ONION & GARLIC SODA BREAD
This is one of my favorite recipes for soda bread. It's versatile-you can do endless sweet or savory variations. Steps:
- Preheat oven to 425°. In a small skillet, heat oil over medium-high heat. Add onion; cook and stir until light golden brown, 3-5 minutes. Add garlic; cook and stir 30 seconds longer. Cool., In a large bowl, whisk flour, salt and baking soda. Cut in butter until mixture resembles coarse crumbs. Stir in cooled onion mixture; make a well in center. In a small bowl, whisk egg and buttermilk; pour into well. Using a wooden spoon, mix dough until too stiff to stir. Turn onto a lightly floured surface; knead gently 10 times. Shape into a round loaf., Transfer to a large greased cast-iron skillet or baking sheet. Using a sharp knife, cut a shallow "X" on the top of loaf. Bake until golden brown, 35-40 minutes., Remove from pan to a wire rack; serve warm.

GARLIC DILL SODA BREAD

- Preheat oven to 425 degrees. . In a medium skillet, heat the oil over medium-high heat until sizzling. Add the onion and cook, stirring, until slightly browned, about 5 minutes. Add the garlic and cook about 30 seconds more, stirring constantly. Turn off the heat and let the onions and garlic cool until ready to use. . In a large bowl, whisk together the flour, dill weed, salt and baking soda. Add the butter and use a pastry knife or fork to cut the butter into the flour mixture until it resembles pea-size crumbs. . Add the onions and garlic and stir until well combined. Make a well in the center of the dough.. In a small bowl, whisk the egg and buttermilk together. Pour into the dough well and use a wooden spoon to mix the dough until stiff. Turn out onto a lightly floured surface. Knead dough gently about 10 times, then shape into a round loaf.. Transfer the loaf to a large baking sheet. Using a sharp knife, cut a shallow X-shape on top of loaf. Bake until golden brown, about 30 minutes.. Remove from oven and place bread on a wire rack. Cut into wedges or slices and serve warm.

DILL AND ONION BREAD
A Russian recipe from the Frugal Gourmet on our Immigrant Ancestors. This is a hearty bread which goes well with stew. This recipe is so easy if you have a kitchenaid mixer. And it's delicious! Cook time includes rise time. I like to freeze one loaf for later.

Steps:
- Dissolve the yeast in warm water; let sit till foamy.
- Combine yeast, melted butter, sugar, cottage cheese, onion, dill, soda, salt and 2 eggs in a large mixing bowl.
- Add 2 cups flour.
- With a dough hook or by hand, knead in remaining flour. Only add the last 1/2 cup flour if the dough will not pull away from sides of pan after kneading for about 10 minutes.
- Cover and let rise until double.
- Punch dough down and let rise again.
- Finally, knead the dough by hand until it is smooth and elastic.
- Shape into 2 round loaves and place on cookie sheets sprinkled with cornmeal.
- Let rise until double, then brush with egg yolk beaten with 2 tablespoons water.
- Bake at 350 degrees F for 45-50 minutes until golden.
- The bottoms of loaves will sound hollow when tapped.
GARLIC DILL BREAD (BREAD MACHINE)
This low to medium rising bread has a good dense texture and is very garlicky. Use the bottled chopped garlic as an extra convenience.

GRINKA'S GARLIC DILL BREAD
My Grandma (Grinka!) was an amazing Swede who cooked amazing Italian! LOL Where I grew up if you weren't Swedish, you were Italian, so she must have learned from friends! Anyway, she made this recipe and it was just AMAZING, definitely Italian Garlic Bread, with a Swedish twist (dill) , Everyone RAVES about this... it's the only thing I can serve on Italian night!

Steps:
- soften butter and put in a small bowl, add all ingredients except dill to bowl. mix well. Slather on your favorite loaf of white/whole wheat bread (french, Italian, sliced Italian, sourdough, etc) Usually we get the french bread and slice it in 1/2 length-wise. After butter mix is all over your bread, sprinkle with dill- heavy or light depending on your desire. I usually try to make it an even green color. Bake in a 425 degree oven for 10-15 minutes or until golden brown. Let cool for 5 min, then cut into 1 1/2 inch slices. Try not to eat a whole loaf yourself! :).
- This mix can be doubled or more depending on how much you need, and will keep in the fridge well, I would say a week -- .
