EASY SHEET PAN TOMATO HERB PIZZA



Easy sheet pan Tomato Herb Pizza image

It's savory, a touch spicy, and the perfect mix of summer flavors that everyone will LOVE!

Number Of Ingredients 15

1/2 pound pizza dough, homemade or store-bought
3 cups cherry tomatoes ((or one 14 ounce can crushed tomatoes))
4 cloves garlic, 2 whole smashed, 2 grated
2 teaspoons fig preserves (or use honey)
1/4 cup extra virgin olive oil (plus more for drizzling)
2 tablespoons fresh thyme leaves ((or 2 teaspoons dried))
1 pinch crushed red pepper flakes
1 pinch kosher salt and black pepper
1/4 cup fresh basil, chopped, plus more for serving ((or 1 tablespoon dried))
1/4 cup fresh oregano, chopped ((or 1 tablespoon dried))
1-2 teaspoons fennel seeds (use to your taste)
1 cup shredded whole milk mozzarella
1 cup shredded fontina cheese
1/2 cup grated parmesan or asiago cheese
3 ounces pepperoni, sliced

Steps:

  • 1. Position the oven rack in the upper 1/3 position. Preheat the oven to 500 degrees F. at least 30 minutes before baking, preferably 1-2 hours ahead. If you have a baking stone, start preheating it. 2. Place the ball of pizza dough on a lightly oiled quarter sheet pan. Lightly drizzle olive oil on top of the dough ball. Cover with plastic wrap and let rest for at least 30 minutes, preferably 2-5 hours, if time allows.3. To make the sauce. In a roasting pan, combine the tomatoes, olive oil, 2 cloves smashed garlic, fig preserves, thyme, and a pinch each of salt and pepper. Roast in the middle of the oven at 500 degrees F. for 10-15 minutes, until the tomatoes burst. Using a fork, smash the tomatoes down until a chunky sauce forms. Is using canned tomatoes, just simmer on the stove until thickened. Alternately, you can use your favorite marinara sauce too.4. To make the herb seasoning. In a bowl, combine the basil, oregano, 1-2 cloves grated garlic, fennel, and a pinch each of red pepper flakes, salt, and pepper. 5. To assemble. Remove the plastic wrap. Gently press the dough until it covers the entire sheet pan. Drizzle the dough lightly with olive oil. Spread on the sauce, you may not need it all. Top with cheese, then pepperoni. Sprinkle the herb seasoning over top. 6. Slide into the preheated oven and bake for 10 minutes, rotate the pizza, and bake another 3-5 minutes or until the crust is golden and the cheese has melted. Top the pizza with fresh basil and addition crushed red pepper flakes. ENJOY!

Based on a recipe from Williams-Sonoma Kitchen Library Pizza cookbook. The introduction says, "Fresh or dried herbs add an accent of flavor and color to pizza dough. Good choices include oregano, basil, marjoram, chives, thyme, rosemary, sage, mint and fennel seeds, selected to highlight the ingredients that will top the pizza or fill the calzone. Do not go overboard on your selection: It is better to choose two or three complementary herbs, or even just one herb, rather than a large mixed bouquet of clashing flavors."

Number Of Ingredients 6

1 tablespoon active dry yeast
3/4 cup water, lukewarm (105 degrees F)
2 3/4 cups all-purpose flour, plus 1/2 cup for working
1 teaspoon salt
2 tablespoons mixed fresh herbs, minced or 1 tablespoon dried herbs
1 tablespoon extra virgin olive oil

Steps:

  • Dissolve yeast in the water in a small bowl and let stand until slightly foamy on top, about 10 minutes.
  • In a large bowl stir together the 2 ¾ cups flour, salt, and herbs. Form into a mound. Make a well in the center and add the yeast mixture to it.
  • Using a fork, stir the dough in a circular motion, gradually pulling the flour into the yeast mixture until a dough forms.
  • Place the dough on a lightly floured work surface using some of the ½ cup flour.
  • Using the heel of your hand, knead the dough until it's smooth and elastic, about 10 minutes.
  • Form the dough into a ball.
  • Brush a large bowl with the oil and place the dough in it. Cover with plastic wrap and let rise at room temperature until doubled in size, about 1 to 2 hours.
  • Place dough on work surface lightly dusted with the remaining flour.
  • Punch the dough down.
  • By hand, gently press dough out into desired shape.
  • Place one hand in the center of dough, and with the other hand, pull, lift and stretch the dough, gradually working your way all around the edge, until it is the desired thickness, about ¼ inch thick for a crusty pizza base and ½ inch thick for a softer one.
  • Flip the dough over from time to time as you work with it; alternately, roll the dough out with a rolling pin. The dough should be slightly thinner in the middle than the edge.
  • Lift the edge of the pizza to form a slight rim.
  • Transfer dough to a baker's peel or baking sheet, cover, and let rise again until almost doubled, about 20 minutes.
  • Top as desired.
  • Bake in a 400 degree F oven for 10 to 15 minutes, until the crust is golden, or according to your pizza recipe's instructions.

GRILLED ZUCCHINI AND HERB PIZZA

1 1/3 cups water
1 teaspoon granulated sugar
1 packet (1/4-ounce) active dry yeast
4 cups all-purpose flour
2 teaspoons kosher salt
3 tablespoons olive oil, plus oil for drizzling
2 tablespoons olive oil, plus more for grill grate
2 pounds zucchini, trimmed and cut on bias into 1/2-inch slices
2 teaspoons red wine vinegar
1 teaspoon red pepper flakes
1 teaspoon kosher salt
Freshly ground black pepper
1 tablespoon olive oil
12 ounces part-skim mozzarella cheese, sliced into 1/4-inch-thick slices
8 ounces goat cheese, crumbled
16 large basil leaves, torn
1 cup sun-dried tomatoes

Steps:

  • For the dough: Put the water and sugar in the bowl of a stand mixer and sprinkle the yeast on top; let rest until the mixture bubbles, about 5 to 10 minutes. Meanwhile, whisk together the flour and salt in a large bowl to break up any lumps. When the yeast is ready, add the flour mixture and olive oil and mix, using dough hook, on the lowest speed until the dough looks shredded, about 1 to 2 minutes. Increase the speed to medium and continue to mix until the dough is smooth and very elastic, (you should be able to stretch it 2 to 3 inches without breaking), about 6 to 10 minutes.
  • Turn the dough out of the mixer, form it into a ball, and put into a large, oiled mixing bowl. Turn to coat the dough in the oil then cover with a clean, damp dishtowel, and let rest in a warm place until it doubles in size, about 30 to 45 minutes. (Alternatively, refrigerate the dough and let rise 12 to 24 hours before using.) Punch the dough down and shape as desired.
  • For the zucchini: Heat the grill to medium-high (about 375 degrees F) and rub the grate with a towel dipped in oil. Add 2 tablespoons olive oil and the zucchini to a large bowl and toss to coat. Grill the zucchini, covered, turning rarely, until tender and charred, 5 to 7 minutes.
  • Transfer the cooked zucchini to a bowl and add the red wine vinegar, and red pepper flakes. Season with the salt and pepper, to taste, and toss to coat. Set aside until ready to use.
  • For the pizza: Heat the grill to medium-high (about 375 degrees F) and rub the grate with a towel dipped in oil.
  • Oil your hands, put half of the dough (about 1 pound) on a piece of parchment paper, and press the dough into a rectangle about 1/4-inch thick. Drizzle the dough with oil. Lay the dough, oiled side down, on the grill and remove the parchment paper. Grill the dough until golden brown, toasted, and grill marks form on the bottom, about 2 to 3 minutes. Flip the dough, brush with 1 tablespoon oil and top with half of the mozzarella. Cover with half of the zucchini and half of the goat cheese. Close the grill, checking and rotating as needed to avoid burning, until dough is lightly charred and cheese is melted, about 8 to 10 minutes.
  • Transfer the pizza to a cutting board, top with half of the basil leaves, and half of the sun-dried tomatoes, and serve. Repeat to make a second pizza.

1/2 cup hot water
3 teaspoons olive oil
1 large garlic clove, minced
2 ounces feta cheese, crumbled

1 tablespoon grated parmesan cheese
1/2 teaspoon dried basil leaves
1/2 teaspoon dried thyme leaves
1/2 teaspoon dried rosemary leaves, crushed
1/4 cup sliced ripe olives

Steps:

  • Place oven rack in lowest position in oven. Heat oven to 500 degrees F.
  • Grease large cookie sheet or pizza pan.
  • In medium bowl, combine pizza crust mix and hot water. Stir vigorously with fork about 30 strokes or until blended. Shape dough into ball; coat with 1 teaspoon of the olive oil. Cover; let rise in warm place (80 to 85 degrees F.) for 5 minutes.
  • With greased hands, press dough into 11-inch circle on greased cookie sheet.
  • Pinch edge to form rim. Drizzle remaining 2 teaspoons olive oil over dough; spread evenly. Sprinkle garlic and cheeses over dough; sprinkle with basil, thyme, rosemary and olives.
  • Bake at 500 degrees F. on lowest oven rack for 10 to 14 minutes or until crust is golden brown and cheese is melted. Let stand 5 minutes before serving.

An easy fun way to make pizza. This dough has a little more flavor than the usual dough. Try it with my red and white pizza sauce, recipe #263283. Prep time varies depending on the bread machine's dough cycle.

1 garlic clove, minced (optional)

Steps:

  • Place all ingredients in bread machine in the order listed.

EASY HERB PIZZA DOUGH

Just 40 minutes to amazing pizza!!!! After trying many pizza dough recipes and a lot of experimentation, I have come up with a recipe that everyone in the family likes. Since we're vegan and don't use cheese on our pizza, it's important that the dough be flavorful--and this one is! Top with pesto, sauteed zucchini, onion and pine nuts for a delicious pesto pizza, or try Recipe #397296 with roasted sweet potato and carmelized onion. Also, this recipe halves very, very easily.

4 1/2 teaspoons yeast
2 cups water, warm
4 cups all-purpose flour
1 cup whole wheat flour
4 teaspoons safflower oil
2 teaspoons sugar
3 teaspoons salt
2 teaspoons garlic powder
2 teaspoons herbes de provence (you can buy this, or try Herbes De Provence)

Steps:

  • Preheat oven to 450.
  • Dissolve yeast in warm water. Set aside in warm place to proof while mixing other ingredients.
  • Combine dry ingredients in large mixing bowl and mix well.
  • Using a wooden spoon, make a well in the center of flour mixture and add oil and yeast.
  • Stir until soft dough forms, then turn out onto lightly floured surface and knead until dough becomes a smooth ball, about 5 minutes.
  • Cover dough with a warm towel and allow to rise briefly--about 5-10 minutes, until it's a bit springy.
  • Cut dough in half and roll each half into shape you need. (I roll these into two 14" crusts).
  • Sprinkle baking sheets with corn meal and place crusts on sheets.
  • Bake 5 minutes to set. You can then stick the crusts in the fridge or freezer to use later, or add toppings and bake immediately, 12-15 minutes.

HERBED PIZZA DOUGH

This is a simple pizza dough and it doesn't take all day either. The only appliance I used was my stand mixer with the dough hook!

3 cups flour
1 1/4 cups warm water
1 tablespoon olive oil (herbed, use a good quality EVOO)
1 teaspoon fast rising yeast (bread machine yeast also works here)
1/2 teaspoon brown sugar
1/2 teaspoon garlic salt
1 teaspoon basil
1 teaspoon rosemary
1 teaspoon parmesan cheese, finely grated

Steps:

  • Preheat your oven to roughly 150 degrees. Just enough to make it warm enough to cause the dough to rise well. Then turn your oven off as soon as it heats up.
  • Add all the above ingredients in the order above into your stand mixing bowl. Mix using a dough hook until it forms a ball. Place it in an oiled bowl and cover with a cloth. Place in the warm oven for about 30 minutes or until the dough doubles in size.
  • When dough has doubled, preheat your oven to 400 degrees.
  • Roll out the dough in desired shape. You may need to flour your surface and rolling pin to prevent sticking. I usually just sprinkle my baking sheet (or stone) with corn meal and garlic salt and just press out my dough.
  • Add your favorite toppings and bake for approximately 15-18 minutes depending on the size of pizza you're making. Should just be bubbly.
  • Enjoy with freshly grated parmesan cheese.
