced
1 yellow bell pepper, large, diced
½ white onion, sliced
2 cloves garlic, sliced
28 oz diced tomato
1 teaspoon oregano
1 teaspoon salt
1 teaspoon black ground pepper

Steps:

  • Bring a large pot of water to a rolling boil, add a generous amount of salt, and cook pasta 2 minutes less than the package instructions.
  • Strain pasta and set aside. Toss with a small amount of oil to prevent sticking
  • In the same pot, heat 1 tbsp of olive oil and fry sausages, working in batches as needed, until deeply browned on all sides.
  • Remove sausages, slice in ¾-inch (2 cm) rings, and set aside.
  • Sauté all of the bell peppers, onion, and garlic for about 2 minutes.
