SHORTCUT AIOLI (GARLIC MAYO) RECIPE
Garlic mayonnaise, or aioli, is one of America's most popular cold sauces. This simple aioli recipe has unlimited uses.

Steps:
- Gather the ingredients.
- Crush the garlic cloves with the flat of a knife, and remove the skin. Then mince the garlic very finely.
- Add a pinch of salt, and using the flat of the knife again, scrape and press the garlic against the cutting surface to make a paste that is as smooth as possible. It's making this paste from the fresh garlic that gives aioli its intense garlic flavor. Note that making a smooth paste is key to the success of this sauce. If you don't spend a few minutes on this step, you will be left with small bits of raw and harsh-tasting garlic, which will not do justice to the magic of aioli.
- Add the garlic to a small bowl, and whisk together with mayonnaise, lemon juice, and 1/4 teaspoon salt. Wrap and refrigerate for 30 minutes to allow the flavors to develop.

GARLIC ONION MAYO MAYONNAISE
I love to spice up a sandwich, grilled or otherwise, with a tasty mayo. It uses store bought mayo and only takes a moment to make. Give it a few minutes for the flavors to meld.

FOOLPROOF LEMON-GARLIC MAYONNAISE
Mayonnaise started out in life as a salad dressing, but the modern supermarket version isn't something you'd want to serve on its own -- or use to highlight the vegetables of the season. This soft, lemony version makes irresistible dribbles and pools on top of a composed salad, or can be spooned onto the side of the plate and used for dipping. The hot water keeps the mayonnaise smooth and fluffy. For an even lighter texture, use grapeseed oil instead of olive oil.

- In small food processor or container of an immersion blender, combine garlic, anchovies, egg yolk and mustard. With machine running, slowly drizzle in 2 tablespoons olive oil and process until mixture is smooth and starts to thicken, about 2 minutes.
- With machine still running, slowly add remaining olive oil, lemon juice and 1 teaspoon very hot water. (A small splash from the kettle or tap is the right amount.) Process just until mixture reaches a loose mayonnaise consistency. If it curdles or becomes too thick, mix in more hot water a little at a time, pulsing machine so as not to overmix. Taste and adjust seasoning with more lemon juice, salt or pepper. Serve immediately, using a spoon to drizzle over salad, or cover and refrigerate up to 8 hours. Best served fresh, but keeps 2 days.

- Chop up your garlic and put it in a mortar and pestle. Smash it until it's a creamy paste. A pinch of sea salt sometimes aids the process. The goal is to get the flavor infused throughout the mayonnaise (sliced garlic chunks or a regular garlic smasher won't accomplish this nearly as well as a creamy garlic paste will).As mentioned above the recipe a Bamix immersion blender can be used to really speed up this recipe and get great results. If you don't have an immersion blender, just stick with the manual recipe instructions!
- This next step is where the time-consuming part begins... but it's SO IMPORTANT that you do it right, or you'll end up with egg + oil, not mayo. If you used a mortar & pestle in step 2, you'll probably need to transfer everything to a bigger glass bowl before you begin. VERY slowly, start to whisk the 1C Safflower or Grapeseed oil into your egg and garlic mixture. It's best to start with the lighter oils because they emulsify better than a heavier oil like olive oil. Again, an immersion blender will help speed up the process considerably. Otherwise, you can use good ole manual labor and a whisk. About 1/2 C oil in, you'll start to notice the oil emulsifying with the egg and the mixture will start to stiffen. It's very rewarding! Keep going, slowly adding more oil, until it's done.
- Once you've added in the first cup of oil, slowly begin whisking/blending in the additional 1C of extra virgin olive oil. You don't have a to go as slowly with the olive oil as you did with the first cup, but I do recommend keeping it to a slow, steady stream. By the time you're done you should have a nice, stiff, creamy sauce.
- At this point, you've got the base for your Aioli and your Mayo. The main difference between the two is the addition of Vinegar. If your goal is to have a Garlic Aioli, simply mix in your salt, other spices and some lemon juice - refrigerate, and serve.
